This is one of the juiciest birds I ever made is this Roasted Lemon and Herb Chicken will be a favorite in your meal planning.


The lemon, garlic, and herbs make an amazing flavored chicken you will make time and time again oh and really great if you have leftovers!


I just love the fact that the first meal will be fabulous with a roasted chicken and then the leftovers will be just as fabulous!


That's if you even have any.


Chicken salads, chicken add to soups, and chicken sandwiches with lettuce and tomato were just a few things mom would give us for school lunches with leftovers.


Nothing went to waste and leftover chicken with a little mayonnaise in it on hard crusted Italian bread was always welcome.


This tasty chicken always went a long long way.


She even added the leftover chicken to a Tomato sauce and put it over pasta!


Everything mom made was a banquet no matter what she did with leftovers.








Leftover Chicken and Salad



I often use my leftovers on top of a leafy green salad or in a taco salad.


I have also used this recipe to make a whole chicken and use the same ingredients.


The only difference would be to stuff the cavity with fresh oranges instead of lemons.




Suggestions for Leftover

  • make chicken salad or Waldorf salad
  • add to chicken chili
  • make a chicken club sandwich
  • add the chicken shredded with pasta or rice using tomato sauce or alfredo
  • top a chef salad with sliced chicken
  • add chicken gravy to leftover chicken over mashed potatoes

Lemon and Herb chicken is a juicy chicken filled with lemon and herbs flavors in a roasting pan with fresh lemon on it and fork tender


Ingredients You Will Need Roasted Lemon and Herb Chicken

(recipe card has measurements and instructions below)

  • chicken
  • lemons plus 1 sliced for garnish
  • oregano, parsley, and basil all dried
  • granulated garlic
  • salt and pepper to taste
  • butter softened
  • cloves of garlic cut in half
  • fresh basil leaves
  • sprig fresh rosemary
  • Pinot Grigio wine or whatever dry white wine you like
  • optional paprika on top

This plain lemon chicken is easily adaptable if you want more or fewer seasonings to add it.


Fresh rosemary, dried herbs or any kind and even if you would like to stuff the cavity, the chicken is a wonderful healthy meal baked.

This is a delicious roasted chicken that is fantastic for dinner and perfects if there are any leftovers to make so many other economical meals.

ingredients:

  • 1 chicken 3 to 4 pounds
  • 2 fresh lemons plus 1 sliced for garnish
  • 1/2 teaspoon each: oregano, parsand ley, basil all dried
  • 1 teaspoon granulated garlic
  • salt and pepper to taste
  • 4 tablespoons butter softened plus 3 tablespoons oil
  • 6 cloves of garlic cut in half 
  • fresh basil leaves
  • 1 sof prig fresh rosemary
  • 1/2 cup Pinot Grigio wine or whatever white wine you like
  • optional paprika on top

instructions:

How to cook Roasted Lemon and Herb Chicken

  1. In a small bowl, grate the zest from 1 lemon and mix it with 2 teaspoons of salt and pepper. 
  2. Add the lemon zest mixture to the butter and stir with a fork adding all the ingredients until evenly mixed. Set aside. Salt the cavity of the chicken and add 3 cloves of garlic inside. 
  3. Slice the lemons. Tie the legs tightly together. 
  4. Apply the lemon and butter mixture to the chicken. 
  5. Rub approximately 1/2 of the butter under the skin of the chicken, spreading it out evenly. 
  6. After rubbing the butter under the skin, drizzle with olive oil. 
  7. Place the remaining 2 garlic cloves in different places under the skin (make small slits and stuff them with garlic).
  8. Use the remaining lemon butter mixture on the chicken cavity. 
  9. Set in roasting pan, pour 1/2 cup of white wine on the bottom of the pan. 
  10. Bake at 350 tented with foil for 2 hours or until browned, (if wine evaporates, add 1/4 cup water extra to keep moist). 
  11. Garnish with more lemon slices and fresh Italian basil and rosemary sprig. ( sprinkle with paprika if using)
