Creamy White Chicken Enchiladas

When you're in the mood for an easy dinner, and want a meal under 35 minutes, try these delicious Creamy White Chicken Enchiladas.

We have made these with all kinds of cooked meats including pork, and ground beef so don't let a chicken filling stop you from trying this delicious recipe!

This all-in-one pan meal is layered with flour tortilla stuffed with a creamy white enchiladas sauce is one of the best-tasting casseroles ever.

This super easy casserole meal can be made ahead of time and just reheated, plus for meal prep, this freezes perfectly for up to 3 months for a quick weeknight dinner.

Another time-saver for the chicken casserole is using easy pre-cooked or store-bought brands however you can also boil, pan fry using a rotisserie, or even a frozen pre-cooked chicken you may like.

We often like to serve these with a side of rice and beans which is a favorite combination with this Mexican-style meal.

We love making this casserole for Cinco de Mayo to celebrate the day.

This makes a big 13 x 9 pan with around 8 large flour tortillas or 6 smaller ones and we usually set up a topping serving bar with all kinds of delicious Mexican ingredients with assorted cheeses, vegetables, salsa, and we have more suggestions below.

You can even make this all vegetarian and not add any meat at all and substitute the meat with black beans, cooked broccoli, cauliflower, or another vegetable that your love with cheese.

The family was amazing on this sauce flavor and it's now a preferred meal over the classic Beef and Red Sauce Enchiladas.

One of our favorite one-pan-easy casseroles is Mexican Lasagna.

Layers of flour tortilla, sauce, melted cheese, refried beans, and meat make an exceptional burst of flavor in every bite you take!

You may also have heard the terms Taco Lasagna or Mexican Casserole because this dish can be layered with so many additions or substitutions you prefer.

We use flour tortillas, ground beef, green chiles, beans, and whole diced tomato, and it's loaded with two kinds of cheeses.

Our super easy-to-make casserole will be a big hit with kids who love these flavors plus this is a great potluck and Cinco De Mayo meal on May 5th.

Deep Fried Chimichangas

Deep-Fried Chimichangas are as much fun to make as they are to eat with a crispy deep-fried flour-filled torilla everyone loves this alternative for a nice change with the American Mexican flair!


I love filling them with leftover meats like pulled shredded pork, leftover turkey or chicken, or cooked chopped beef, anything can go in these you like!


Our recipe is also adapted for air frying, or baking also for an easier healthy alternative!


I usually love to make my own homemade Enchiladas Sauce for these also, to pour on top it's a favorite fresh sauce instead of the taco sauce we like!

Mexican Fried Churros

Here is one of the best Mexican desserts when made fresh from scratch called Churros.

These are hands down the best churro recipe because while still hot we included the hot fudge sauce or caramel sauce recipe to dip them in.

The crisp outside and tender soft pillowy inside are really irresistible and addicting.

The dough for these is easy to make with simple pantry ingredients then rolled into a simple cinnamon-sugar mixture best eaten while still warm for sure.

We've had these at plenty of Mexican restaurants, but there is nothing better than freshly fried in your own kitchen the difference is night and day.

I found these were easier to make professional looking by using a cookie gun, but you can just add the dough in a ziplock bag cut the tip-off, and pipe them in long streams.

A quick dessert that will soon be your new favorite addictive recipe.

Don't forget to pass that caramel dipping sauce or our Kahlua hot fudge sauce to go along with them
