Either using fresh peaches or canned pie filling for your topping, this is a refreshing and quick pie to make for any gathering or family function. This brings the beginning or end of summer a big feeling of warm sunshine. The filling is perfect, still light enough with that cool smooth creamy taste but not to heavy after a big meal. This is sure to hit the spot for all our peach lovers. If you prefer a different topping and just want fresh fruit all the better too!
Blueberries, cherries, strawberries and raspberries are all fabulous toppings. If you really in a hurry use pie filling!

No Bake Cheesecake Peach Fruit Pie
1- 8 ounce container of whipped cream topping non dairy thawed
4 ounces mascarpone cheese and 4 ounces cream cheese (or use 8 ounces of one or the other)
1/2 cup powdered sugar (up to 1 cup if you like sweeter)
1 teaspoon peach schnapps or almond extract if using another fruit for your topping
1 pre made graham cracker pie shell (extra large one if you can find them it has more room for the topping)
For Topping:
peach topping recipe below, fresh fruits sliced, pie filling
Directions for pie:
Beat the cheeses and almond extract until softened. Slowly add the powdered sugar and blend together. Taste for desired sweetness. Fold in the whipped cream, blend until light and fluffy.
Using a spatula spoon, add this to the pre made graham cracker crust and refrigerate around 30 minutes. Add any topping you like.
Peach Topping homemade ( you can use pie filling if your in a hurry)
2 cups sliced and skin peeled fresh peaches (or use fruit of choice.) Note: You can also use canned peaches drained and use that juice instead of apple juice below)
1/2 cup apple juice or water
1/3 cup sugar
2 - 1/2 teaspoons cornstarch
Combine the sugar, juice and cornstarch in a medium saucepan, bring to a boil and cook until thickens. Add the peaches, set aside to cool while making the pie.
Peaches are at their peak right now. I love the creamy, sweet cheese filling. My son-in-law asked for a summer peach pie last week - and now I have one!
