Grilled Bacon Wrapped Scallops

Bacon-wrapped scallops are a delicious appetizer or can be a whole meal in itself!

Ingredients

  • 6 slices of maple or applewood bacon, slightly cooked around 15 minutes (air fried, baked, or pan fried) and cooled
  • 12 extra-large scallops
  • 1/4 cup melted butter
  • 1 tablespoon of mixed Italian herbs (parsley, oregano, basil)
  • 1/2 teaspoon granulated garlic powder
  • 1/4 teaspoon chili powder
  • salt, pepper, and cayenne pepper to taste
  • Optional Garnish: fresh Dill Weed

Instructions

  1. Preheat a gas grill or the oven to 400 degrees.
  2. Mix the butter with herbs, granulated garlic, salt, pepper and cayenne if using.
  3. Cut the bacon in smaller pieces to fit on top of each scallop.
  4. Oil spray foil and place on the grill, or use a flat sprayed cast iron griddle (or with grids)
  5. Add the scallops to the foil or pan.
  6. Brush with the butter mixture
  7. Grill these for around 4 to 5 minutes, turning once.
  8. Baste again or serve the remaining butter poured over them when cooked
  9. Note: These can also be baked in the oven at 400 degrees for 7 to 8 minutes.
  10. Air-fry for 4 to 5 minutes at 425 degrees.
  11. Pan-fried until the bacon is crisp, around 5 minutes.
  12. Garnish with fresh dill weed.
