If you love the flavors of tacos, enchiladas, and cheesy Mexican comfort food, this Mexican Tortilla Casserole is one recipe you’ll want to keep in your regular dinner rotation.

This all-in-one pan meal is layered with tortilla, chicken, cheese, and beans, corn, tomatoes, sauces, and when you slice it, the melted cheese is blended all in one delicious bite!

This can be made ahead of time and actually tastes better the next day, and leftovers are great!

It also freezes well for another meal so I often separate it into several containers for the kids for another quick meal.

We usually celebrate Cinco de Mayo with this American Mexican meal and many other Mexican styles recipes.
