This recipe uses simple ingredients starting with refrigerator biscuits and it's very basic so you can add whatever you like or leave it plain or add my several suggestions below.
Just mix the eggs, milk, and herbs, add the meats, and cheese, or use all vegetables you like, and voila, breakfast is made easy and versatile.

Delicious Easy Egg Breakfast
This one-pan breakfast is perfect for brunch, lunch, or dinner.
It's wonderful to be able to have the whole entire breakfast in one pan.
Adding anything to the beaten egg mixture bakes up into a delicious style pizza cheesy sauce quiche.
Plus clean-up is a breeze if you use a disposable pan and I always do it on the weekends especially if we have sleepover guests I get to spend more time enjoying my company.
Of course, if you prefer to have another side dish you can always try our homemade Pork breakfast Sausages they're fast and easy to make with ground pork.

- milk
- eggs
- pepperoni or sausage
- salt, pepper
- tomato sauce
- optional another chopped cooked meats of choice
- Optional:
- any vegetables you prefer
- home fries or frozen hash browns
Other Additions and Substitutions
- cooked bacon
- deli hot capicola or genoa salami
- deli mortadella ham
- prosciutto
- cooked crumbled bacon
- leftover steak
- Italian cooked hot sausage
- chopped vegetables of any kind IE chopped artichoke hearts, cooked escarole or spinach, chopped broccoli rabe cooked with garlic
- shredded hashbrown potatoes

If you love easy breakfast casseroles, this Italian baked egg casserole is easy and even perfect for dinner.
Growing up we had breakfast for dinner often and mom would use leftovers from the week if there were meats and those went into this casserole it was perfect for a Sunday night meal.
Baked Sauce Italian Eggs Breakfast

Baked eggs with tomato sauce, cheese, and pepperoni taste very much like pizza for breakfast and everyone raves about this easy recipe.
Ingredients
- 1 dozen eggs (12)
- 1 cup milk
- 1 pound Italian sausage or pepperoni (or use a combination of suggestions)
- 3/4 cups Italian flavored bread crumbs
- 1 16 oz jar or 2 cups of homemade sauce recipe
- 2 cups shredded mozzarella cheese
- herbs, oregano, garlic powder, basil, parsley (dried)
Instructions
- If using sausage, cook sausage until no longer pink, then drain. Set aside.
- Beat eggs and milk, add crumbs and pepperoni or sausage and pour into a 13x9 baking pan that is lightly sprayed with cooking oil.
- Refrigerate overnight.
- Preheat the oven to 350 degrees and bake for 1 to 1 1/4 hours or until set.
- Remove from oven.
- Spread sauce on eggs and sprinkle with shredded cheese and a little of each of the herbs.
- Return to the oven until the cheese is melted or broil it until crispy and browned.
