- Pizza Filling Simmer in Sauce (shown in photo):
- 1 cup soft whipped cream cheese
- 1 cup thinly sliced pepperoni, chopped
- 2 fresh plum tomatoes, finely chopped
- 1 28-ounce can of crushed tomatoes
- 2 tablespoons fresh basil, chopped, and more for topping tomatoes when baking
- 1 tablespoon of fresh parsley and more for topping tomatoes when baking
- 1 teaspoon granulated garlic powder and more for topping tomatoes when baking
- 2 cloves garlic, minced
- 1 teaspoon granulated garlic powder
- salt and pepper to taste
- 1/2 teaspoon crushed red pepper flakes (optional for heat)
- 1 cup shredded provolone and mozzarella cheese (optional, add more if you like)
- Meat Rolls:
- 1 1/2 pounds thin-sliced beef or pork cutlets (pounded thin if needed)
- Note: I used either sirloin or pork tenderloin when making this recipe
- 1 cup AP flour
- 1 egg with 2 tablespoons of water beaten
- 1 teaspoon granulated garlic powder
- 1/4 cup Parmesan grated cheese
- 2 tablespoons olive oil (for searing)

Instructions

- Preheat the oven to 375°F and grease a casserole dish that fits 6 beef or pork rolls.
- Mix the flour with cheese, garlic, salt, and pepper in a pie plate and set it aside.
- If the meat is very thick, pound it to around 1/2 inch in thickness.
- In a bowl, add the cream cheese, pepperoni, garlic, salt, pepper, parsley, and basil and mix evenly.
- Place a meat roll on a cutting board and add approximately 2 tablespoons of filling, spreading it evenly over the meat.
- Roll them up and repeat with the others.
- Add a toothpick of butchers' twine to hold them together.
- Dip each roll into the egg, and then into the flour.
- Shake off any loose flour.
- Heat the oil in a frying pan.
- Sear the rolls on both sides for 3 minutes.
- Place in the casserole dish.
- Add the plum tomatoes and the crushed tomatoes over the rolls.
- Sprinkle with fresh herbs, granulated garlic powder, salt, and pepper.
- Bake for around 25 to 35 minutes, then add the cheese on top just until melted, around the last 10 minutes.
- If you prefer browned, crispy cheese, place this under the broiler on high for around 2 minutes.
