We just love the flavors fall brings with the fragrant smell of cinnamon, comforting spices baked into these Pumpkin Donuts plus it's a super easy recipe to make!

These baked pumpkin donuts are great any time of the day and certainly perfect at breakfast time or a treat to bring to any outings, events, or get-together, especially around Halloween and Thanksgiving.


Our easy pumpkin donuts have all the best autumn spice flavors and complement this easy-made from scratch batter.


We love them plain, rolled in cinnamon sugar, powdered sugar, glazed with tinted frosting, dipped even in white chocolate.


There's no rolling, cutting, just make the batter and drop it into donut molded pans


Baking is so much healthier than fried and you won't notice the difference other than they come out a little flat on the bottom.


Since you've insisted on the healthier version, I will leave a baked or Air Fryer method as an alternative to make these Pumpkin Donuts with that method below.

Simple Baked Donuts



If you don't have a donut pan, you will need to invest in them since no cutting, no rolling is required using these pan eliminates those steps.


The donuts are great with milk for a snack and great with apple cider especially around Halloween if you're hosting a party.


I like a little something with my coffee and these are the perfect solution for folks on the go.

Ingredients You Will Need

  • flour
  • white sugar or brown
  • whole milk
  • baking powder
  • salt
  • eggs
  • pumpkin
  • butter
  • cinnamon
  • see recipe card for complete instructions and measurements

Other Additions

  1. chopped or diced fruits strawberry, blueberries, raspberries, peaches, cherries, banana, pineapple, mango, fig
  2. dried fruits,
  3. nuts of any kind (pecans, walnuts, macadamia
  4. coconut
  5. mini chocolate chips

Tips

  1. just blend the batter with wet and dry and don't overmix it 
  2. always oil spray the donut pan 
  3. any extracts can be used vanilla, orange, lemon, maple, almond to add additional flavor maple is the best 
  4. add crumbled bacon to the top of the frosted donut and use maple flavoring in the frosting
  5. add some finely diced apples to the batter before baking
  6. add raisins or other dried fruits to the batter
  7. Air Fried: you will need to use a heavy oil sprayed mini muffin pan and have a toaster oven-style air fryer. Set the air fryer to 350 and preheat. Place the filled mini muffin pan in the fryer for 5 to 7 minutes check the middles with a toothpick.
  8. store leftovers in the refrigerator in a sealed container 
  9. cool completely before adding the garnishes

Decorating and Garnishing



These donuts can be decorated or simple by leaving them plain the cake like donut is super delicious undressed.


Although our favorite is dipped in white chocolate then sprinkled with cinnamon and a bit of sugar, you can dress them however you prefer.


The kids love this batter with an addition of chocolate chips and sometimes I split the batter up and add some raisins or craisins to it.

Baked Pumpkin Donuts

Pumpkin donuts baked just shouts fall and this easy recipe requires no cutting and rolling, Drop, bake and garnish!

Ingredients

  • 2 cups flour 
  • 1 1/2  teaspoons cinnamon
  • 1/4 teaspoon pumpkin pie spice or use allspice
  • 2 teaspoons baking powder 
  •  1 teaspoon salt
  •  1 - 15-ounce can pumpkin puree  or use 1 3/4 cups fresh pumpkin puree homemade
  • 1 1/2 cups sugar 
  •  1/3 cup canola or vegetable oil 
  •  4 tablespoons butter, melted 
  • 1 teaspoon vanilla extract 
  •  3 large eggs
  • Garnish Suggestions:  Cinnamon Sugar Mixture: 3/4 cup sugar 2 teaspoons ground cinnamon 3 tablespoons unsalted butter, melted
  • Roll in Powdered Sugar poured in a pie plate with around 1 teaspoon added ground cinnamon to it
  • Drizzle with: Colorful frosting tinted orange made with powdered sugar water and butter
  • Dip in White or Dark Chocolate melted

Instructions

  1. Preheat the oven to 350 degrees.
  2. Oil spray 3 - 12 slotted baking donut pans and set aside.
  3. In a small bowl, whisk together flour,  spices, baking powder, and salt together in a medium bowl. 
  4. In a clean large bowl. beat the pumpkin puree, sugar, oil, butter, vanilla, and eggs and creamy smooth.
  5. Fold the two mixtures together until just combined.
  6. Pour into the prepared pans.
  7. I smooth the batter over the tops with warm water using my fingers.
  8. Bake the donuts in the preheated oven for 15 minutes or until the toothpick comes out clean in the thickest part.
  9. Cool for around 3 to 5 minutes then invert donuts on wax paper.
  10. Refer to the suggestions for garnishing above in the ingredient section.
