Italian Pork Tenderloin Stir Fry Recipe

Here is the best pork tenderloin stir fry you will ever eat in my opinion. Slow cooked on top of the stove it's just a perfect mouth watering meal. I like to serve mine with jasmine rice but you can serve this over pasta, rice or even mashed potatoes!
Anyway you decide to serve this you're in for a treat!

Italian Pork Tenderloin Stir Fry Recipe

2 to 3 pounds pork tenderloin sliced in cubes
2 or 3 bell peppers sliced and cleaned
8 ounces fresh sliced baby bella mushrooms
Pinot Grigio wine
olive oil
3 cloves minced garlic
1 teaspoon each granulated garlic, dried parsley, salt and pepper
dash or red pepper flakes or pinch of cayenne

cooked rice, mashed potatoes or buttered pasta

In a large fry pan, heat the oil around 4 tablespoons on medium heat. Stir fry the cubes of pork in the oil and add the garlic. Add mushrooms, peppers and a 1/2 cup wine,  simmer on low heat until the pork is soft and tender around 35 minutes, piercing with a fork to see if it falls apart with tenderness.  Serve over cooked rice, mashed potatoes or aglio pasta.

Acorn Squash

Using the tips on cutting the Acorn Squash, slice in half, scoop out seeds. Slice off the point so it lays flat on a foil lined cookie sheet. Place around 2 tablespoons of butter in each center and sprinkle generously with brown sugar and cinnamon around 1 teaspoon cinnamon to 2 tablespoons of sugar.
Bake on 400 degrees until soft and when pierced with a fork.

Italian Crab Fritter Appetizer Recipe

Probably one of my favorite appetizers ever! These are so easy and just a little more elegant than the normal fritter. If you love seafood then start off the New Year with a great little orderve that everyone will rave about! It's a definite keeper and special occasion type of treat!

Italian Style Crab Fritters

1 egg
3 tablespoon mayonnaise
1/2 cup seasoned flour ( 1 teaspoon granulated garlic, salt, pepper and cayenne pepper to taste)
1 can fancy white crab meat 8 ounces
oil for frying

In a medium size bowl add the mayo, seasoned flour and egg beating together. Fold in drained crab meat. Drop into hot oil in a heated fry pan. Fry on both side. Drain on paper towels. 
Serve with hot sauce or great with scampi sauce using the crab cakes instead of shrimp drizzled of the tops or alfredo sauce.

Baked Nutella Popcorn Recipe

Calling all popcorn and Nutella lovers here is the perfect snack for you and you will love it! A simple confection you will make time and time again!

10 quarts of popcorn popped 
1/2 cup brown sugar
1/4 cup corn syrup
1 stick (1/2 cup) butter
3/4 cup Nutella
1 teaspoon baking soda
1 teaspoon pure vanilla extract

optional: add 1 cup hazelnuts before baking or pistachios

Heat oven to 250 degrees. Spread your popcorn out on two parchment paper lined deep cookie sheets.
In a large microwavable bowl, add the sugar, syrup, butter, heat 30 seconds on high. Stir with a wooden spoon to combine, then microwave for 2 more minutes. Now add the Nutella to this mixture, stir until blended and microwave for 2 -1/2 minutes until it looks like it boiling and double in quantity. 
Remove from the microwave add your baking soda and vanilla stir.

Pour evenly over popcorn and spread out on two cookie sheets lined with parchment.

Bake in heated oven of 250 degrees stirring every 10 minutes and baking for 30 minutes or more until popcorn looks crunchy.

Polenta Pizzette Appetizer Recipe

A great appetizer or quick pizza. Polenta is a staple in Italy. If really has a great taste when fried or baked. These are baked just like pizza. You can make your own rounds or buy them in any specialty Italian section of the supermarket. We really like these with fresh ingredients using freshly pureed plum tomatoes. See the recipe suggestions below for toppings. We are lucky to have a produce place here and I bought 8 lbs of fresh plum tomatoes at 88 cents a pound can you believe that? Shocking great price!

These are made with fresh tomato sauce and topped with shredded whole milk mozzarella

Sprinkled with oregano freshly dried from our garden along with freshly chopped basil.

 Polenta Pizzette Appetizer Recipe

12 cut round slices of Polenta store bought 
3 fresh plum tomatoes pureed in the food processor
chopped fresh basil for each
oregano dried
salt pepper to taste
grating cheese
fresh whole milk mozzarella shredded for each one
olive oil
2 cloves of finely minced garlic or use garlic granulated if you don't have any fresh

Place polenta rounds on silpat mat or parchment, drizzle with olive oil. Put a tablespoon or more freshly pureed plum tomatoes on each one. Sprinkle generously with grating cheese, all the herbs and spices, then last add the mozzarella cheese. Bake on 400 degrees until cheese melted and begins to brown. Serve warm.

Banana Cake Mix Cake Recipe

If you need a quick semi homemade dessert this is perfect. The cake is moist and even better served with some whipped cream or just some powdered sugar.

Banana Cake Mix Cake

1 cake mix yellow (18.25 size)
1 box instant banana cream pudding
3 mashed small bananas
4 eggs
1 cup water
1/4 cup oil

Place in a large mixing bowl and beat around 4 minutes with electric beater. Pour into 13x9 greased pan or bundt pan. Bake in preheated oven at 350 hot oven until middle comes out clean with toothpick around 50 to 55 minutes.

Cool completely. Top with real whipped cream and refrigerate. Or you can frost this with a light glaze if it's a bundt cake,  with powdered sugar and water mixture or just powdered sugar sprinkled on top. I usually glaze a bundt cake and use the whipped cream when I do the 13x9 sheet cake.

Homemade Mommy Fish Nugget Recipe

A simple crunchy recipe that can be baked or fried. A combination of bread crumbs and pancake mix make this coating special. Give it a try you won't be sorry! I used scallops but you can use any cut of seafood you love!

Fish Nuggets:

1 cup Italian Style Bread Crumbs mixed with 1 cup of buttermilk pancake mix place in a zip lock bag.

Add  1/4 cup Romano cheese or Parmesan, 1 teaspoon garlic powder, pinch of salt, pepper and a pinch of cayenne pepper.
 Add all this to the zip lock plastic bag

In a bowl add:

2 eggs beaten in the bowl adding
2 tablespoons hot sauce
1 pound haddock, cod or other white fish cut up in small pieces (you can also use scallops, shrimp or lobster pieces)
Canola or other oil

Heat 1/2 inch deep oil in a fry pan.  Place the cut up fish of choice in egg.  Shake bite size pieces of fish in the dry mixture in the zip lock bag.  Deep fry the fish until golden brown around 6 to 7 minutes. Turning once.

You can also bake these on a cookie sheet on 400 degrees and a drizzle of olive oil over the top. Bake till golden brown around 25 minutes.

Seafood and Crab Lemon Scampi Recipe

One the easiest pasta seafood dishes I make. When I am in the mood for fish this is my go to recipe. I just love the simplicity and it's full of flavor and delicious seafood!

The whole meal takes around 35 minutes to prepare and on the table! A perfect meal for Christmas Eve!

Seafood and Crab Lemon Scampi Recipe

1 lb flounder filets or other white fish like cod,  haddock, sea bass or halibut cut up in small pieces
1 lb cleaned and deveined shrimp with tails off
1 lb crab meat fresh or canned, lobster or scallops or all of them 
1 lemon sliced
1/4 cup white wine
3 tablespoons butter
1 can chicken broth
1 tablespoon minced garlic
2 tablespoons chopped fresh parsley
salt and pepper to taste
olive oil
Optional : red pepper flakes to taste
Other fish suggestions: mussels, unbreaded calamari rings, clams, snook, redfish, 

Pasta of choice boiled to package instructions and drained we use either linguine or angel hair

In a large saucepan add the garlic and 3 tablespoons olive oil and saute for 1 minute. Add the chicken broth, butter, wine and parsley bring to a boil. Add all the fish and simmer until tender and shrimp is pink around 4 minutes. Scoop and pour over your favorite pasta.

Italian Butter Cookie Recipe

A pretty one for the tray around the holiday. These are simple and everyone always loves them. Little wreaths with tinted sliced almonds. All I do is add some green food coloring to the water, set the sliced almonds into the colored water until they turn green blot dry with a paper towel.

Italian Butter Cookie Recipe

1 cup butter
1 egg
3/4 cup sugar
1 1/2 teaspoons almond extract
1/2 teaspoon baking powder
pinch of salt
2 1/2 cups flour

Beat the butter and sugar together till light and fluffy.
Add all remaining ingredients.
Roll into balls and flatten with a floured glass
Add a piece of cherry in the middle and green tinted sliced almond for the leaves.
Bake in a preheated oven of 350 until set around 8 to  10 minutes.

Smoked Pork Chop and Bean Soup Recipe

Probably the tastiest soup I ever made. This soup bursts with flavors of smoked pork chops and hearty beans. This one will make you go for seconds for sure!

TIP: Make your beans in the slow cooker overnight 

Smoked Pork Chop and Bean Soup Recipe

1 lb navy beans cooked (did mine in the slow cooker click here)
1 carrot 3 cloves garlic cleaned and 2 stalks celery put through food processor
1 12 ounce can diced tomatoes
3 or 4 smoked pork chops
1/4 cup chopped cooked bacon
olive oil
granulated garlic
salt pepper to taste
pinch of cayenne pepper

In a medium size fry pan, add 2 tablespoons olive oil Add the pork chopped and processed vegetables into the pan saute around 3 minutes. 
Add 1/2 cup water to the pan and let simmer for 5 minutes.

In a large sauce pot add 4 tablespoon olive oil, granulated garlic and cooked beans. Saute for around 3 minutes. Pour the pork chop mixture into the pot, add the tomatoes and around 3 quarts of water.
Stir in bacon and salt pepper to taste. 
Simmer for around 1 1/2 hours on low heat. Before serving remove smoked pork chops out of the soup cut off the bone and put back into the soup.
You can also make some pasta separately boiled like tubertini and add to this soup.

Pandoro Recipe

One of my favorite risen cakes at Christmas time. This year my son ordered me a pan instead of me using my traditional metal coffee cans. I love the way this baked it's so festive and looked so professional!  It was such a fun day as we got to take my grandson to see Santa too. See more photo's below. Cake Mix Funfetti Chocolate Chip Crinkle Recipe

I don't think I ever made an easier cookie than these. The versatility of this recipe is endless. Use whatever kind of mix you like with a few more ingredients and you have a full proof perfect cookie. I love this recipe!

1 funfetti cake mix (I used holiday funfetti cake mix)or any flavored cake mix you like, any brand
2 eggs
1/3 cup oil
1 teaspoon vanilla
1 cup chocolate chocolate chips and at Christmas mint chocolate chips (or use whatever you like ,chocolate and peanut butter chips are a great combination also)

powdered sugar for rolling them in

Mix the cake mix, eggs, oil, mint chips and vanilla in a bowl, mix until a ball forms. Refrigerate for around 25 minutes.

I use a meatball or melon ball scooper to form balls of dough. Roll into powdered sugar and place on a parchment lined cookie sheet or silpat mat.

Bake at 350 hot oven until the cookies are set around 10 minutes. Cool completely store in air tight container. These also freeze well.

Amaretto Panettone Recipe

My son Chad brought me home a Panettone pan he ordered online and here is the finished product. I am thrilled on how this came out we make it every year in a metal coffee can but I finally got a pan from Italy to make it in and it looks nothing like the tall coffee can. It came out more like a big loaf of round thick bread and we loved it! The orange zest and almond went together perfectly!

 Amaretto Panettone Recipe
1 stick butter softened
1/2 cup milk warmed
zest of 2 oranges
1/2 cup sugar
1/2 cup soaked raisins dark and golden
4 cups flour or more
3 egg yolks + 1 whole egg
1/2 teaspoon salt
1 teaspoon vanilla or almond extract
1 package yeast dissolved in 1/4 cup warm water
1 egg yolk beaten with 2 tablespoons water to brush the top
1/4 cup Amaretto
Panettone pan or use an metal coffee can lined with parchment paper

Heat oven to 350 degrees.

Prepare Panettone pan, greased or using parchment paper lined pan.
Soak the raisins in the Amaretto for 1 hour. Drain reserving 1 tablespoon.
Add the yeast in a larger mixer bowl with 1/4 cup warm water to dissolve.

In another large bowl using an electric beater cream the butter and sugar together.
Add the the buttered mixture, the egg yolks, zest,  whole egg, salt vanilla and liqueur you're using into the the yeast and water blending well.
Add the flour a little at a time until a soft dough forms around 4 minutes with flat beater. Kneading around 10 minutes by hand adding the raisins.
Place in a draft free area and let rise 1 hour. 

Punch down and put into the panettone pan.
Let rise again.
Brush with egg yolk. Bake on 350 until golden brown.

Grandma's Banana Cinnamon Pancakes Recipe and Antonio

If you told me 2 years ago I would be cooking for the most handsome little man in my life I would have told you you're nuts. When this little guy come along he melted my heart to pieces. He loves bananas and these were the first time I got to make them for him. He really loved them. He can eat a whole banana every morning and be happy now he has Grandma's pancakes. I now have another reason in my life to do what I love and that's now to cook for my handsome grandson.  He will turn 2 years old on February 25th. This one's for you Antonio Valentino.

Pancake Recipe

2 cups flour
1 tablespoon sugar
1 teaspoon baking soda
1 teaspoon salt
2 cups buttermilk
3 large eggs, separated
1/4 cup (1/2 stick) unsalted butter, melted

Optional: fresh whipped cream
nonstick cooking spray or margarine

Sliced Bananas
Cinnamon Sugar Mixture ( 1/2 cup white sugar and add 2 tablespoons of cinnamon mixed together)
Butter or margarine
Your favorite Syrup

Pancake Recipe
Sift flour, sugar, baking soda and salt into large bowl. In separate bowl, beat buttermilk, egg yolks and melted butter until blended. Beat egg whites in separate bowl until soft peaks form. Stir buttermilk mixture into flour mixture until just blended (there will be some lumps). Add egg whites and carefully fold in until just blended.

Heat large nonstick griddle over medium heat until hot enough to sizzle a drop of water. Brush with thin film of oil (or melted margarine which I used). 

For each pancake, pour 1/4 cup batter onto griddle. add sliced bananas on top and sprinkle with cinnamon sugar mixture. Adjust heat to medium-low and cook until tops are covered with small bubbles and edges appear to be setting, about 2 minutes. Turn and cook until golden brown on other side, another 2 minutes. 

Repeat with remaining batter.
You can serve with more sliced bananas, syrup and whipped cream.

Chocolate Chocolate Chunk Cookie Recipe

If you are looking for the perfect chocolate cookie this year look no more!

Every year we have this tradition to bake cookies around Christmas and usually around 14 to 18 kinds. This one is a long time favorite and for all those Chocoholics out this this one's for you wherever
 you are!

Chocolate Chocolate Chunk Cookie Recipe

1/2 cup butter softened (for a soft cookies add all butter no shortening)
1/2 cup shortening
1 cup white sugar
1/2 cup brown sugar
2 large eggs
2 cups flour
1 teaspoon vanilla
1 teaspoon almond extract
2/3 cup cocoa powder
3/4 teaspoon baking soda
pinch of salt
2 cups chocolate chunks or semi sweet chips

Canned chocolate frosting
Holiday sprinkles

Note: 1 cup chopped walnuts are optional

In a medium size bowl cream the butter eggs and shortening until light and fluffy.  Combine rest of ingredients folding in the chocolate last and nuts if using. Drop by teaspoonsful on an ungreased cookie sheet or parchment paper lined.
Bake on preheated oven of 350 for 10 minutes just till set. Cool and frost with chocolate frosting and sprinkles.

Cinnabon Roll Muffin Cup Recipe

I took the easy way out of making cinnamon rolls or the #copycat #cinnabon. I used a muffin tin to make uniform rolls and then poured the frosting over them. Boy were these addicting. I ate alot more than I wanted to trust me they are awesome!

While still warm I drizzle the frosting over the tops and just make a fine glaze

A much neater and easier to eat way to make rolls!

Cinnabon Roll Muffin Cup Recipe

1/2 cup warm milk place in microwave for 30 seconds
2 eggs room temperature
1/3 cup butter melted
4 1/2 cups all purpose flour or bread flour ( I have used both the bread flour makes them much lighter in texture which I prefer)
2 packages dry yeast
1/2 cup warm water
1 teaspoon salt
1/2 cup white sugar

In a large mixer dissolve yeast in the warm water. Add the milk, butter, salt, eggs and half the flour beat until smooth. Add remaining flour and using dough hook continue beating till smooth and elastic.  Cover with plastic wrap, place in a warm place and let rise till doubled.

1 cup brown sugar
 2 1/2 tablespoons cinnamon
1/2 cup softened butter

Mix all together. 

Roll out dough into a large triangle. Spread filling onto the dough and roll like a jelly roll. Slice into 2 inch or more spacing them out and placing into oil sprayed muffin tins. You can also just place them spaced apart on the parchment lined deep cookie sheet ( I prefer the muffin pan for the uniform sizing.)

Drizzle with frosting below made with or without cream cheese.


1 1/2 cups powdered sugar
1/4 cup butter
pinch of salt
1/2 teaspoon vanilla
water to make a drizzle style frosting ( do not add if using cream cheese) I opted to do the drizzle my family isn't fond of cream cheese frosting.

Optional Note: 1- 3 ounce package cream cheese room temperature

Mix all together then without the water to make a spread. Spread over warm muffins.
