Mom's Frittata

Wednesday, December 5, 2018
This is a baked frittata with eggs, cheese, and just about anything else you want to throw into the casserole-style breakfast.

Mom's Egg Frittata is one of the best Italian comfort foods. This is a traditional authentic old-world Italian breakfast.

The pepperoni and eggs with potatoes are so delicious anytime and even in a sandwich with toasted Italian bread.

There are so many variations to the recipe, we decided instead of standing in front of the stovetop to make an easier no-fuss version in the oven.

Breakfast, brunch, or just a quick mid-afternoon Sunday dinner, this frittata is an economical way to throw together a fast meal and feed many.

It is so delicious and simple using all in one pan with potatoes, eggs, and meat or baked as a casserole.

The one memory that really stands out for me is holiday time, this was mom's go-to recipe especially on any holiday or weekend we had sleepover company visiting.

If you love breakfast for dinner, try our Buttermilk Pancakes, Breakfast Savory Pork Sausage or Homemade Italian Sausage Patties those are other favorites of ours.

Fritta sometimes had what mom would say everything but the kitchen sink in it and it was a great way to get rid of almost expired meats in the refrigerator, the good old days for sure with memories as a family.

Baked Eggs Souffle

Monday, March 20, 2017
Baked eggs souffle are out of this world delicious and only 3 ingredients, yes they're a little work but so worth it.

These are usually made on special occasions and the melted cheese with these fluffy baked creamy eggs is a showstopper breakfast or brunch.

The results are always impressive and with a gourmet look and taste everyone you make these for will love them.

The eggs cook up with a warm yolk, that's perfect to dip your toast in.

Although not a filling breakfast some buttermilk homemade pancakeshomemade breakfast sausage, ham, or crispy bacon will be great side dishes to serve these up with!

A special breakfast with also a healthy alternative when you make these eggs baked as an alternative to fried.

We just love making elegant breakfast treats and another family favorite is cannoli french toast, cookie-cutter or character pancakes for the kids.

Baked Eggs with Sauce, Pepperoni and Mozzarella Recipe

Saturday, November 3, 2012
My brother John inspired me to make eggs with pepperoni, sauce and mozzarella. He said that mom made it that way. She always used leftover sauce, then both brothers would bring leftovers to school in a sandwich.

Dad always made the omelets with fried ham and eggs, then sometimes added peppers and potatoes. So I decided to try it with tomatoes, pepperoni, sauce and mozzarella baked! I think Mom would have loved this one even though she fried hers!

this is how to make an baked egg casserole with pepperoni, tomato sauce, pepperoni and cheese all in a pie plate that is inexpensive and fast to make.
