One of my favorite fruits of summer, is Bing Cherries. I can eat them everyday when in season. I love when they are a little overripe, then I make this delicious quick bread.
Bing Cherry loaf is a sweet, buttery cake like bread loaf that is perfect any time of the day. This loaf doesn't last long when I make it, I always make two.

The sweetness of the cherries and the tender texture smells fabulous while baking!

This fruit is only available a few weeks out of the year!





When these cherries are in season.




I buy several pounds, then cut them up, pit them and freeze them so I can make these loaves all year long!



The loaves also freeze well if you make several. This recipe also makes great muffins!




Just pour the batter in muffin cups, they're a perfect breakfast take with to work or traveling on trips.

Change it up!





Ok so you're not a cherry person? You can use any other fruits you like preferably with some kind of juice in it.




Peaches work well, any kind of berry, pineapple chopped and I have also used apricots!




If you really want to get creative try adding 1/2 cup of coconut, nuts or chocolate chips!

Bing Cherry Loaf Recipe

prep time: 10 minscook time: 45 minstotal time: 55 mins
Fresh Bing Cherries a summertime quick bread treat

ingredients:

1 cup pitted bing fresh cherries sliced
1/3 cup softened butter
1 cup sugar
2 eggs
3 tablespoons lemon juice
1/2 cup milk
1 teaspoon baking powder
1 1/2 cups flour
1 tablespoon freshly grated orange or lemon peel
1/2 teaspoon salt

Glaze after Baking:
1/4 cup sugar
2 tablespoons lemon juice 
Mix together set aside

instructions:

Heavily grease a loaf pan and I would also use non stick cooking spray and flour. 
Heat oven to 350 degrees
In large bowl using an electric mixer, beat the sugar, butter together for a few minutes. Add the milk, eggs, lemon juice till blended.
At a little at a time, add the flour, salt, baking powder and peel to this wet mixture until blended. Fold in the cherries.

Bake for 1 hour or until middle is firm using toothpick method.
Cool 3 or 4 minutes and invert onto cooling rack or wax paper before adding the lemon sugar glaze topping.

  1. You have 1/2 c milk in the recipe, but don't show how to add it? Can you please clarify?

    1. yes the wet ingredients is to be combined with the dry...its in the first part of the recipe

  13. Are bing cherries the same as sour cherries? I know these are available for short period of time. This recipe looks and sound fantastic.

    1. no bing are burgundy in color and super sweet. They are my favorite beside Rainier Cherries which are the yellow ones and I would use those also in this recipe.
