Easy Steps

  1. Prepare an 8-cup casserole dish with butter or oil cooking spray
  2. Preheat the oven to 330 degrees
  3. You need two mixing bowls one for dry and one for wet ingredients
  4. After mixing them in two separate bowls combine them until just blended
  5. Pour this mixture into the prepared dish
  6. Bake and enjoy!

  1. Mix both in separate bowls and whisk the ingredients first before blending together

Homemade Corn Casserole

Homemade Corn Casserole

Made from scratch corn casserole with the combination of both regular and cream corn baked with a cornmeal creamy texture.
Prep time: 10 MinCook time: 55 MinTotal time: 1 H & 5 M

Ingredients

  • In a mixing bowl add and whisk together:
  • 2/3 cup all-purpose flour
  • 1/2 cup yellow cornmeal
  • 1/4 cup granulated sugar
  • 1 tablespoon of baking powder
  • 1/2 teaspoon granulated garlic powder
  • 1 tablespoon chopped flat-leaf Italian parsley
  • In another separate mixing bowl add these wet ingredients:
  • 1 - 14 ounces of each can of creamed corn and the exact size of regular kernel canned corn with the liquids
  • 2 eggs
  • 1 stick of butter melted but not hot (1/2 cup)
  • 1 cup sour cream
  • 2 tablespoons olive oil
  • Option: for heat add 1/4 teaspoon of red pepper flakes
  • Optional: 1 cup shredded sharp cheddar (see notes at the end)

Instructions

  1. Preheat the oven to 330 degrees and grease a baking dish (around 8 cups in size)
  2. Whisk your dry ingredients together.
  3. Add all the wet ingredients to another bowl and whisk until combined.
  4. Blend the two bowl ingredients together evenly.
  5. Pour this combined mixture into the prepared greased baking pan.
  6. Bake in the preheated oven for around 55 minutes to an hour.
  7. Note: if you are a cheese lover add 1 cup of sharp cheddar on top 7 minutes before it's done baking.
