Quesadilla Made Easy



This is a simple recipe for seafood lovers, however as you already know you can substitute grilled chicken or cooked shredded pork, beef, or whatever you like.


Starting with store-bought flour tortilla, tossed in a mild or hot red sauce, and loads of cheese, make these just a great appetizer or whole meal when served with a few delicious side dishes we like.


You can use any kind of tortilla flavors since there are so many to choose from, we just use plain flour but low-carb tortilla or even tomato and spinach flavors are great for a change.

Ingredients to have on hand(exact measurements for the recipe in the printable card below)

  • shrimp or another shellfish you like
  • pepper, mushrooms, or onions, sliced
  • taco sauce
  • good melting cheese cheddar or jack are good choices
  • flour tortilla any flavor
  • butter or extra virgin olive oil

Quesadilla Party Suggestions



The best way to please everyone is to set up a serving station with everything on it and make plain quesadillas filled with cheese.

One suggestion I have is to place all the toppings over ice and the meats on a warming tray then all you need to do is make a quesadilla with melted cheese tortilla so they can build their own with all our filling suggestions.

These are gourmet-style cheese and seafood quesadillas. Delicious packed with flour and perfect for Cinco De Mayo for all shellfish lovers!

Ingredients

  • 8 large Flour Tortillas
  • 12 chopped shrimp, peeled and deveined (or you can also use crab meat or scallops chopped) also can use a medley of seafood
  • 8 ounces of taco sauce or enchiladas sauce
  • 2 cloves chopped garlic
  • 1/4 cup chopped peppers any kind hot or sweet(if you don't like peppers use onion or sliced mushrooms)
  • 2 cups of grated Monterey Jack cheese or sharp cheddar
  • 2 tablespoons butter or extra virgin olive oil or more as needed
  • salt, pepper, and cayenne pepper to taste

Instructions

  1. Add the taco sauce to the shrimp and set it aside.
  2. Make sure all the vegetables you're using are chopped into small pieces.
  3. Heat the skillet and melt the butter (if using) or heat olive oil.
  4. Stir fry the vegetables to be soft or how you like them except the garlic.
  5. Remove from skillet and set aside.
  6. Return the skillet to high heat, then add the chopped shrimp with the sauce in the pan.
  7. Cook, until the shrimp turns pink this takes just a few minutes around 4 to 5 minutes. Add the garlic for the last 2 minutes.
  8. You may need some water or chicken broth in the pan if it starts to get too thick.
  9. In a separate skillet, heat butter.
  10. Place one tortilla in the skillet at a time, then add in order the cheese, vegetables, and shrimp.
  11. Top with a little more cheese and another tortilla.
  12. Brown until crispy to how you like your quesadilla flipping and cooking on both sides.

  14. Remove from skillet and slice into triangles.
  15. Serve with Spanish rice, black beans, Mexican salsa, sour cream, black olives, shredded lettuce, chopped tomatoes, and or guacamole.
