Watermark everything or someone will steal your photo's and recipes!

It has come to my attention that there are many sites that just try to make a living off of other peoples blogs. It brings a whole new realization on how far we are from being united or having any respect for one another in the blogging world. Your not safe, not at all.
Asking permission, giving a heads up, finding someone online that will promote you,  first would be the logical approach. The unfortunate reality is that when you go to google images and type in your blog or name it will show you just how many people have taken your hard work, recipes and call it their own. In my case I even found my son and cat!
There are some way to protect yourself, naive as I was I didn't watermark my photo's.
However I have a friend that watermarked her photo and they erased it and wrote Mama Mia in it's place! So there are even worse offenders than what I have encountered.

So this has been a turmoil of a week. Wondering if I should continue blogging. Being violated by 14 different webpages, some I couldn't read in different languages, taking my photo's, reposting my cat, son and recipes as their own entries is just ridiculous.  Again try these simple steps:
1. go to google chrome
2. click images
3. click on your photo
4. off to the side it will say search images click that, once that comes up all the websites that took the photo will show your photo a either stolen recipe or a new one and they just stold the photo.
5. Go into filters where it allows you to put the copy right and year.

Google has a web form to fill out to turn them in.

Fill out each post they have taken from you individually.
My other suggestion is to invest into a photoshop.
If you have photoshop just hit the letter T on the keyboard where you want to place your name, logo etc and add your watermark, it will let you start to type your name sake to protect that photo by adding whatever typing phrase you like.
I have spent endless hours to find many of my photo's on other websites claiming their own.
If you would like to see if any of your photo's are being compromised download google chrome, go to images, type in you website name and images... When you click on your image it will show off to the right some image search, click on more images and it will show you who else have stolen you images.
Scary for sure, insulting and down right ridiculous!

I am not the first or last to go through this, however it is quite alarming to see when they claim your own family as their own as I have. Be sure to use the web page, contact your server and certainly do what you can to the owner to show them copy right laws.

Coconut Grove, Whining and Great Dining Review and Coconut Custard Tarts

The photo above is my brother John Colenzo and I at the Village Of Merrick Park in Coconut Grove, Florida. John suggested this would be a treat to see all the fine cars and retailers here. John, besides being my brother, is a music entertainer in Fisher Island (not too far from here) and has some great friends in the area who you'll meet further down the article posted below.

Merrick Park has several Retailers here to see, to include and name a few are anchors Neiman Marcus and Nordstrom's. Quite some interesting finds here. If you are lucky enough to own a Lexus (my favorite car) it's free valet parking. The rest of the vehicles would have a fee. Some very impressive vehicles we saw were the Bentley, Ferrari and the least expensive, a Corvette (still very respectable)! A car buff and lovers dream place to visit here!

As promised, here is our great experience we had the very next day at Vescio's Franklin Hotel in Rome NY ( they are on Facebook too). When you walk in the door, your surely in heaven with the many rows of pastry in the see through glass cases.  A real family atmosphere who runs the business.

Just amazing. Italian pastry heaven. The pusties, cannoli, cakes, Italian cookies, lobster claws and many other Italian specialities awaits you. This is as close to homemade as it gets. The service and family atmosphere is just what I needed to recover from that last dissappointing experience at Cavallo's. I could have stopped right here at the pastry then came the menu..... oh boy and yes great food! Thanks to Aunt Linda and Uncle Joe for bringing us here for lunch!

Great service and great food. All run by the family of course, Phil and Carol Vescio, are the owners( tell them Claudia sent you when you visit!) Phil Jr, does all the pastries, Mark is the chef, and Mary our gracious hostess.

With so many scrumpticious desserts I chose the Cannoli and it did not dissappoint me... I could have eaten many more! Delicious!!

My Utica New York Cavallo's Food Experience Review Part 1

This photo is what they have on their menu a version of Greens. My niece ordered them and laughed when she tasted them, she said I should have made them instead, mine are much better! These were a little gritty and not as tender as we would like.


As many of my readers know,  Utica, New York  is my home town and near and dear to my heart! I go back as often as possible for my favorite foods. For over 20 years now, I have gone to Cavallo's in New Hartford, NY on Genesee St., always with great compliments on their food and service.  Every time we go home, my husband and I make this our last night get together there, with the family and friends to meet for our last great dinner, well unfortunately, I can't say that this year.  The service was by far the worst treatment we had ever experienced not only there anywhere, even sadder we had the largest group there that went unnoticed!  On a Tuesday night, they weren't even busy to have an excuse!  The food and the whole lack of service experience for 15 people was terribly disappointing. We got there around 5:30 and the rest trickled in around 6:00pm.  First thing, I was told I couldn't buy a round of drinks for my guests on a separate check to do a toast, we had to run a tab, it was policy... that had never happened before. So no arguments, I proceeded to run the tab. My brother had ordered a pizza and wings at 5:30 he was starving, he arrived there earlier and didn't want to wait for everyone. At 7:30 no food for him yet but the rest of us ( all 13 people left)  had ordered way after him and we all had our food. Get the picture, not very accomodating? Well to make matters worse, the food was not at all what we had expected each one of us had issues with the preparation of what we ordered.  The calamari wasn't cooked it was cold inside and rubbery, the coating was falling off and the Vodka riggies, these were tasteless, and very little sauce. The wings were dry and overcooked, eggplant bitter and even a steak sandwich was tough and the cheese wasn't melted. After 20 years and 1900 miles to fly, ( not to mention the bill was $350.00, no refills on our drinks unless we asked and waved  the waitress down more towards the end of all our meals. Then with even the numerous complaints nothing was done to make a better experience for my guests or me. Late dinners, poor service and undercooked or overcooked food.  A very disappointed family and friends dinner,  it was not surprising no one came after I repeatedly asked for a manager.  Needless to say this establishment will now be a very distant memory after 20 years of dedicated journeys to meet everyone I will never say again "I can't wait to go back there!"  I was beside myself thinking of all the good times we had there at one time, what in the world happened?

Even Adriana the youngest one, wasn't crazy about the macaroni and cheese, she left that too!

John, Luke, Mary had the wings... dry and overcooked! Joanne didn't say a word but Luke made several complaints on why it took two hours to get a pizza and everyone else was done by the time he got it?  Really, unacceptable!

The best part of the whole evening was getting to be with my family and some great friends, this is my brother Luke Colenzo and I catching up..... nope no pizza yet, it's already been an hour!

As you can see the breading was falling off, the inside actually tasted raw, cold but who was going to come so they could get sent back? No one ever came back or asked if we were good with anything.

 on my SD card, 15 disappointed people!
So tomorrow check back to see where to go for  great service and food in our opinion in the Upstate NY area, even though we all know food is a matter of opinion, good food and customer service go hand in hand and that can't be compromised, when you lose one or both there is no going back. 

We just loved our next visits on our vacation. The pastry, the food the service and people were all fantastic...so stay tuned!

We always go back to enjoy foods like Chicken Riggies, wings, pizza, greens all from Upstate NY specialities.... Our favorites are Napoli's Pizza, Florentine Pastries, Palateri Joes, Hemstroughts Half Moon Cookies, Chesterfields Utica Greens, Joe's and Rosario's Pizza.  All the local feasts for pizza fritte just to name a few traditional spots we hit. Love the bagels at bagel grove and love the fish fry at Eddies in Sylvan Beach!

Traditional Sunday Sauce "The Next Generation", is my son's Curt's version! This has three kinds of meats, boneless fried spare ribs (shown), Italian homemade Sausage and Italian Sunday morning meatballs inside this bubbling pot of wonderful sauce. A very thick, delicious sauce, with fresh pureed plum tomatoes, fresh herbs and lots of meat, slowly cooked for a minimun of two hours.

Risotto Prawn Recipe


1 to 1-1/2 cups chicken broth, hot
6 tablespoons unsalted butter
4 tablespoons extra-virgin olive oil
1 teaspoon minced garlic
1 teaspoon minced shallots
1/2 cup Arborio rice
1/4 cup dry white wine
1/4 cup freshly grated Parmesan cheese
Salt
Freshly ground white pepper
8 large Tiger fresh shrimp, peeled, deveined, and halved lengthwise
1/2 teaspoon lemon juice
Minced fresh parsley leaves, for garnish
In a small saucepan, bring the chicken broth to a boil over medium-high heat. Reduce the heat to very low, cover, and keep hot.

Put 2 tablespoons each of the butter and olive oil in a medium saucepan over medium heat. When the butter has melted, add the garlic and shallots and saute, stirring frequently with a wooden spoon, until soft but not yet browned, about 3 minutes.

Add the rice and saute, stirring, until the rice grains are well coated, about 1 minute. Add the wine and boil it, stirring until it has been almost completely absorbed by the rice, about 3 minutes.

Using a large spoon or ladle, add about 1/2 cup of the hot broth to the rice. Still over medium heat, stir constantly until the broth has been absorbed and the rice looks almost dry, about 3 minutes. Add another spoonful and repeat, stirring after each addition until it has been absorbed, continuing just until most of the broth has been used and the rice is tender surrounded by a creamy sauce.

Remove the pan from the heat and stir in the remaining butter and the Parmesan cheese. Season to taste with salt and white pepper and, if the risotto seems a little dry, stir in the last of the broth.

Immediately heat the remaining olive oil in a skillet over medium-high heat. Season the shrimp with salt and white pepper and saute them until they turn white and firm, 2 to 3 minutes. Sprinkle them with lemon juice.

Spoon the risotto a bed on 2 serving plates and arrange the shrimp attractively on top. Garnish with parsley and serve immediately.

New Yorkers Have Arrived Family Reunion 2010

Melbourne, Florida April 18th 2010...... a day to remember!



The Upstate New Yorkers have arrived! This is my family from Upstate NY, I have three nieces, three great nieces, three great nephews and all their significant others, and the kids, my nieces mom, Mom and Grandmom, Theresa Colenzo. They decided to take their vacation here in Florida.
(Also in the picture my two sons, Chad and Curt Iffert, my husband Nemo Lamascolo, and my brother from Dania Beach Fl., John Colenzo.)
My first born niece Alicia, her son Ryan and Alicia's significant other Bill. Niece number two, Mary came ( she hated being the middle child) with her three children, Vanessa, Dominic and Adriana her significant other John and his son John. My youngest niece Pamela and her husband Bruce with their two children, Vinny and Samantha.
Can you imagine, this clan of 14 people bought this bus with the New York Yankees emblem on it and drove 19 hours straight. Actually the bus is quite roomy, and even had an LCD TV in, quite a luxury bus. I have been so excited knowing this trip was planned for weeks now, and couldn't believe it was finally here. I'd been preparing all kinds of foods,


What a huge surprise we all had when John popped the question to marry, Mary, in front of all of us after dinner. We are all so overjoyed for the new couple's happiness, congrats to the future Mrs. John Guarascio, may you have a wonderful happy life and new exciting journey together many many many happy years ahead!..... Welcome to the family John!

With so many tears of joy and wonderful excitement, we broke out the Raspberry Champagne my brother John from Dania, Florida brought with him and toasted the happy couple. What perfect timing with all of us together. A reunion to remember that will last a lifetime.

It didn't seem to be quite enough only three bottles of bubbly, so out came the Pina Colada Lava flows, I had been waiting for a special occasion to make these and this was the perfect time. A Pina Colada with fresh Strawberry puree inside...We ended up with about four pitchers full. 

46 oz pineapple juice
1 can Coco Lopez coconut cream
1 pint half and half
Bacardi White Rum or
Coconut Rum
ice
frozen strawberries in syrup put through the food processor or fresh 2 pints pureed with sugar added to the food processor  set aside
plastic fancy cups
In a blender add the juice with 1 can of coconut cream, pulse  ad few time then adding the half and half till blended pulse again. Add about 2 cups of ice or more and pulse till desired thickness.  Pour the coconut mixture in a plastic glass, top with strawberry puree, top with a shot of desired rum marblize by stirring with a stir stick, straw or fork. Enjoy!

Adriana, (Mary's three year old daughter) and Samantha,( Pamela and Bruce's daughter) love to dance to Beyonce "Single Ladies". They are both so adorable!
They both took a little dip in the pool to relax after all that dancing.

The last time they all visited us it was a sad time. My mom had passed away. Everyone drove down that year, in 1999 (some missing in the pictures not born yet) and some couldn't make the reunion this time in the picture below.

My brother John Colenzo, had this cake made with a lemon cream filling surrounded by a whipped frosting and slivered almonds. This was made in a South Florida Bakery, just the perfect sweetest ending to this amazing reunion. The picture featured on this cake was taken the day mom passed on, 11 years ago, time has passed so quickly, mom your not forgotten...we all love you......and wish you were still here with us.
After full bellies, good food, the love for great conversation, making new memories, many desserts and several drinks later, it was that unfortunate time to load the bus. A full day for all. Off they went, all 14 people boarded their NY Yankee Bus, back to their vacation and headed to Orlando for the rest of their stay.
