Spicy Honey Beer Mustard Recipe

1/3 cup yellow mustard seeds
1/4 cup brown mustard seeds
1/2 cup cider vinegar
1 cup dark beer, divided
3 tablespoons dark brown sugar
2 tablespoons honey
1 teaspoon Kosher salt
1/2 teaspoon turmeric
1/8 teaspoon ground allspice

In a small bowl cover the seeds with vinegar and 1/2 cup beer. Cover and set inside the refrigerator overnight. 
In a small sauce pan, mix together the remaining ingredients and bring to a boil over medium heat. Cool for around 4 minutes. In a blender add the seeds with soaking liquid and cooled mixture from the saucepan. Puree until smooth and blended together. Place in a glass or plastic airtight container. Refrigerate overnight before using.


Loaded Bacon Mac and Cheese Recipe

If you're a loaded baked potato lover, this recipe is for you!
Just like a loaded baked potato this is a comfort favorite food using pasta with the same flavors throughout this mac and cheese recipe. It full of all the same ingredients but in a
delicious cheesy pasta sauce!

 Loaded Bacon Mac and Cheese Recipe

1 lb small sea shell pasta cooked al dente and drained
2 cups shredded extra sharp cheddar and more for the top 
1 cup milk or half and half
1/4 cup blue cheese crumbles
1/2 cup sour cream 
3 tablespoons whipped cream cheese
1/4 cup or more crispy cooked bacon crumbled
salt pepper to taste
1 teaspoon granulated garlic

Optional: 1/2 cup Italian bread crumbs or butter crackers crushed for the top

Boil the pasta, drain. Add to a deep dish baking pan around 13x9. Heat 2 cups milk, cheeses, garlic, 3 tablespoons butter, sour cream and cream cheese in a large saucepan stir until melted. Pour over the pasta, sprinkle with more cheese on top, then crumbled bacon, more cheese. Bake until bubbly and set. If using crumbs add the on top.  I broil the top of mine for crispier  cheese pasta, that's how we like ours.


String Bean Beef Stew Recipe

I really love stew and it doesn't have to be in season vegetables. Even though my first preference would be to have all fresh , a great beef stew can be made all year round. Here is any easy recipe to follow to feed many people and believe me this will warm you up and keep you satisfied any time of the year!
Mom used any kind of meat that was on sale, slow cooking this will make the least expensive meat tender and fall apart and this is great in the slow cooker too if you're not in a hurry! 

Plus leftovers if any are delicious!

String Bean Beef Stew Recipe

1 pound green beans or more cleaned and snipped 
3 pounds stew beef or any other kind of meat cut into cubes
1 cup sliced carrots
1 stalk chopped celery with leaves
1 cup loose kernel corn
1 cup peas
1 large 28 ounce can petite tomatoes diced or 5 plum tomatoes chopped
1 can tomato paste
1 cup Pinot Noir wine
3 zucchini cubed
1 chopped bell pepper
1 8 ounce package sliced mushrooms
3 cloves minced garlic
olive oil
basil, parsley, oregano, salt, pepper and cayenne to taste

In a 5 quart saucepan add 3 tablespoons olive oil, saute meat until brown around 3 minutes on each side then add the garlic, peppers for 1 more minute. Add the rest of the vegetables, wine, tomatoes, tomato paste, salt, pepper, spices to taste. Add to all vegetables and meat just to cover with water. Simmer until meat falls apart on low around 2 hours.  Serve with Italian crusty bread.

Slow Cooker Pulled Pork with Jack Recipe

One of the best barbecue sauces we ever had on chicken that my son Curt made,  just kicked up this beautiful pork loin  more than a notch!!  If you hadn't tried Curt's Jack Daniels Chicken recipe you need to check it out it's fabulous that's the sauce I used. The pork loin is great slow cooked and will feed many people for a party, Of course I am cooking for more than 70 people. If you need to make a large amount of food this is the perfect solution in a slow cooker for the gang. They will love it and all you need is to provide some rolls and maybe a great side dish I will give you some suggestions for.
Here's all you need:

At least a 5 or 7 quart slow cooker

2 or 3 pounds boneless pork loin
1 recipe of Curt's Jack Daniels Sauce found by clicking here
1 can root beer or dr. pepper
2 metal forks for shredding the meat
Assorted spices garlic powder, Italian seasoning, black pepper, salt, Optional: pinch of cayenne pepper 

In a lightly sprayed slow cooker place the meat inside. Evenly sprinkle a little herbs and spices over the top. Add 1 can of root beer to the pot. Slow cook at least 7 to 8 hours on high.
When you test the meat if it's shreds with a fork easy, it's done. Shred using two forks.
Add the barbecue sauce you made from Curt's Delectable web site and enjoy.

Homemade Corn Syrup Recipe

Lots of recipes call for corn syrup. I learned how to make it many years ago from a cake decorator in Schenectady N.Y. , a great friend of my late Aunt Mary's. Corn syrup is just invert sugar which simply means it won't re-crystallize during the cooking or baking process when used in many candy recipes such as marshmallows and other favorite candy recipes. I think you will be very pleased if you use corn syrup in your recipes and this will keep in mason jars for around 3 months on the shelf.

Homemade Corn Syrup Recipe

5 1/2 cups sugar
2 cups water
1 teaspoon cream of tarter
dash of salt 
candy thermometer
mason jars

Place all ingredients in a heavy duty non stick saucepan. Clip the candy thermometer to the side. Stir sugar until just moistened with a clean metal spoon.
Do not stir again, the sugar will crystallize. Let this come to a boil.
Brush down the sides (when it comes boil )with a pastry brush dipped in water to remove any crystals that form on the sides, this will ruin the corn syrup when poured in the jars later if any sugar crystals remain. Do not stir this or it will become a cloudy mess.
Continue to boil until the candy thermometer reaches 235 to 240 then remove the pan from the heat and let sit for 2 hours to cool and do not touch the mixture. You must cool this completely. 
Ladle into 1 cup mason jars. You can store in you cupboard up to 3 months. If the syrup is too thick, microwave the jar without the cover on for around 25 seconds. Makes 1 quart.

Homemade Grain Bread Grilled Cheese Recipe

Not so much an Italian recipe. I am making a healthy grain bread today and adding some sharp cheddar to the homemade bread for a delicious sandwich everyone will love. Shush they won't know it was partially healthy for them! I really used the sharpest cheddar and loved it. Try it with provolone and mozzarella and tomato that's another great sandwich I make!

Homemade Grain Bread Grilled Cheese Recipe

2 tablespoons yeast
1 teaspoon white sugar
1/2 cup warm water
3 1/2 cups warm water
1/4 cup honey
1/4 cup molasses
1/2 cup oil
2 eggs
2 tablespoons lemon juice
7 cups all purpose flour or use wheat flour
1/4 cup flax seed, cracked wheat, sunflowers seeds
1/4 teaspoon salt
4 cups bread flour

In a medium size bowl, dissolve yeast in the warm water. In a large bowl mix the remaining water, honey, molasses, oil, eggs and lemon. Mix well. Add the to the yeast mixture and let sit. Add the flour beating well. Then add the seeds, flax and wheat. Let sit 20 minutes, Stir in the salt and rest of bread flour. Knead 15 minutes till smooth. Put in a bowl rise till double. Add cornmeal to the bottoms of your greased loaf pans. Cover to rise 20 more minutes.  Preheat the oven to 375 degrees. Bake for 40 minutes or until browned on top. Cool before slicing.

Grilled Cheese Recipe

 Slice two thick  pieces of bread.  Add two thick pieces of sharp cheddar cheese or (optional 1 slice whole milk mozzarella 2 slice provolone and a sliced tomato). Add 1 tablespoon of butter to a fry pan. On medium after the butter has melted, toast each side of the bread flipping over to ensure it browns nicely not burnt.

Panko Roasted Eggplant Recipe

I really love roasting vegetables and can make them healthier and still full of flavor. This is one of those fast and easy slice, season and roast vegetables that are addicting to me and go with any meal. Of course if you even want even less calories don't add the bread crumbs the garlic and oil will infuse perfectly and meld well with all the vegetables you roast. The tomato and eggplant are a perfect match here.

Eggplant peeled in stripes then sliced thick
Plum tomatoes sliced 
Broccoli florets
Sliced bell peppers
2 cloves minced garlic
1/4 cup Reggiano Romano cheese
salt and pepper to taste
2 or 3 fresh basil leaves chopped
pinch of cayenne pepper
2 tablespoons fresh chopped parsley
3 tablespoons olive oil
1/2 cup Panko Italian flavored bread crumbs or more

In a large bowl put the amount for your family of vegetables,  (around 4 to 5 cups of assorted vegetables). Add the oil and seasonings with fresh herbs. Toss to evenly coat.
Spread out on parchment paper or silpat mat and sprinkle with cheese and top generously with bread crumbs.  Bake ( roast) at 400 degree hot oven for around 35 to 45 minutes until they start to brown.

Apple Crisp for One Recipe

Apple crisp is one of my sons favorite desserts.  He inspired me to make something for him while I am on a diet. Of course I did have to taste this to make sure it's worthy of a post! He loved this and said "wow"this is great! Of course that was music to any cooks ears! Apple crisp for one in a mug and done in the microwave, 
it's quick and easy.
Matter of fact it took around 3 1/2 to 4 1/2 minutes 

from start to finish!  What's even more exciting is I had the most views and pins in one hour on this than any other ! thanks!!!

Apple Crisp for One Recipe

Here's all you need to do:

1 thinly sliced Macintosh apple they're my favorite! (you can use any baking apple)
2 tablespoons old fashioned oatmeal
2 teaspoons flour 
2 teaspoons brown sugar or more if you like this real sweet
2 tablespoons butter

Cooking spray
1 soup mug or deep coffee mug
Whipped cream or vanilla ice cream

This is layered so read the whole recipe before throwing this together:

In a large mug prepare it by using spraying with cooking oil.
Place a layer of apples, sprinkle with cinnamon to taste, 1 tablespoon oatmeal, 1 teaspoon flour, 1 teaspoon brown sugar and 1 tablespoon butter. Add another layer of apples and repeat remaining ingredients of layers, ending with butter.  I added 1 teaspoon of water to the top.

Microwave 2 minutes and check apples. If the apples pierce easy with a fork and are softened it's done. If not continue 1 minute at a time. It depends on the thickness. Mine took 3 1/2 minutes total.  

Serve warm with whipped cream. or ice cream

Leftover Beef and Rice Stir Fry Recipe

A simple rice and steak dish with some seasoning. This is a leftover steak meal that works when your on a tight budget. Nothing goes to waste and the second time around becomes an asked for dish. 

Leftover Beef and Rice Stir Fry Recipe

2 to 3 cups Cooked rice
1 egg
Soy sauce
Leftover steak of any kind
2 tablespoons butter
1 clove finely minced garlic
1 tablespoon olive oil
salt, pepper and  cayenne pepper to taste

In a large fry pan melt the butter and add the oil. Add the egg and stir until cooked through. Add the rice,  minced garlic and stir fry until starting to get browned takes around 12 to 15 minutes. Add 1/4 cup soy sauce and mix with 3 tablespoons water. Add to the pan and stir. Stir in the cooked left over steak just until warmed up. Season to your likeness with salt, pepper and cayenne.
Perfect side dish or meal adding a salad and garlic bread.

Slow Cooker Chicken Penne with Fried Breadcrumbs Recipe

My favorite part of this dish is the buttery fried garlic breadcrumbs garnish on top of this dish. 
You will be amazed how delicious this dish is and came out of a slow cooker! So easy to do.
 The pot does all the work, except for the topping. 

No one will ever know this came out of a slow cooker!

Slow Cooker Chicken Penne with Fried Breadcrumbs Recipe

4 boneless chicken breasts
1 cup white wine
1 cup water
1 can cream of chicken soup
1- 8 ounce package fresh sliced mushrooms 
2 tablespoons chopped fresh parsley or dried
1 cup bread crumbs
olive oil
garlic minced
garlic powder
grated cheese parmesan romano blend

Optional: add some fresh basil, rosemary and pinch of cayenne pepper to the pasta if you like more herb flavors.

Place the wine, water, soup, mushrooms, 1 tablespoon butter, 2 tablespoons olive oil, salt, pepper to taste, 1 tablespoon parsley and 2 teaspoons minced garlic in the slow cooker. Add the chicken on top stir all together.  Slow cook on low for around 6 hours. Chicken will be extremely tender. Around 30 minutes before this chicken is done, make the pasta and topping as directed below.

1 pound of pasta of choice cooked to package instructions and drained do not wash toss the hot pasta with 2 tablespoon butter, 2 tablespoons olive oil, 1/4 cup grated cheese and 1 tablespoon chopped parsley, set aside. Add salt and pepper to taste. 

Topping: (while the pasta is cooking)
1 cup bread crumbs
1 tablespoon butter 
1 tablespoon olive oil
pinch of garlic powder
2 tablespoons grating cheese more for top of pasta

In a small fry pan add the bread crumbs oil, butter , garlic powder and fry until lightly browned around 2 minutes, remove from heat. Mix in the grating cheese.  Garnish chicken and pasta with this crumb mixture.

Add some pasta to the bottom of a plate. Top with some chicken and mushrooms add some sauce from the slow cooker.
Sprinkle with fried bread crumbs and more grating cheese.


Slow Cooker Veal Stew

Veal stew with herb and spices slow cooked. The flavors throughout the stew are wonderful and enhance the potatoes, zucchini, carrots and green beans. A whole meal with a tender piece of meat that melts in your mouth.

Slow Cooker Veal Stew 

2 tablespoons Butter
2 tablespoons Olive oil
2 pounds sliced or cubed Veal
3 springs fresh Rosemary
2 Potatoes cut in cubes
1 cup finger Carrots
3 cut in wedges of Zucchini
1 cup Green Beans
1 cup White wine
1 teaspoon Lemon zest
1 tablespoon fresh chopped parsley
3 minced garlic cloves
1 cup fresh tomatoes pureed
1 cup beef broth
1 chopped onion'
2 celery ribs chopped

In a large fry pan saute the veal in oil and butter a few minutes on each side. Add all the broth, vegetables, herbs and spices, wine and sauce to the slow cooker. Place the sauteed veal on top of the vegetables and cook 6 to 8 hours on slow, 4 to 6 hours on high. Thicken if too thin with a mixture of 2 tablespoon flour and 2  tablespoons water add to the slow cooker 20 minutes before done. Great served with plain rice or boiled pasta noodles.

Don't you just love simple recipes? Well here is a cinnamon apple cake that will knock your socks off. The aroma alone will make you swoon and the family won't let it cool before you have them eating this one!  Not a baker?  This is your go to recipe, simple, easy and super delicious! Enjoy!

Simple Apple Cake Recipe

Mix in a large bowl:
1 cup oil
2 cups sugar
2 beaten eggs
2 teaspoons vanilla

3 cups flour
1 teaspoon cinnamon
1/2 teaspoon salt
1 teaspoon baking soda

Fold in:

3 cups chopped Mcintosh or other baking apples

Grease: a 13x9 pan or (make 2 smaller square pans) then spread the thick mixture into the prepared pans and bake 1 hour in a preheated oven of 325 degrees.

Optional Streusel Topping:

(Before baking mix together and top your batter with this)

2 tablespoons flour
1/2 cup sugar
2 teaspoon cinnamon
2 tablespoons melted butter


Blueberry Almond Scone Recipe Video

I love scones, I have made all kinds that make me smile. These were another one of those combinations I had to try. I like the ease making them, not a cake, not a bread, not really a biscuit but close. These are a buttery tasting lovely pastry that goes good for breakfast, brunch or even a dessert. The actual recipe is rich in buttery flavor because it has some heavy cream. The denseness is still more like a pastry. Whatever description I can give I can tell you this, these are worth making again and again and you will love them too!

Blueberry Almond Scone Recipe

I have made these with using lemon and lemon zest and they are wonderful also!

2 1/2 cups flour
1/2 cup sugar
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup salted butter softened
1/2 cup half and half or whole milk
1/2 cup heavy cream more for frosting
1/2 teaspoon vanilla
1/2 teaspoon almond extract
1 cup blueberries
1/3 cup toasted slivered almonds and more  for garnish

1- 1/2 cups powdered sugar
heavy cream to moisten
drop of almond extract
Heat oven to 375 and get a cookie sheet ready lined with parchment paper or us a baking mat.
In a large bowl place all the dry ingredients in the bowl and using two forks combine ingredients together.  Place the wet ingredients in the bowl and combine. Fold in the berries and almonds. 

Roll onto a floured board a large thick circle and cut into 8 thick triangles.

 Place on the baking sheet. Bake for 15 to 18 minutes or
 until golden on top. 
Mix glaze together by combining the powdered sugar, almond extract and cream till desired consistency then drizzle over the scones while warm, garnish with more almonds.

Italian Stuffed Yellow Squash Recipe

Here is one of those comforting dishes that you either love or hate. Well I love stuffed squash no matter what ones you use. This one is a keeper and I go back to over and over again without fail. It has that Middle Eastern flair with allspice that really bursts with exotic flavorings. Perfect for the winter months and always great when you want that home cooked comfort food.

Italian Stuffed Yellow Squash Recipe

1 lb of ground lamb, hamburger or turkey
2 cup of raw quick cooking rice
2 cloves of fresh minced garlic
2 bay leaves
1 teaspoon allspice
cayenne pepper to taste
1 teaspoon garlic powder
1/2 teaspoon dry basil
salt and pepper to taste
1/4 teaspoon cayenne pepper
2 whole fresh basil leaf chopped
1 sprig fresh oregano chopped
2 sprigs of fresh mint  chopped
1 can tomato paste
1 pound of fresh tomatoes put through food processor skins and all
red wine
8 large or 10 small yellow or green squash ...

Mix rice, lamb, 1 tablespoon of tomato paste and all spices except fresh garlic together in a medium size bowl.  Set aside in the refrigerator.

In the meantime, slice zucchini in halves this usually makes sixteen halves. Scoop out all the insides with a spoon and put aside. Stuff with mixture. Pour into a dutch oven saucepan 1 cup of burgundy wine, tomatoes and rest of paste. Place zucchini on top and stack . Add water to cover half way up the pan. Add garlic cloves in the tomato-water mixture, 1 fresh basil leaf and salt, pepper to taste.

You can stack these in a slow cooker on high for 4 to 5 hours or on top of stove in a large saucepan and simmer on low 2 hours or more until fork tender.

I place mine in a dutch oven pan that has a tight fitting lid in the oven at 350 degrees until the rice and zucchini is tender takes around an hour and half to cook. Once the fork goes through the squash it's done.

Burgundy Chicken Stewed Stew Recipe

Nothing warms up the house better than cooking up a nice pot of stew. I love beef too but decided chicken was going to be the main meat in our dish this evening. The wine is up to you, Burgundy is old school and that's what we always used for years. 
You can use Merlot, Cabernet or anything else you like. 
It really intensifies the flavors to everything in this delicious pot even if you use just a little and not the full amount.

Burgundy Chicken Stewed Stew Recipe

3 boneless chicken breasts cubed
1 can tomato paste
1 12 ounce can diced tomatoes
4 potatoes cut in cubes or more if you love potatoes more than the rest of what in there!
2 zucchini cut in cubes or wedges
1 stalk celery
1 cup each corn, peas, carrots, green beans, sliced mushrooms,  onions or you use more of anything you like 
1/2 can of red wine of choice (use the diced tomato can)
salt, pepper, cayenne to taste preference
4 cloves minced garlic
dried oregano, parsley and basil or fresh if you have it all to taste
1 sprig rosemary
1 bell pepper cleaned and cut up

Saute the chicken in 2 tablespoons olive oil around 3 minutes. Add the tomato paste, diced tomatoes and saute 1 more minute. Add all the vegetables, herb, spices and mix all together.
Pour the 1/2 can wine in the pot and water to cover the vegetables. Simmer on low around 2 hours. Serve with crusty Italian bread.

Italian Panzerotti Recipe

These are fried pizza pies but the filling is inside, like a fried calzone. They are very popular in the New Jersey area. I have made them many times and these are always a treat since they take a little more time than a usual pizza pie. These finally came out exactly how I remembered them. Little like making a filled pizza fritte. More work but delicious! Shown is simple pepperoni and mozzarella with garlic, oregano and fresh chopped parsley with some sauce inside. Make sure you drain them on paper towels before serving. Very yummy.


Baked Sausage Peppers and Potato Italian Classic Recipe

A casserole style Italian dish we never get tired of. Get out that Italian crusty bread and you got a match made in heaven. I just love sausage and peppers and the hotter sausage the better for me! We make this often. Sometimes the classics are the most comforting. I remember my mom would make this dish and the smell would hit you in the face coming through the door when I came home from school. Remember all ingredients for herbs, salt and pepper are to taste. The amounts you use in meats and potatoes should be to your size family. Baking time varies to how crispy you will like the potatoes and sausage. Mine cooks for over and hour.

Cinnamon Fig Walnut Refrigerator Biscuit Recipe

Here is one I didn't have a chance to post during the holiday. Great anytime, perfect for guests and delicious with coffee.
Try these with your espresso. Simply delicious.

Cinnamon Fig Walnut Refrigerator Biscuit Recipe

1/2 cup Kalamata dried figs chopped (or other kind of figs you like) you can substitute raisins or dates also
1  teaspoon cinnamon
1/4 cup walnuts chopped
2 tablespoons heavy cream
2 tablespoons corn syrup
1/4 cup brown sugar
cooking spray
2 tubes of refrigerated dough biscuits (10 per tube)
pinch of all spice

1 tablespoon melted butter
1 tablespoon brown sugar
1 teaspoon cinnamon
Combine in a small bowl set aside
There are two ways to make these see below:

In a saucepan combine all the above ingredients except refrigerated dough, cook until the mixture comes to a boil. I do these two different ways. 

Method number one: Flatten the dough with the palm of your hand, fill with a teaspoon of mixture and roll them placing seem side down pinching the sides then place on the parchment paper. 

Method number two which is faster:  On a parchment lined cookie sheet spread the fig mixture on the paper. Add all the biscuits on top of that mixture. Brush with the melted butter, sugar and cinnamon mixture.

 Bake at 375 degrees hot oven until the biscuits are browned.  Around 15 minutes. If using method one place on rack to cool. Method two, invert on a platter and serve.


Lentil Chicken Soup Recipe

Start off the New Year with this hearty rich lentil soup. 
I really love chicken soup, it's old fashioned comfort food that just makes you feel better. It's healthy too.  There are so many things you can add to it and make it a whole meal. Here is one soup I love the richness of by adding lentils. You can also add pasta or cooked rice and other beans if you prefer. Here's the basic soup recipe. 

Lentil Chicken Soup Recipe

1 package 12 oz of lentils sorted and then cooked to package instructions

2 boneless chicken breasts

1  28 ounce can diced tomatoes
1 chopped celery stalk
dried parsley, oregano and basil
2 teaspoons granulated garlic
3 cloves minced garlic
sliced carrots
salt and pepper to taste

5 quart saucepan
olive oil
grating cheese for garnishing

In the saucepan saute garlic in 3 tablespoons olive oil. Add around 3 quarts of water. Place the sliced carrots, celery chopped, tomatoes in the pot. Add the chicken breasts whole and simmer for around an hour. Skim off the top of anything that floats on the top from the chicken. Sprinkle herbs and spices evenly over the top of the water (around 2 teaspoons of each). Take the chicken out and dice it when cook and put back into the pot. Add the cooked lentils.
Salt and pepper to taste. Ladle into bowls and add grating cheese to the top.
