Lots of recipes call for corn syrup. I learned how to make it many years ago from a cake decorator in a bakery and loved these results.

Corn syrup substitutes may come in handy, whether you are making candy, caramel, marshmallows, or baked goods like pecan pie!

I hate to start a recipe and run out of it in the middle of making something, this will take care of that issue by making corn syrup in your own home as a substitution and it works perfectly!

Corn syrup is just inverted sugar which simply means it won't re-crystallize during the cooking or baking process when used in many candy recipes such as marshmallows and other favorite candy recipes.

I think you will be very pleased if you use corn syrup in your recipes and this will keep in mason jars for around 3 months on the shelf.

This is a quick and easy lunch, it reminds me of a chicken grilled cheese sandwich in a tortilla all dressed up with lettuce, tomato add some salsa, and sour cream all in a perfectly crispy fried Mexican American. flour tortilla.

If you want an easy go-to recipe and are craving Mexican crispy quesadilla, this is super fast.

You can even use rotisserie chicken, leftover chicken tenders or anything you happen to have leftovers of meat or leave these plain with all vegetables.

Just have some shredded cheeses on hand, flour tortillas and even pepperoni and mozzarella will do for a quick change for an Italian-style quesadilla.

Homemade Apple Pie

The smell of apple pie baking is a comforting and heartwarming experience of memories for me. Mom made everything from scratch, from the dough to the filling.

There is nothing like homemade apple pie!

The love she put into her baking was extraordinary and I feel the same when I bake for my family.

I reminiscence on all those great baking years with her.

Although many years have passed without her, I rekindled many beautiful days using mom's recipe and know she is with me watching.

This is one of her best pie recipes, which I want to share with you, hope you will enjoy it as much as we do.

It's so hard smelling this bake and not wanting to dig right in!

When we go home to visit my hometown (Utica, New York), we always make a special trip to the Orchards to buy our apples.

Our favorite kind is McIntosh for making pies.

They're a little tart but the perfect baking apple in my opinion but you choose whatever you like!

When I see them hit the stores in Florida, I am like a kid in a candy store and I miss our Utica, fall foods, and fruits.

Lentil Chicken Soup Recipe

Start off the New Year with this hearty rich lentil soup.

I really love chicken soup, it's old fashioned comfort food that just makes you feel better. It's healthy too.

 There are so many things you can add to it and make it a whole meal. Here is one soup I love the richness of by adding lentils.


You can also add pasta or cooked rice and other beans if you prefer. Here's the basic soup recipe.







Lentil Chicken Soup Recipe
1 package 12 oz of lentils sorted and then cooked to package instructions


2 boneless chicken breasts


1 - 28 ounce can diced tomatoes


1 chopped celery stalk


dried parsley, oregano, and basil

2 teaspoons granulated garlic

3 cloves minced garlic

sliced carrots

salt and pepper to taste



5-quart saucepan

water

olive oil

grating cheese for garnishing



In the saucepan saute garlic in 3 tablespoons olive oil. Add around 3 quarts of water. Place the sliced carrots, celery chopped, tomatoes in the pot. Add the chicken breasts whole and simmer for around an hour. Skim off the top of anything that floats on the top from the chicken. Sprinkle herbs and spices evenly over the top of the water (around 2 teaspoons of each). Take the chicken out and dice it when cook and put back into the pot. Add the cooked lentils.

Salt and pepper to taste. Ladle into bowls and add grating cheese to the top.
