Antipasto Stromboli Roll is one delicious salad in a roll and the best way to get the family to eat salad!

It's always a chore around here getting the guys on board with eating vegetables, and if it's not full of carbs, well then, it sits there.

So, here is the best of both worlds, salad, bread and everything all in one giant rolled up a delicious filled sandwich.

I really don't know what took me so long to get creative with this idea, but it was a hit and now it's the most asked for Italian stromboli I make.

Perfect for holidays, gameday, any family gathering or something to bring along when invited out to a friend's dinner party.

Appetizer or meal, this can be your next new favorite style pizza roll!

Mom would make her homemade pizza dough and would always come up with brilliant ideas to make something new with the same dough.

We just loved her focaccia, broccoli rabe roll, fried dough and anything she created was heavenly.

Our favorite meat stromboli all wrapped up in one delicious homemade pizza rolled dough!

This stromboli is filled with the same meats and cheeses you would find in an Antipasto Salad.

Psst, they will think it's a healthy alternative but we do know better right?

Well, it's my contribution to getting something green in their systems and some real Italian Style Cuisine!

Sunday Appetizer



Growing up in an all Italian household, mom got creative, we had all kinds of filled rolls from cheeses, sausage, pepperoni, spinach, and even bologna and caponata.


She would use up leftovers and make a delicious new meal especially with meatballs and sauce leftovers.


We loved our meatballs on Sunday morning, it was a tradition along with many other appetizers before our 2 pm dinner.


Sunday was Traditional Sunday Sauce and Macaroni day!


Then Thursday we sometimes had the leftovers all rolled into this kind of roll.

Stromboli, Pizza Rolls, and More



Mom was famous for her sausage rolls.


She actually ran her own deli through our house before I was born and sold many of her homemade sausage and pepper rolls.


I loved her pizza dough and the versatile creative meals she came up with.


Mom was a genius to me in the kitchen and a fabulous cook.

Tips


  • Always raise the dough for at least 1 hour after filling
  • Bake in a preheated oven
  • Brushing with egg yolks makes a nice sheen on top
  • Always put seam side down so it doesn't burst
  • Never use frozen bread dough (it usually has milk in the recipe and not good for this recipe) always fresh Italian dough

Ingredients You Will Need for this Antipasto Stromboli Roll

Filling suggestions:


  • Hot capicola
  • Sliced plum tomato
  • Boiled Escarole drained and blotted dry or use, arugula, sauteed spinach or other greens you prefer cooked
  • Thinly sliced peppers any kinds you like
  • Provolone sharp slices
  • Shredded mozzarella
  • Genoa Salami'
  • Mortadella
  • Tuna
  • Optional: sliced black or green olives, prosciutto, chopped artichoke hearts, spinach, oil canned tuna in place of meat, any kind of cheeses, sliced eggplant, zucchini shredded

You can make Mom's homemade dough recipe or buy store-bought.


SPOILER ALERT! As I said in the tips, just don't use the pizza bread doughs you find in the supermarket that are frozen. They're more like sweet dough, become wet and soggy and you need Italian bread dough to make this great!

This is a rolled pizza dough that is filled with Antipasto filling which is an Italian salad. There is greens, meat, cheese all in a soft homemade pizza dough with a crispy outside crust baked all into one sandwich.

ingredients:

  • When Making the roll, I chop the meat using  2 cups of assorted and around 1 cup of shredded cheese. Additions you add are placed on top just around 1 tablespoon of each until the dough is filled. Always squeeze out any water from your vegetables you used IE escarole boiled. Spinach can be used raw but rinsed.
  • Here are the filling suggestions:
  • Hot capicola
  • Sliced plum tomato
  • Boiled Escarole drained and blotted dry or use, arugula, raw or  sauteed spinach or other greens you prefer cooked
  • Thinly sliced peppers
  • Provolone sharp slices
  • Shredded mozzarella or any blended cheese
  • Grated Cheese Pecorino Romano
  • Genoa Salami'
  • Any kinds of sweet or hot peppers
  • Olive Oil
  • Minced Garlic
  • Dried Oregano, basil, parsley, black pepper
  • Optional: sliced black or green olives, mortadella, prosciutto, chopped artichoke hearts, spinach, oil canned tuna in place of meat, any kind of cheeses, sliced eggplant, zucchini shredded, anchovies, boiled egg chopped

instructions:

How to cook Antipasto Roll

  1. Roll out 1 pound of dough 1/4 inch thick. 
  2. Add a little or lot of everything you like in the middle of the dough adding the shredded cheese, grated cheese and any spice you like on top.
  3. Roll the dough up and like a jelly roll. 
  4. Place seam down on an oiled cookie sheet or parchment paper, drizzle the top with olive oil sprinkle with grated cheese and minced or granulated garlic. 
  5. I also sprinkle the top with dried oregano, basil parsley and pepper, this is optional.
  6. Bake at 400-degree hot oven for 40 minutes or until browned on top.
