Bing Cherry Loaf Recipe

You might remember recently I made a Blueberry Lemon Loaf recipe? Well if  not you can check that recipe out here by clicking this link. I decided since it was such a big hit to try it with Bing Dark Cherries. I had recently had a huge bag of them I could easily eat without even thinking about baking with them. I had to put some aside just to try making a cherry loaf since I am such a big fan of Bing Cherries. I promise you this won't disappoint all the cherry lovers out there, What a delicious cake this made, The loaf is dense like a quick bread but delicious and perfect with tea or coffee.

Bing Cherry Loaf Recipe

1 cup pitted bing fresh cherries sliced

1/3 cup softened butter
1 cup sugar
2 eggs
3 tablespoons lemon juice
1/2 cup milk
1 teaspoon baking powder
1 1/2 cups flour
1 tablespoon freshly grated orange or lemon peel
1/2 teaspoon salt

Glaze after Baking:
1/4 cup sugar
2 tablespoons lemon juice 
Mix together set aside

Heavily grease a loaf pan and I would also use non stick cooking spray and flour. 

Heat oven to 350 degrees
In large bowl using an electric mixer, beat the sugar, butter together for a few minutes. Add the milk, eggs, lemon juice till blended.
At a little at a time, add the flour, salt, baking powder and peel to this wet mixture until blended. Fold in the cherries.

Bake for 1 hour or until middle is firm using toothpick method.
Cool 3 or 4 minutes and invert onto cooling rack or wax paper before adding the lemon sugar glaze topping.


  1. You have 1/2 c milk in the recipe, but don't show how to add it? Can you please clarify?

    1. yes the wet ingredients is to be combined with the dry...its in the first part of the recipe

  2. The glaze seems to contain suage. I think you meant sugar.
