Super Easy Chicken Quesadilla

This is a quick and easy lunch, it reminds me of a chicken grilled cheese sandwich in a tortilla all dressed up with lettuce, tomato add some salsa, and sour cream all in a perfectly crispy fried Mexican American. flour tortilla.

If you want an easy go-to recipe and are craving Mexican crispy quesadilla, this is super fast.

You can even use rotisserie chicken, leftover chicken tenders or anything you happen to have leftovers of meat or leave these plain with all vegetables.

Just have some shredded cheeses on hand, flour tortillas and even pepperoni and mozzarella will do for a quick change for an Italian-style quesadilla.










Ingredients Needed for this recipe

  • chicken breast cubed or use rotisserie chicken shredded
  • garlic, onion 
  • taco sauce
  • flour tortilla
  • salsa
  • taco seasoning
  • butter or olive oil
  • extra-sharp cheese shredded, Jack cheese or a Mexican blended cheese
  • garnish suggestions: jalapeno peppers and more sliced olives, extra cheese, avocado sliced, salsa, sour cream

I love all in one pan melty cheese sandwiches or you can even bake them or air fry them either way they are super delicious and a simple recipe.


I sometimes use refried beans and cheddar for a filling, it's the perfect way to repurpose any meat leftovers for also!

This is a filled flour tortilla with chicken and cheese super fast and easy as an appetizer or quick lunch.

Ingredients

  • 1 chicken breast cut into small bite-size pieces
  • 1 tablespoon taco seasoning mix
  • 1/4 cup diced bell pepper
  • 3 cloves minced garlic or 1 small onion (use both if you like)
  • 8 tablespoons taco sauce or chili sauce
  • 4 large flour tortillas
  • 2 cups shredded Monterey jack cheese Sharp cheddar or Mexican blend
  • extra virgin olive oil for stir-frying the chicken

Instructions

  1. In a large frying pan heat 1 tablespoon or more of oil on medium heat.
  2. Place the cubed chicken in the pan with taco seasoning, and saute until the juices run clear 5 to 6 minutes.
  3. Heat 1 tablespoon of oil in a large frying pan over medium-high heat.
  4. Add in the pepper, garlic, and onion if using.
  5. Just stir fry this for like 3 minutes stirring constantly.
  6. Stir in the bell pepper and continue to cook for a couple of minutes, or just until it softens.
  7. Remove from heat.
  8. Stir in the taco sauce.
  9. Add some of the mixtures to the tortilla and add the shredded cheese.
  10. Fry the tortilla on medium heat in olive oil or butter in a clean large pan flipping on both sides until cheese is melted inside and the outside is crispy.
  11. This takes around 3 minutes on each side lower the heat if too high and starts to burn the tortilla.
