A little switch for me with German Potato Salad! I have made this salad for more than 20 years and if you love spuds this is a delicious salad that any potato lover will enjoy.

One of my favorite side dishes! German potato salad is a tangy creamy salad that goes with any meal you make it's also addicting. Once you make this old fashioned recipe, you will crave it again and again!

I love this as a side dish but personally I like it so much I can really eat this as a meal. It really is so delicious and full of flavor. Once you try it you will always crave it if you like salt and vinegar flavors!

This has been my go to recipe since I was 11 years old and learned how to cook. I found it in a newspaper clipping back
1968.

 I can't believe how many years have gone by and this recipe never fails me. The perfect compliment of flavors with any meal.

My kids love it and ask for this side dish more than any other potato dish I make! It's really fabulous.

Not hard easy to do and full of flavors. The longer it sets the better. I like to make it the day before I serve it and let the flavors meld together.

German Potato Salad is a creamy hot potato salad that is with bacon and herbs

German Potato Salad

ingredients:


1 cup water
1/2 cup white vinegar
6 strips crispy bacon crumbled reserve the grease
1 tablespoon butter
2 tablespoons flour
2 tablespoons sugar
1 1/2 teaspoons salt
1/2 teaspoon dill
1/4 teaspoon celery seed
6 cups sliced potatoes cooked in salt water and drained set aside
2 hard boiled eggs chopped
1 teaspoon granulated garlic
1/2 teaspoon pepper
2 tablespoons freshly chopped Italian parsley

Optional: 2 tablespoon finely minced onion or chive mix that in the egg step)

instructions:


INSTRUCTIONS:

Cook the bacon until crispy (reserving the grease in the pan) set aside the bacon in dish crumbled.
Boil eggs, peel, chop them set aside. Boil sliced potatoes drain and set aside.

In the reserved pan with bacon grease. Add the butter. Stir in the flour, sugar, pepper, salt, dill, celery seed, garlic, vinegar stirring till blended together, pour in the water. Cook and stir until it thickens. Around 1 minute. Add the chopped eggs, parsley and stir. Pour over the sliced cooked potatoes, top with crumbled bacon. Serve hot.
