Mom loved changing the jams from strawberry, blueberry, pineapple, and with the mascarpone cheese, unique each time with different flavors with that creamy cheesecake-filled French toast.
This French Toast breakfast or brunch gourmet breakfast was reserved for special occasions, birthdays, Mother's Day, and Holidays.

Best French Toast Tips
- always heat the griddle first for the best results
- use butter or olive oil to fry the toast in
- do not over-soak the bread or it will be a soggy mess
- for sweeter-tasting French toast add a teaspoon of sugar
- always use thickly cut bread and the best result is slicing from a whole loaf of Italian bread never use American bread
- try using melted Tiramisu ice cream in place of heavy cream or another melted ice cream

Stuffed Strawberry Cheesecake French Toast
French Toast stuffed with creamy cheese and a delicious strawberry jam
Prep time: 10 MinCook time: 5 MinTotal time: 15 Min
Ingredients
- 6 eggs
- 4 tablespoons of heavy cream or milk
- 1 tablespoon almond, vanilla, or orange-flavored extracts
- Optional: 1 teaspoon of either zest of orange, or lemon or ground cinnamon
- 1/2 stick butter (for frying the French toast in)
- 1 small jar of strawberry jam
- 1 8-ounce container of Marscapone Cream Cheese or Regular Cream Cheese - softened to room temperature
- thick slices of banquette bread, French bread of a whole loaf of Italian bread sliced 3 inches thick
- Serving Suggestions: maple syrup, strawberry syrup or just a dusting of powdered sugar
- Optional Garnish: whole sliced fresh strawberries, mint, strawberries pureed
Instructions
- On two slices of bread, spread a thick layer of cream cheese/
- On the other two slices of bread spread a thick layer of jam.
- Note: This makes a cream cheese and jelly sandwich.
- In a deep pie plate, beat 6 eggs, cream, and add flavoring. and any other options IE orange or lemon zest.
- Dip each sandwich into the egg batter.
- Place a heavy-duty large fry pan on medium heat with a few tablespoons of melted butter and cook around 2 sandwiches at a time until brown nicely on one side, flip and brown the other side ( around 3 to 4 minutes).
- Add more butter as needed for the remaining French Toast Sandwiches.
- Make sure each side is browned evenly.
- Transfer to a plate you can cut it into triangles and heavily sprinkle it with powdered sugar or serve it with pureed strawberries, warmed maple syrup or just dusted with powdered sugar.
- Garnish: fresh mint and top with freshly sliced strawberries.
