Cake Mix
Use any cake mix to package instructions, you can add chocolate chips to the batter if your a death by chocoholic kind of person also (around 1 cup should do it) plus if your a nutty kind of person add 1/2 cup of crushed pistachio nuts!)
I didn't get too fancy with the decorating, it's simple, add a few mini chocolate chips crust pistachios and everyone was mouth-watering to cut into this cake.

- cake mix chocolate preferred
- whole milk ricotta cheese
- eggs
- whipped topping
- pistachios
- instant pudding
- vanilla
- cinnamon
- chocolate chips
- milk
Other Options
- add chopped maraschino cherries to the batter in green and red for Christmas
- crush some sugar cones on top of the whipped cream frosting dipped in sweet Marsala wine
- use instant chocolate pudding instead of vanilla
- add toasted almonds instead of pistachios
- decorate the top with whole strawberries

Italian Style Chocolate Cannoli Cake

This is a doctored cake mix to make an Italian Chocolate Cannoli Cake.
Ingredients
- Filling:
- 1 - 15 ounce container Whole Milk Ricotta Cheese
- 4 eggs
- 1 teaspoon pure vanilla
- 3 tablespoons mini chocolate chips
- 1/4 teaspoon cinnamon
- In a bowl mix together everything but the chocolate chips and set
- 1 chocolate cake mix of any kind
- Frosting:
- 1 cup whole milk
- 1 package of instant pudding
- 8 ounces of real whipped cream or non-dairy topping or use 2 cups of sweetened real whipped cream
- Garnish: Chopped Pistachio nuts
Instructions
- In a large mixing bowl using an electric mixer make the chocolate cake mix according to the package directions.
- Pour into a 13x9 deep cake pan greased.
- Pour the filling layer over the top and smooth out with a spoon or knife to the edges.
- Sprinkle with the mini chips evenly use more if you like.
- Bake at 350 until set in the middle around 40 minutes.
- Set the cake aside to cool completely. In the meantime make the frosting
- Frosting:
- Whisk the milk and pudding together in a medium-sized bowl until it thickens.
- Fold in the whipped cream.
- Spread over the top of the cooled cake.
- Sprinkle with pistachios.
- Keep Refrigerated.
