Mom made so many recipes with fresh cherries, and another favorite was the best ever Cherry Fresh Pie.
Usually, fresh Bing cherries don't last a day in our home, so we have to buy more and use them up before anyone else finds them in the fridge.
I have to buy twice the amount just to make these! They sure are worth waking up to.

- kitchen towel, knife, cutting board, bowl, or freezer bag to store them in, a paring knife, and a cherry pitter is the easiest version!
- Peak season cherries are full of juice, and they can stain. Use an old kitchen towel tucked in like a bib, or wear old clothes.
- Method 1: Place the cherry on a cutting board. Use the side of a knife to press on the cherry until it gives way. Pry the fruit apart until you see the pit and discard it.
- Method 2: Take a paring knife and rock it around the entire cherry, as you would an avocado or peach. Twist the fruit into 2 halves to see the pit and take it out.

These are the perfect bing cherry muffins I make all year round just by freezing some of the seasonal produce when on sale! Check out these easy moist muffins you can make to keep summer alive!

Ingredients
- 1/2 cup butter, melted and slightly cooled
- 1 cup granulated sugar
- 2 large eggs
- 1 1/2 cups whole milk
- 2 teaspoons vanilla extract or almond
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- pinch of salt
- 3 cups AP flour
- 1 cup fresh pitted sliced Bing cherries, blotted dry with paper towels
Instructions
- Preheat the oven to 400 degrees.
- Prepare a 12-cup buttered muffin pan or with cooking oil spray(plus 6 more muffins or pour into a small 6-inch loaf pan with remaining batter.
- In a large mixing bowl, stir the butter with sugar for around 1 minute.
- Add the egg and blend evenly together.
- Sift all the above dry ingredients together in s clean bowl.
- Gently fold the dry ingredients with the milk alternately to the butter mixture
- Fold in the cherries just until blended (batter will still be lumpy).
- Do not overmix batter.
- Pour the mixture into prepared tins.
- Bake 20 -25 minutes or until the center is dry (you can also use the toothpick method).
