Ingredients You Will Need for Buffalo Chicken Casserole Pie
- boneless cooked chicken grilled, fried, rotisserie, or any leftovers you have
- buffalo wing sauce
- softened cream cheese
- shredded sharp cheddar cheese or more
- blue cheese dressing or ranch
- Optional: 1 or 2 tablespoons chopped celery and 1 tablespoon blue cheese crumbles
- Biscuit recipe topping (or you can use refrigerator biscuits or pour into a 9-inch deep-dish pie crust) baking mix like Bisquick of jiffy brands
- garlic powder, cayenne pepper, cajun spice, black pepper, and parsley flakes
- cornmeal
- milk
- egg

Easy Buffalo Chicken Pot Pie
This does remind me of a pot pie buffalo chicken style depending on the topping or crust you pick.
Whether you use pie crust, bisquick mix topping or refrigerator biscuits, this all in one pan chicken casserole is bursting with buffalo hot sauce flavors and so delicious.

Buffalo Chicken Casserole Pie

This is a delicious pie made with cooked chicken and all the flavors of chicken wings all inside a pastry crust.
Ingredients
- 2 cups boneless cooked chicken grilled, fried, rotisserie, or any leftovers you have
- 1/2 cup buffalo wing sauce
- 1 cup of softened cream cheese
- 1 1/2 cups shredded sharp cheddar cheese or more
- 1/2 cup blue cheese dressing or ranch
- Optional: 1 or 2 tablespoons chopped celery and 1 tablespoon blue cheese crumbles
- Biscuit Suggestions:
- NOTE: ( you can use our homemade recipe below, buttermilk refrigerator biscuits or pour into a 9-inch deep-dish pie crust without a top crust)
- Recipe for Biscuit Topping
- 1 cup baking mix like Bisquick of jiffy brands
- 1/4 teaspoon each garlic powder, cayenne pepper, cajun spice, black pepper, and parsley flakes
- 1/2 cup cornmeal
- 1/2 cup milk
- 1 egg
Instructions
- Put the chicken into a food processor and pulse till shredded or small cubes.
- Stir in the hot sauce, softened cream cheese, stir in the shredded cheese, blue cheese or ranch dressing, and celery, mix evenly.
- Pour all that into a pie crust (or use one of the biscuit topping suggestions with no bottom crust ) into oil sprayed well-greased pie plate.
- Preheat oven to 400 degrees.
- For the biscuit topping instructions:
- In a bowl mix the cornmeal, spices, herbs, and baking mix together with milk and egg.
- Place the biscuit mixture on top of the chicken mixture in the pie plate and spread it over the top evenly.
- Pour more shredded cheese over the top.
- Bake for 35 to 45 minutes until browned and bubbly.
- Serve with blue cheese dressing on top or garnish with crumbled bleu cheese

If you are into hot wings then this recipe is through the roof. Luckily I like wings. Best of all I bet it is a lot less messy to eat than wings.

Not sure why it doesn't but what really matters is that it is a delicious savory creation! The choice of cornbread topping is perfect because I do not think I would have liked a biscuit topping.
