German Potato Salad

German Potato Salad is a hot tangy delicious sliced potato with an almost salt and vinegar-like taste.


I have made this style salad for more than 20 years and if you love spuds this is such a great choice for a side dish with the meat you make.


We love this creamy vinegar sauce and it really is a love it or hates it kind of food.


Once you make this old fashioned recipe, you will crave it again and again and it's so easily done on the stovetop.


We are big potato fans and I like to change them up often when making my mom's burger recipe or some thick juicy pork chops these potatoes are perfect for a side dish.


The family always asks for these more often than any of my other favorite potato recipes.


Even though I am not an authentic German food chef, I sure love some of their famous dishes like our version of venison sauerbraten and we also love a Cold German Potato Salad in the summer times for our BBQs.

Really an acquired taste



Growing up in an all Italian household, this was quite a change from all the tomato sauce recipes or many kinds of dipping sauces vinegar and oil dressing that we use on any kind of  salads with potatoes in it.


I really didn't start out liking this style potato salad and was made the regular style of  potato salad with mayo on it or the Italian dressing like mom made originally that dad loved.

Ingredients You Will Need for German Potato Salad

  • water
  • white vinegar
  • strips crispy bacon crumbled reserve the grease
  • butter
  • flour
  • sugar
  • salt
  • dill
  • celery seed
  • sliced potatoes cooked in salt water and drained set aside
  • hard-boiled eggs chopped
  • granulated garlic
  • black pepper 
  • freshly chopped Italian parsley
  • Optional: finely minced onion or chive (mix that in the egg step)

Tips


  • Fry bacon first and reserve the grease
  • Always use white vinegar for best results
  • Boil eggs and set them in cool water while cooking the vinegar sauce
  • Use on butter that this calls for
  • Add more water if the potatoes absorb all the moisture in the sauce
  • Adjust the spices to taste
  • Add a pinch of cayenne pepper for some heat

A Great Side Dish!



Potatoes have always been food for me.


I love that this style of salad is warm and has bits of egg in it. I just love the old fashioned flavors this dish has and style of cooking.


A little more effort to make but really a lot easier than it may look with my step by step instructions.


If you love salt and vinegar potato chips, you will love these potatoes with this cream sauce, that's what they remind my family of and are big fans!

If you are looking for a great recipe on how to make German Potato Salad, this is it.


When Mom found this recipe in the 1970s and made it, I wasn't crazy about these flavors until I had it a few times.


Then it became a nice change to regular potato salad.


The crispy bacon and boiled eggs make it super delicious with that tangy sauce.

The Bacon



I actually add more of each that the recipe calls for, who doesn't love bacon and eggs?


The hard-boiled eggs make it even creamier with the yolks chopped up and blended into the sauce.


The bacon fat gives this a fantastic flavor, we never changed the recipe but you can.


Some folks like their potato salad with leftover spiral ham or any other smoked pork meats.


The recipe was adapted from the Better Homes and Garden Cookbook from the early 1960s or 1970 something, one of their first books.

German Potato Salad a delicious style salad with vinegar and bacon and boiled egg. It's creamy, tangy and served warm and great with any meat as a side dish!

ingredients:

  • 1 cup water
  • 1/2 cup white vinegar
  • 6 strips crispy bacon crumbled reserve the grease
  • 1 tablespoon butter
  • 2 tablespoons flour
  • 2 tablespoons sugar
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon dill
  • 1/4 teaspoon celery seed
  • 6 cups sliced potatoes cooked in saltwater and drained set aside
  • 2 hard-boiled eggs chopped
  • 1 teaspoon granulated garlic
  • 1/2 teaspoon pepper
  • 2 tablespoons freshly chopped Italian parsley
  • Optional: 2 tablespoons finely minced onion or chive (mix that in the egg step)

instructions:

How to cook German Potato Salad

  1. In a frying pan, cook the bacon until crispy (reserving the grease in the pan) set aside the bacon in dish crumbled.
  2. Boil eggs, peel, chop them set aside. 
  3. Clean and slice potatoes around 1/2 inch thick with a paring knife or mandolin.
  4. Boil sliced potatoes in salted water, drain and set aside.
  5. In the pan with reserved bacon grease. add the butter. 
  6. Stir in the flour, sugar, pepper, salt, dill, celery seed, garlic, vinegar stirring till blended together, add in the water. 
  7. Cook and stir until it thickens. 
  8. Around 1 minute. 
  9. Add the chopped eggs, parsley and stir ( add onion or chives if using. 
  10. Pour over the sliced cooked potatoes, top with crumbled bacon. Serve hot.
