This Best Slow Cooker Guinness Chili really will be the last style chili you may ever make it's really that good!


Hearty chunks of peppers, tomatoes, and delicious beef make this a comforting bowl to remember simmered in Guinness dark beer.


What's great about this chili, is it can be made on the stovetop, instant pot, slow cooker of course, and even in a beautiful Le Creuset cast-iron dutch oven baked!


Really just a matter of a few different settings using the same ingredients and this chili can be not only tasty but super easy to make.


We love making this Guinness Chili for St. Patrick's Day celebrations but it's great all year long and the perfect comfort food anytime!

Ingredients You Will Need (for exact measurements keep scrolling to the recipe card)

  • ground beef
  • green chiles
  • pinto and kidney beans
  • cumin, granulated garlic powder, chili powder
  • fresh garlic
  • crushed tomatoes and whole tomatoes
  • olive oil
  • peppers
  • garlic
  • fresh parsley
  • green chilies

Cooking Methods

  1. The stovetop simmered for at least 2 hours
  2. Instant Pot or Multicookers: sear the meat first, turn to use the pressure cooker mode follow the instruction book (around 35 minutes)
  3. Slow cooker/crockpot on low 6 to 8 hours or high heat 4 to 6 hours
  4. Oven: brown the meat on the stovetop first then add everything to a cast-iron dutch oven and bake for around 2 hours at 375 stirring every half hour

This is a hearty stout beer chili chunky with beans, ground beef, lots of seasoning slow-cooked, and will be the best tasting chili you ever had. We usually make it around St. Patrick's Day in celebration.

Ingredients

  • 3 pounds of ground chuck (or you can use ground turkey or chicken)
  • 3 tablespoons canola oil
  • 1 small onion, coarsely chopped
  • 4 minced fresh garlic cloves
  • 2 green bell peppers, seeded, cut into 1/2-inch pieces
  • 2 teaspoons ground cumin
  • 2 tablespoons chili powder
  • 1 teaspoon granulated garlic powder
  • 1 small 4 ounce can of minced green chilies
  • 12 ounce can of whole tomatoes chopped
  • 1 28-ounce can of crushed tomatoes 
  • 2- 15- ounce cans of pinto beans, drained
  • 1 15- ounce can of red or white kidney beans
  • 1 bottle of Guinness dark beer or another stout beer you prefer
  • Garnish Suggestions:
  • Jalapeno sliced peppers
  • Sour cream
  • Chopped chives or scallions
  • Coarsely grated extra-sharp cheddar cheese
  • crackers or tortilla chips
  • avocado slices
  • black sliced olives

Instructions

  1. Place ground meat in a large frying pan with oil chopped onions and garlic and saute until the pink is gone then stir in all the seasonings. 
  2. Dump this into the slow cooker with the tomatoes, beer, peppers,  green chilis, and beans.
  3. Cook on low up to 8 hours or high up to 6 hours. 
  4. Note: If this isn't thick enough you can make it thicken with a mixture of 2 tablespoons masa flour mixed with water, stir that in, and cook on high for a few minutes till thickens.
  5. Serve in bowls topped with sour cream, crushed tortilla chips, olives, jalapenos, salsa, and shredded cheese, or all the other suggestions above.
  6. Serve with toppings and garnishes of your choice from the above suggestions
