Here is a perfect coffee cake with wonderful a rich apple cinnamon swirled throughout the cake. It's easy, quick to put together and made from scratch! Really it's easy take a look at the video instructions with some tips on how to make this tender coffee cake that's not dry and perfect with for you when craving a sugar fix.  Whenever I want a comforting almost dessert that's homemade, quick and easy this is my go to recipe. You will be pleasantly surprised how easy this is, don't be afraid of  that word scratch coffee cake, sure it's a little heavier but that's how they'll know it's not a mix.

1 1/2 cups flour
2 teaspoons baking powder
pinch of salt
1/2 teaspoon almond extract
2 eggs
1 stick butter
2/3 cup white sugar plus 1 tablespoon 
1/2 cup milk
1 apple diced fine
2 teaspoons cinnamon
1/3 cup brown sugar
Place the cubed apples into the brown sugar and cinnamon mixture.
Grease a round or square cake pan 9 or 10 inch. Preheat oven to 350 degrees.
In a small bowl mix the brown sugar and cinnamon set aside.
In another bowl beat together butter and white sugar until light and fluffy around 4 minutes. Add the eggs, milk and almond extract.
Beat in the flour, baking powder into the butter mixture. 

Spread half the batter on the bottom of the pan using a spoon or your fingers,  top the batter with half the apple mixture. Next add more batter on top spreading out and then the rest of the apples on top. Push the apples into that top layer with the back of a spatula or spoon.

Note: You can make extra combination of brown sugar and cinnamon to sprinkle on top before baking (1/3 cup brown or white sugar to 2 teaspoons cinnamon ). It makes this cake much sweeter which I do not prefer, that is optional.

Bake at 350 until the middle is set around 35 to 45 minutes or use toothpick method. You can serve this as is, with ice cream or whipped cream if you want a fancier coffee cake.

Italian Vegetable Stew Crockpot Recipe

Here is another one of those big pots of stew bursting with amazing flavor! Guess what you can adapt this to any way your family likes when it comes to ingredients. This one is full of vegetables, fresh. Green beans, carrots, peppers, zucchini, potatoes. Of course you can add many other delicious vegetables along with just the few I named and I am going to list those suggestions below so continue to read on. Oh and of course for you meat lovers, there are suggestions for you too!

If you prefer a meat stew then add beef, chicken , lamb or pork
You will need :

1 - 28 ounce can of tomato sauce or use 2 pound of fresh plum tomatoes put through the food processor (of course mine are fresh ones here in this stew, leave out 3 tomatoes and chop into cubes)
3 fresh cubed tomatoes if using canned sauce
3 small zucchini cubed
4 cubes and clean potatoes
3 cups of fresh green beans
1 cup fresh carrot slices
1 sprig fresh rosemary
2 or 3 stems of fresh parsley leaves
1 fresh bay leaf
1/2 cup red wine or white use water if you want
1 1/2 cups water
2 large cleaned and sliced bell peppers
3 cloves minced garlic
2 teaspoons garlic powder
oregano, salt, pepper to taste
olive oil

Optional additions: mushrooms, peas, garbanzo beans, 3 cups of cubed chicken, Italian slices of sausage, london broil cubed, boneless pork tenderloin cubed or lamb cubed then proceed the same with the vegetables you choose.

In a large crockpot or saucepan around 5 quarts, add 4 tablespoons olive oil, peppers and garlic on the bottom. Add the sauce and all the vegetables you are using. If using meat, add raw meat next. Add the sauce and wine, water, herbs and spices. Slow cook for 8 to 10 hours in the crockpot or on stove top 2 hours on low.

Serve with thick crusty Italian Ciabatta bread to sop up the sauce.

I really like creamy dressings every so often even though my favorite is a traditional Italian dressing. Creamy Italian has to be made fresh and flavorful. This is a creamy Italian Parmesan style dressing that really has makes salad come to a full meal when you add your favorite topping. I listed some of mine at the end to make your salad a full meal. With the nicer weather this truly is my go to meal. It also travels well to work and keeps me from being hungry longer. I try not to add more than 2 tablespoons of dressing in a small container to keep down the calories. Try this as a dip for your favorite vegetables or top your salad with grilled chicken. This dressing will compliment just about any kind of meat or seafood you want to add on top!

1/2 cup mayonnaise

1 teaspoon Worcestershire sauce

1/4 cup grated Parmesan cheese

1/4 cup fresh buttermilk

1 3/4 teaspoons finely minced garlic

1/2 teaspoon Italian fresh chopped parsley

1/2 teaspoon lemon juice

Mix all together and let flavors blend at least 3 hours before serving. Pour over Romaine lettuce using your favorite salad additions, see below for suggestions.

If you love capicola which is a hot spicy Italian ham well this baked egg, cheese, spinach is loaded with fabulous flavors. Whether it's breakfast, lunch or dinner this is a lighter meal and served with a salad or soup is the perfect solution when you want something a little different for a change. This is very much like a quiche, just a lot more Italian!

The best thing about pie is you can add anything you like. This one was inspired because I love Italian sauteed spinach with garlic. With the hot capicola ham you don't need to spice this up. Just the little amount of heat in the ham makes this pie perfect. For those who do not like the heat add black forest ham or honey ham as an alternative. You can also add prosciutto in place of ham or even mortadella which is a pistachio Italian bologna. Any meat added is delicious.

Capicola and Spinach Pie Recipe

1/2 pound thinly sliced capicola, prosciutto, precooked crumbled sausage or any other meat you like cooked

4 eggs

1 1/2 cups milk, half and half or heavy cream

6 slices of provolone or mozzarella cheese

1 or 2 cups of fresh raw spinach or you can use finely chopped escarole boiled

1/2 teaspoon minced garlic

salt and pepper to taste

1 deep dish pie shell uncooked

2 tablespoons grating cheese

Optional additions: sliced peppers, artichoke hearts, mushroom slices, eggplant, zucchini or plum tomato slices

In a bowl mix the eggs, milk, grating cheese, spices and set aside. Place the fresh spinach on the bottom pressing them down and any other optional items listed above. Add the cheese on top then the meat. Pour the egg mixture over the top. You can add more garlic and sprinkle more grating cheese on top. Bake on 350 degree hot oven until browned on top and the middle doesn't shake anymore. Around 45 to 55 minutes.


Banana Sour Cream Bars with Cream Cheese Frosting Recipe

When I have leftover bananas this is one of my go to recipes. I love banana bread also but this one is just a great little snack cake that everyone seems to favor. Hope you like it too!

Banana Sour Cream Bars

1 stick butter (1/2 cup)
1 1/2 cups sugar
1 cup sour cream
1 3/4 cups bananas (approx. 3 ripe ones)
2 eggs
2 cups flour
1 teaspoon baking soda
3/4 teaspoon salt
2 teaspoons vanilla
1/2 cup chopped pecans (optional)

Preheat oven to 350 degrees.

In a bowl using an electric mixer, beat the eggs, sugar for 3 minutes. Add the rest of the ingredients and beat till thick and smooth around 3 minutes.

Pour into a jelly roll pan or brownie pan and bake for around 25 to 30 minutes. Cool completely.

Frost with cream cheese frosting below.

Cream Cheese Frosting Recipe:

4 ounces cream cheese
4 ounces butter
2 cups powdered sugar
1 teaspoon vanilla

Beat cream cheese and butter together until creamy. Add the sugar and vanilla.

Spread on top of cooled banana bars.

San Guiseppe is the day for zeppole. The pastry shops and friggitorie (fried food stands) churn them out in astonishing quantity, for eating Zeppole on the 19th is another of those traditions in Italy that must be observed. Despite their size everyone eats at least two or three, or even four, because the sweet, delicate pasta bigné, flavored with a hint of cream and one or two bits of candied cherry, is so good and a creamy delight.

The current, refined version of zeppole became a tradition quite late, perhaps towards the end of the 19th century. Among the [older] cookbooks called "Tortanetti di pasta bigné" (1865); the zeppole for San Giuseppe are instead made from a flour-and-water dough that's fried, and dusted with sugar and powdered cinnamon or dipped in honey. It's known that this traditional version was quite ancient. It's also known that on March 19th they were made by the ton in pastry shop and frying stall, as well as at home, and that they were offered to guests and whoever else happened to come by and you were really especially lucky to celebrate that day if you were named Giuseppe (Joseph).

Semi Homemade Chocolate Chip Cookie Candy Recipe

Well here is an interesting way to make everyone in the family happy semi homemade. Your favorite chocolate chip cookie recipe topped with all the childhood candy and cookies your family and friends love all in one! 

The ideas are endless so let's get creative shall we?
Here is my favorite chocolate chip cookie recipe CLICK HERE or use a store bought brand.

Topping suggestions: oreo. nutterbutter. lorna doones,  favorite girl scout cookies
kit kat, snickers, rolo, peanut butter cups, junior mints, m&m, milky way, muskateer

Roll a small round piece of cookie dough and place on the cookie sheet lined with parchment or silpat.
Cut the cookies or candy into small pieces, place in the center of each cookie and press down firmly.
The cookie or candy will stay in place after baked.

Bake the cookies per recipe instructions in a preheated oven. Cool completely before removing from the parchment paper.
Place on a wax paper lined cookie tray. 

Watch them disappear.

The Best Thousand Island Dressing Recipe

During my favorite time of the year to party and partake in some of the best Irish foods and festivities in my opinion is St. Patrick's Day. I love all kinds of the foods that are made during that week. It's party time! One of the staples I find that's necessary when making a great Reuben sandwich is having a great tasting thousand island dressing. So here is the one I make that's easy in this perfect celebration time in March. Of course it's great anytime.

The Best Thousand Island Dressing

1 cup mayonnaise
3/4 cup ketchup
1  teaspoon sweet pickle relish
1 teaspoon dill pickle relish
1/4 teaspoon each garlic powder and onion powder
1 small clove finely minced garlic
1/2 teaspoon lemon juice
1/2 teaspoon balsamic vinegar
freshly cracked black pepper

Mix in a bowl and store in a glass container for at least 2 hours before using. Use within 2 weeks as it gets stronger with age but still good up to a month if you don't mind the stronger taste. Use on reuben sandwiches, hotdogs, burgers, wraps and or salads with chicken, steak or corned beef on top.

Irish Cream Chocolate Chip Cookies

For the chocolate chip lovers, here is a different version with quite a wonderful addition. Irish cream liqueur. Your in for a treat! Hope you like them as much as we did!

2 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter, softened
1/2 cup granulated sugar
1/2 cup brown sugar, packed
1 egg
1 teaspoon vanilla extract
1/2 cup Irish Cream
2 cups chocolate chips

Preheat oven to 325 degrees.
In a medium bowl, combine flour, baking powder, baking soda, and salt; set aside.
In a large mixing bowl, cream butter, granulated sugar, brown sugar, and egg together until light and fluffy. Add vanilla extract and Irish Cream; mix until combined.
Gradually add dry ingredients to butter mixture and blend well. Fold in chocolate chips.
Shape dough into 1-inch balls. Place on ungreased cookie sheets 1 1/2 inches apart. Flatten with the bottom of a glass coated with non-stick cooking spray.
Bake for 8-10 minutes, or until golden brown. Cool on cookie sheet for 1 minute.

Guinness Reuben Style Grilled Hotdogs or Brats Recipe

 Here is my favorite Guinness brewed hot dog in a toasted potato roll with melted swiss cheese. Add some Bavarian kraut, then top it off or dip it in a thousand island dressing.
 If you want something above the rest then this is the dog for you! 
1 dozen brats or hotdogs
Guinness beer enough to cover the brats
2 or 3 garlic cloves
Boil the the brats with the beer and garlic until cooked. Reserve the liquid on low.

Place the brats on a heated grill until browned and grill marks form. Place back into the beer to keep warm.

Garnish with toasted potato hotdog rolls, swiss cheese slices, Bavarian Sauerkraut and top with thousand Island dressing or use as a dip on the side.

Guinness Scallop Cheddar Bacon Potatoes Recipe

Well here is a perfect side dish with any meal who can resist bacon, potatoes and cheese?  Another comfort food the whole family will love.

1/2 cup Guinness Beer
1/4 butter and 1/4 flour
1 teaspoon minced garlic
1/2 teaspoon garlic powder
dash of cayenne pepper
1 teaspoon sea salt
1/2 teaspoon white pepper or use regular
1/4 teaspoon smoked paprika
1/4 teaspoon chili powder
1/2 cup chicken broth
1/2 pound of extra sharp ( cheddar cheese)
1/2 cup heavy cream, half and half or whole milk
1 cup evaporated milk
1/2 teaspoon Worcestershire sauce
1 pound of bacon cooked until extra crispy for the top
3 pounds Yukon Gold potatoes thinly sliced
1 cup shredded Dubliner Cheese for the top

Make a paste with the flour and butter in a saucepan.  Heat and whisk until smooth. Add all seasonings. Stir to combine evenly.
Add the beer, chicken broth and heavy cream stir till smooth.  Add the cheese Worcestershire sauce.
Stir until all is melted.
In a large buttered baking deep casserole dish, add the potatoes on the bottom, cheese sauce, more potatoes and keep layering with cheese sauce until it's all in the casserole. Add more grated to the top.
Bake on 375 degree preheated oven for at least 70 minutes or more until top is browned and potatoes are soft.
Sprinkle with crumbled bacon.

Spice Cake Apple Pecan Squares Recipe

What a simple cake mix turned into a scrumptious apple pecan
cake. Everyone thinks it's homemade from scratch. Nothing special except a few simple ingredients to dress up that mix and you will have them all asking for your recipe. Here is a perfect coffee cake with apples and pecans that will wow your friends and family. 

Easy semi homemade cake squares with fresh apples, pecans tossed in a sugar cinnamon. Check out this simple recipe that will be a big hit for any function.

1 spice cake (18.25 oz) mixed to package instructions

2 McIntosh apples pared cored and sliced thin or other baking apple
1 tablespoon flour
1 teaspoon cinnamon
2 tablespoons sugar
whole pecans for garnishing

Mix the cake mix to package directions. Pour into a brownie sized pan lined with parchment or heavily greased.
In another bowl place chopped apples, flour, cinnamon and sugar then toss all together. Evenly spread over the top of the batter.
Place the pecans over where each square would be cut.
Bake at 350 until the middle springs back or tooth pick comes out clean around 25 minutes.

These can be served with whipped cream, with powdered sugar sprinkled or just plain. Perfect with any hot beverage!


Butter Maple Pecan Bread Recipe

A great bread for bake sales, pot lucks and tea time. Just a quick throw it together and  great flavored  bread! Actually one I love as an alternative to the everyday banana bread. I love also adding raisins or chocolate chips to this one.
Really easy to mix and freezes well so make many for those unexpected guests! I just love the flavors in this one cinnamon, spice good old fashioned pecan buttery loaf.

1 3/4 cup flour
2 teaspoons baking powder
1 teaspoon baking soda
1 cup sour cream
1 stick butter = (1/2 cup)
3/4 cup maple syrup
1 egg
1/2 cup chopped pecans
1 teaspoon cinnamon
1/4 teaspoon allspice
1/2 teaspoon salt
optional: 1 cup coconut, chocolate chips or raisins

Preheat oven to 350.  Grease and flour a large loaf pan.  Place all dry ingredients in one bowl blending together. Mix in another bowl  sour cream, eggs, syrup and butter beat till well combined. Add the dry ingredients along with nuts and any of the optional ingredients, stir until blended. Pour into pan. Bake at 350 for at least an hour or until the center is clean with a toothpick when inserted. Flip onto a wire rack, cool.

Pepper, Eggs and Provolone Bacon Wrap Recipe

What can be more simpler than making scrambled eggs, crispy bacon, sauteed garlicky peppers with provolone in a flour tortilla wrap for breakfast, lunch or dinner? Nothing!

Here's all you need to do:
Flour tortilla wraps
scrambled eggs
cooked crispy bacon
1 sauteed pepper chopped in small bite size pieces
provolone cheese
2 teaspoon minced garlic in oil

Saute peppers in 2 tablespoons of olive oil for around 3 minutes, add the garlic, at least 4 eggs (to make 4 wraps) stir until the eggs are cooked and still slightly loose, set aside.

On a flat surfaced cutting board, lay out the tortilla, add 1 slice of provolone, top with 2  or 3 tablespoons of cooked peppers and eggs, add the crispy cooked bacon on top of that. Roll up tight seam side down. Bake in the 430 degree oven for aroound 6 to 8 minutes until they start to brown and cheese is melted.

They sure grow up fast don't they? Well then make every moment count. Here is a quick and easy way to add that smile on any childs face and make them remember forever how much fun it was to. Here is all you need to buy:

Pancake mix store bought and follow package instructions or use the recipe provided at the end (make as much batter as you need for the family)
1 ketchup bottle for the local inexpensive stores

A griddle to make pancakes on or flat surfaced fry pan
cooking spray to make sure they dont stick
assorted fruits for eyes, nose and mouth IE blueberries, strawberries, cherries, melons
Chocolate syrup to decorate the outer part of the face.
Optional garnish with whipped cream in the ear section
I am sure you can use your own imagination to fill in the face with fruits and other healthy toppings. 
Now no two will come alike as you can see below but that's ok they are all unique!

Pancake Batter Recipe:

1 cup milk
1 egg
1 cup sifted flour plus 1 tablespoon
1 tablespoon sugar
2 teaspoons baking powder
1/4 teaspoon salt
1 teaspoon lemon juice
2 tablespoon canola oil
1 teaspoon vanilla
Cooking spray to grease griddle

In a large bowl, sift together flour, salt, baking powder and sugar. In a small bowl, beat together egg, milk oil, vanilla and lemon juice. Stir into flour mixture.


Grilled Guinness Chicken Reuben Style Recipe

Chicken marinated in Guinness Beer, grilled to perfection the topped with the Reuben style famous sandwich with Dubliner Cheese melted on top.

4 to 5 boneless chicken breast
1 bottle Guinness beer
2 tablespooons olive oil
2 cloves garlic minced
1/2 teaspoon smoked paprika
2 tablespoons lemon juice
Mix the beer, olive oil and spices together add to a zip lock freezer bag and marinate the chicken overnight.

Heat the grill on medium. Grill chicken until marking are deep and juices run clear. Place on a plate. Top with a piece of Dubliner cheese or swiss, Sauerkraut and drizzle thousand island dressing over the top, great with rye bread in a sandwich too!

Tuscan Tortellini Sausage Chicken Florentine Soup Recipe

There are so many styles of soup, anything goes in the pot and becomes a banquet. I decided one day that I was going to make a soup that had the flavors of cheese, cream, spinach and sausage in a chicken broth but heartier. This soup was such a hit with everyone I didn't make a big enough pot. The tortellini and sausage made a delicious addition to the broth and was packed with the flavors of buttery cream sauce a little like Alfredo would taste.
