Mom's Homemade Blueberry Muffin Recipe


Today would have been moms 96th birthday. I miss her everyday. In her memory I made her blueberry muffins. Happy Birthday Mom in heaven, miss and love you everyday!

I actually always double this recipe as it will never make enough for my crew eating these. They will fly off the table. Pass the butter and eat them warm around 5 minutes out of the oven. Always a comfort for breakfast when there's a chill in the air. When the kids were little I made them often and made sure I had an abundance of blueberries in the freezer during the winter months. These sure do bring back memories and good ones of my own childhood when my mom made them for me.

Mom's Homemade Blueberry Muffin Recipe
In a large bowl mix:
1/4 cup of sugar
1/4 cup of shortening till resembles coarse looking sugar


Beat in :
1 egg


Add:
1- 3/4 cup cake flour (regular flour will make them heavier) 
3 teaspoons of baking powder
a pinch of salt

Alternate:
1 cup of milk to wet the dry ingredients.
Fold in one cup of fresh blueberries, red raspberries, strawberries or blackberries ( I have even used chopped apples with sugar cinnamon in this recipe

Line muffin cup pan with paper liners, fill to 3/4 full. Bake at 350 for 20 minutes.
