Best Bing Cherry Muffin

One of my all time favorite recipes these are the best bing cherry muffins you will ever eat!

I can eat them everyday while in season. This year I happened to get a not so sweet batch and viola these muffins were born! The best part is they are sweet as summer fruits should be. Hope you like them too!

I don't know about you but muffins are one of my favorite comfort foods and bing cherries are my favorite fruit, so that's where Bing Cherry Muffins came to mind.

This is perfect for summer cherry season. They're a must make every year!

I love cherries but sometimes you get a bitter batch and they aren't great for eating, has that ever happened to you ? Well this is the solution.

Make these muffins with them and you will buy them ever year wanting to make a batch I promise you no matter how the crop of them turned out.

They are over the top delicious, great while still warm with a little butter. Over the top awesome!

I have also tried this same recipe and with an update for you using blueberries. I added less sugar just 1/4 cup less and no cinnamon, I added lemon and they came out great.

These really are a very sweet muffin and for all the great bakers out there you can use less. The muffins won't crown as nicely.
As always you can just use chocolate chip and 2 bananas crushed. I have done that as well, they come out very good also.

I experiment alot with these recipes, not everyone likes cinnamon and you can adjust that flavoring with lemon peel or even orange peel. I have also just used vanilla.

You can decide what flavors you like. I had a reader tell me that chocolate chips and the cherry together were a big hit in their home. I also had another email saying red raspberry and white chocolate. You can see the incredible combinations you can make.

The dough is quite thick and heavy, you can also just bake it all in a loaf pan.

Best Bing Cherry Muffins


2 cups sugar
1- 1/2 cup chopped pitted bing cherries fruit or other fruit you like
1/4 cup applesauce
1 teaspoon cinnamon
2 teaspoons baking soda
1/4 cup vegetable oil or canola oil
2 cups flour
pinch of salt
2 eggs

In large mixing bowl add the egg, oil, sugar and applesauce. Stir in the cinnamon, baking soda, and salt mixing together.
Add the flour and stir till blended. Fold in the fruit.
Scoop into greased muffin pan around 3/4 cup filled. Bake on 350 degrees in preheated oven until the middles are set around 35 to 40 minutes.
Note: muffin pans are smaller than cupcake tins. This makes around 8 muffins.
