If you have never tried Baked Parmesan Crusted Potato Wedges which are like thickly sliced coated baked potatoes, you're missing out on one of the best ever side dishes!

My mom made these throughout my entire childhood, and I have always been the biggest fan of these steak style fries baked.


Even after all these years of this over a 100-year-old recipe, it still continues to be made by my children and family members with fond memories of her.


These are one of the most delicious potato side dishes that go well with any meal or even as a midday snack!


The breadcrumb cheese topped potatoes are delicious just the way they are and don't even need any condiments!


Another great thing about this basic baked potato recipe is you can use any potatoes you like even sweet potatoes!


Mom always came up with great ideas like this one and actually sold these at her delicatessen back in the early 1950s.

Air Fried or Baked?



Seriously, I am old school when it comes to vintage recipes like this one.


Baked will always be my number one way to make this recipe.


However, now in this new day of air fryers, I dabbled and experimented with these potato wedges in the air fryer and the results were faster for sure and pretty tasty.


Baking these takes a lot longer, a little over an hour and but I always double the recipe.


I never seem to make enough of these coated steak fries, they sure will go fast trust me!


If you do decide you want to try them in the air fryer, you will have to line your basic with foil to eliminate the oil dripping all over leaving air space around the basket.


I prefer to bake these like mom did, but they will come out tasty and faster in the air fryer.


Just coat the potatoes with a few tablespoons of oil, lay them single on the foil, sprinkle with the recipe ingredients and air fry around 15 minutes!

Must-Have Tools For Making Baked Parmesan Crusted Potato Wedges


  1. Parchment paper for non-stick or Silpat mat
  2. Deep baking pan or deep casserole pan
  3. Sharp knife for cutting the potatoes
  4. Potato peeler (or leave the skins on)
  5. Oven or Air Fryer
  6. Cutting board

Suggestions and Tips


  • Make Your own breadcrumbs using plain and adding seasoning and spices along with grated Parmesan Romano cheese
  • Cut into thick wedges, steak fries or rounds that are 1  to 2 inch in thickness
  • Do not use butter to bake these in as it will burn
  • Toss fresh herbs of any kind as a garnish
  • For very crispy potatoes cut thinner potatoes
  • The longer they cook the crispier the outside gets
  • Air fryers can be used instead of baking
  • For Sweet Potato flavor changes you can add cinnamon and sugar instead of Italian style
  • Try to find longer potatoes for steak fries to cut lengthwise
  • When making in large quantities, place the sliced potatoes in water and a tablespoon of lemon juice so they don't start to brown and stay nice and white
  • These taste great as is, however, you can top them with sour cream, shredded Italian blended cheeses melted, or dip them in a marinara sauce as appetizers

  • Red, White or Blue  
  • Yukon Gold
  • Sweet Potatoes

Note: I have used all the above, some potatoes will not crisp up as well as others. If you want very crispy potatoes only use baking russet potatoes.

Ingredients to Make Baked Parmesan Crusted Potato Wedges


  • potatoes peeled and cut into thick wedges (like steak fries)
  • Italian flavored bread crumbs of choice regular or panko style
  • Parmesan/Romano grated cheese
  • Sprinkled the tops of the potatoes with:
  • granulated garlic powder
  • Italian dried herbs
  • salt, pepper to taste
  • olive oil or a blend ( if you use more potatoes add more oil)
  • optional: cayenne pepper to taste and sweet paprika
  • Garnish with freshly chopped basil, parsley, and fresh rosemary sprigs
  • Parchment paper
  • Note: If you would like a Mexican flair, add cumin, chili powder, onion powder, garlic powder, and parsley and cilantro and toss with oil and top with crushed flavored tortilla or cheese crackers crumbs.

Baked Parmesan Crusted Potato Wedges

These are mom's breaded potato wedges. The potatoes are baked and coated with Italian flavored breadcrumbs, cheese, and garlic. A great side dish for any meal you serve them with.

ingredients:

  •  4 potatoes peeled and cut into thick wedges, rounds or like steak fries using Russet or Sweet Potatoes or colorful potatoes (you can also leave the skins on if you prefer)
  • Italian flavored bread crumbs of choice regular or  panko style 
  • Parmesan/Romano grated cheese (around 1/2 cup)
  • Sprinkled the tops of the potatoes with:
  • granulated garlic powder
  • Italian dried herbs
  • salt, pepper to taste
  • 1/4 cup olive oil or a blend ( if you use more potatoes add more oil)
  • optional: cayenne pepper to taste and sweet paprika
  • Garnish with freshly chopped basil, parsley, and fresh rosemary sprigs
  • Parchment paper
  • Note: If you would like a Mexican flair, add cumin, chili powder, onion powder, garlic powder, and parsley and cilantro and toss with oil and top with crushed flavored tortilla or cheese crackers crumbs.

How to cook Baked Parmesan Crusted Potato Wedges

  1. Line a 1-inch high baking pan with parchment paper.
  2. Peel and wash the potatoes and cut into long finger-like thick steak fries, rounds or wedges.
  3.  In a large bowl add the oil and the potatoes and toss to coat evenly.
  4. Spread potatoes on the parchment paper ( you can use a deep casserole pan or baking sheet)
  5. Sprinkle evenly over the top with salt, pepper, granulated garlic powder, and cayenne powder if using.
  6. Generously sprinkle the tops with bread crumbs and cheese evenly.
  7. Drizzle olive oil if needed and looks dry, just a little.
  8. Bake at 400 degrees hot preheated oven until brown and crispy around 45 to 55 minutes. Keep checking to see the desired crispness we like ours very crispy and dark brown.
  9. Serve with a garnish of freshly chopped parsley and rosemary sprigs.
