If you're a hurried baker like me but little mini apple scones are perfect any time of the day and easy to make!.

Scones with apples and cinnamon all with the big flavor and texture of scones but without the fuss of rolling and cutting.

Add them to this mini muffin pan for a big scone taste!

Often the larger scones are too much for me and these are perfect with a good cup of tea or coffee.


Not only are these simple these take out the step of rolling, cutting, and still have a tender little bundle of yum!

I love a buttery scone for breakfast.


I am often so darn busy to roll it out cut bake and then for me they're too big to eat it all.


I like a little something with my coffee and these are the perfect solution for folks on the go.


They are the exact recipe I love for apple scones, but I dusted them with powdered sugar instead of a drizzle of frosting.


They are a perfect take with me to work or on the way to drop off the kids to school treat when you're in a big hurry!

Ingredients You Will Need

  • flour
  • white sugar or brown
  • heavy cream or whole milk
  • baking powder
  • salt
  • egg
  • chopped apples
  • softened butter
  • cinnamon
  • vanilla

Other Additions or Substitutions

  1. chopped or diced fruits strawberry, blueberries, raspberries, peaches, cherries, pear, pineapple, mango, fig
  2. dried fruits,
  3. nuts
  4. coconut
  5. mini chocolate chips

Tips

  1. for a tender pastry do not overwork the batter
  2. for best results in flavor use heavy cream
  3. any extracts can be used vanilla, orange, lemon, maple, almond anisette or whatever else you love
  4. do not over bake
  5. spread with butter jam or jelly while warm
  6. these are perfect served with tea or another hot beverage you prefer

A Great Fall Treat



When apple season is upon us, I get right to the farmers market the first chance I get, to buy a huge bag.


I love McIntosh apples or any tart apple that is for baking in season.


When I start baking, I like to make two batches one for now and one to freeze, yes they freeze great!


Just remember you can use any fruits for these mini scones!


Terrific to serve unexpected guests with tea or coffee.


These Mini Apple Scone Muffins are the perfect breakfast, brunch, or just a little snack when you don't want something overly sweet.


They are perfect for road trips, kids on the go for school, and just a great little snack!





Mini Apple Scones Muffins

These are a mini version of a large scone with apples, they can be versatile and made with any fruits with this basic recipe baked in a muffin tin!

Ingredients

  • 2 cups flour
  • 1/2 cup white sugar or brown
  • 1/2 cup heavy cream or whole milk
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 egg
  • 1 cup chopped apples
  • 1/2 cup softened butter
  • 1 1/4 teaspoons cinnamon
  • 1 teaspoon vanilla
  • Optional: heavy cream and sugar mixed to brush to tops before baking

Instructions

  1. Preheat oven to 400 degrees.
  2. Spray mini muffin pan with oil spray.
  3. Beat the sugar and butter together till light. Add the cream or milk, vanilla, egg and fold in the dry to this mixture until blended adding the apples last.
  4. Drop around 2 tablespoons in each muffin cup and bake at 400 degrees for around 20 to 25 minutes or till starting to get brown around the edges.
  5. Cool then either top with either powdered sugar, or drizzle with frosting.
  6. Optional Frosting:
  7. You can mix powdered sugar with a little bit of water at a time a dab of butter and stir to make a thin frosting on top.
  8. Then sprinkle with cinnamon.
  9. Tips:
  10. for a tender pastry do not overwork the dough

  14. spread with butter jam or jelly while warm

  16. freeze a double batch on a cookie sheet lined with wax paper and just place them in a freezer bag for a quick snack anytime
  17. in a hurry? use canned pie filling and dice the apples just add some to the top of the batter
