My favorites are green beans, brussels sprouts, tomatoes, and zucchini.


I can fill up on roasted vegetables with fewer calories and they're a perfect side dish all summer long.

Some Ingredients You May Need



  • Assorted sliced up cleaned vegetables
  • Cooking spray oil
  • granulated garlic
  • minced garlic
  • Parmesan cheese grated
  • Italian flavored bread crumbs
  • Dried Italian seasoning or fresh when available
  • salt, pepper, and cayenne to taste
  • Extra Virgin Olive oil

Eat Fresh When You Can



I stick to a healthy salad, vegetables, and beans for dinner that has proteins in them.


Summer is my favorite time of the year since I can go to the farmers market and get lots of fresh vegetables in season.

If You Have To Use Canned or Frozen?



I use frozen artichoke hearts when baby ones are not in season, as they are one of my favorite vegetables.


If I ever have to use canned vegetables, I rinse them off first to get all the salt off of them before baking and roasting.


I virtually never use anything but fresh and organic unless it's a rushed meal and I only have frozen or canned.

Eat More Vegetables in Winter Months



We tend to eat more potatoes in the winter months.


I prefer to cut up butternut squash, carrots, and even roasted asparagus.


Winter vegetables are plentiful with butternut or many or the squash family varieties.

What's Your Favorite?



I love roasted squash, any kind of orange or yellow squash are my favorite all year long.


We are lucky enough in Florida to buy fresh produce all year long.


I do, however, freeze butternut squash cubed and throw it on a cookie sheet with some butter, salt, pepper, and cinnamon.


You can roast any vegetables you like and change it up if you don't like cheese on them.

Some Tips and Great Spices To Use



Cinnamon and allspice are great additions in flavoring fall vegetables.


Another twist in flavor is soy sauce and hoisin sauce for an Asian flavor.


Then for a Mexican flair, try some chili powder and cumin delicious on all kinds of vegetable you roast!

Parmesan Roasted Vegetables

These area medley of vegetables roasted with herbs spiced and garlic Parmesan cheese.

ingredients:

  • Here are a few suggestions to use after all vegetables are washed and prepared by removing stems and cut up, choose your favorite fresh vegetables:
  • Red sliced cabbage chopped
  • artichoke hearts ( my favorite!) when fresh are available I do have to boil first just a note before baking them
  • brussels sprouts fresh or frozen cleaned
  • yellow squash or any kind of squash
  • sweet potatoes (fewer carbs than regular) or use Russet or Yukon gold if you like white potatoes better
  • sliced eggplant
  • sliced tomatoes
  • sliced peppers
  • green beans fresh
  • asparagus
  • fresh spinach leaves or other greens
  • mushrooms
  • broccoli
  • okra
  • onions
  • celery
  • zucchini
  • cubed butternut squash
  • baby carrots whole or sliced
  • cleaned and sliced fresh red or yellow beets
  • cauliflower (orange or purple is perfect for summer or holiday)
  • Any other vegetables you love
  • Seasoning:
  • Cooking spray oil
  • granulated garlic
  • minced garlic 1 teaspoon
  • Parmesan cheese grated around 1/4 cup or more depending on how many vegetables on a cookie sheet
  • Italian flavored bread crumbs to sprinkle evenly on top
  • Dried Italian seasoning
  • salt, pepper, and cayenne to taste
  • Extra Virgin Olive oil

instructions:

How to cook Parmesan Roasted Vegetables

  1. Line an extra large cookie sheet with parchment paper. 
  2. Wash, dry and slice all vegetables you are using.
  3. Place all the vegetables you prefer on the cookie sheet (if using eggplant  and tomatoes, place slices of tomatoes on eggplant then generously sprinkle cheese on top and breadcrumbs.) 
  4. Spray the entire tops with cooking spray or brush with extra virgin olive oil just a small amount.
  5. Sprinkle evenly with dried herbs,  spices then cheese on the all the vegetable, ending with bread crumbs mixed with minced garlic. 
  6. Drizzle a bit more with evoo. or cooking spray over the breadcrumbs. 
  7. Preheat oven to 400 degrees.
  8. Roast in a preheated oven of 400 degrees until the vegetables are cooked to your liking. We like ours soft so around 45 minutes.
  9. NOTES:
  10. Check the sugar content of the vegetables you are using online for diabetic needs.
