Apple Cinnamon Coffee Cake Recipe Video

Here is a perfect coffee cake with wonderful a rich apple cinnamon swirled throughout the cake. It's easy, quick to put together and made from scratch! Really it's easy take a look at the video instructions with some tips on how to make this tender coffee cake that's not dry and perfect with for you when craving a sugar fix.  Whenever I want a comforting almost dessert that's homemade, quick and easy this is my go to recipe. You will be pleasantly surprised how easy this is, don't be afraid of  that word scratch coffee cake, sure it's a little heavier but that's how they'll know it's not a mix.

1 1/2 cups flour
2 teaspoons baking powder
pinch of salt
1/2 teaspoon almond extract
2 eggs
1 stick butter
2/3 cup white sugar plus 1 tablespoon 
1/2 cup milk
1 apple diced fine
2 teaspoons cinnamon
1/3 cup brown sugar
Place the cubed apples into the brown sugar and cinnamon mixture.
Grease a round or square cake pan 9 or 10 inch. Preheat oven to 350 degrees.
In a small bowl mix the brown sugar and cinnamon set aside.
In another bowl beat together butter and white sugar until light and fluffy around 4 minutes. Add the eggs, milk and almond extract.
Beat in the flour, baking powder into the butter mixture. 

Spread half the batter on the bottom of the pan using a spoon or your fingers,  top the batter with half the apple mixture. Next add more batter on top spreading out and then the rest of the apples on top. Push the apples into that top layer with the back of a spatula or spoon.

Note: You can make extra combination of brown sugar and cinnamon to sprinkle on top before baking (1/3 cup brown or white sugar to 2 teaspoons cinnamon ). It makes this cake much sweeter which I do not prefer, that is optional.

Bake at 350 until the middle is set around 35 to 45 minutes or use toothpick method. You can serve this as is, with ice cream or whipped cream if you want a fancier coffee cake.

Irish Cream Chocolate Chip Cookies

For the chocolate chip lovers, here is a different version with quite a wonderful addition. Irish cream liqueur. Your in for a treat! Hope you like them as much as we did!

2 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter, softened
1/2 cup granulated sugar
1/2 cup brown sugar, packed
1 egg
1 teaspoon vanilla extract
1/2 cup Irish Cream
2 cups chocolate chips

Preheat oven to 325 degrees.
In a medium bowl, combine flour, baking powder, baking soda, and salt; set aside.
In a large mixing bowl, cream butter, granulated sugar, brown sugar, and egg together until light and fluffy. Add vanilla extract and Irish Cream; mix until combined.
Gradually add dry ingredients to butter mixture and blend well. Fold in chocolate chips.
Shape dough into 1-inch balls. Place on ungreased cookie sheets 1 1/2 inches apart. Flatten with the bottom of a glass coated with non-stick cooking spray.
Bake for 8-10 minutes, or until golden brown. Cool on cookie sheet for 1 minute.

Baked Vanilla or Sour Cream Donuts

I just love my new donut pan!

Learn how to make homemade baked cake donuts just as beautiful as in a bakery!

If you haven't tried baked donuts, they are so easy, light and actually fun even if you hate baking!

Today I made two different flavored donuts so you have two recipes to love.

One is a baked vanilla spice that has a hint of cinnamon and a little nutmeg in the batter.

The other is a baked light donut with sour cream and vanilla.

Either one is delicious and has the same delicious white chocolate glaze on top.

Having had donuts with that cinnamon taste in them growing up was a favorite with powdered sugar on them.

You can dip them in chocolate frosting, vanilla frosting or roll in cinnamon and sugar or powdered sugar.

Both recipes are very basic flavors easy to make and so versatile.

You can decorate these baked donuts any way you like.

You could even tint the frosting and make them festive for any event or to your party theme with matching sprinkles.
