A classic Italian-American Veal Cutlet Parmesan, first fried, then made into a casserole.
This breaded meat (or you can substitute eggplant) is smothered with tomato sauce and baked with a heaping pile of melted cheese.
We love our delicious homemade marinara sauce to cut out all that fried richness, then baked until the edges of the cheese are browned for a classic comfort meal, gooey and satisfying.
Starting out with a panko-crusted Veal cutlet, the meat is fabulous fried without anything else on it (here is a fair warning, hide these, everyone will eat them before they hit the casserole dish).
The best part about this meal, it gives you a second meal the next day in a submarine roll, so it's a win-win second time around!

Veal Milanese is a coated veal thin boneless scallopine style or can be made with a bone-in veal chop form coated and sauteed in butter..
The veal is seasoned in a flour and eggs batter coating then sauteed perfectly.
Of course, if you aren't fond of veal, you can use pork or chicken in its place to substitute and still get these delicious flavors.
This fork-tender veal is so tender and melts in your mouth in every bite.
ALthough can serve with a light side dish of sliced tomato Caprese Salad, we prefer a side of Pasta Aioli with Broccoli with our meal.
I loved the addition of red pepper flakes on top to give this dish a little heat also, not in the authentic recipe.

Well, this is our family version of the Veal Saltimbocca Recipe...as you all know there is no real right or wrong way to cook, my preference is always with mushrooms, and those are never found in the authentic version...I just love the mushrooms with this dish leave them out if you dislike them and usually served on a bed of spinach.
I also love making a homemade noodle recipe to serve alongside this dish, just add butter on the noodles a little grating cheese, black pepper, and some crushed garlic..you can adapt this any way you like and mix in a little of the sauce. It's delicious!

Every Christmas Eve it's a tradition to make 7 kinds of fish and we usually have more varieties than that.
Since some folks have food allergies and can't eat fish mom would substitute eggplant on Christmas Eve since it was a tradition not to eat meat.
Otherwise, the oil will taste like fish and so will the Chicken. We were not disappointed with the fish, it was wonderful.
Every year we made the Francese sauce and you can actually use this for Chicken, Veals, Pork or even Venison during any weeknight meal, it's a delicious combination of lemon and wine.
