These can even be made in advance and just reheated so no problem making them two days before a big dinner is planned.

These twice-baked potatoes are super simple to make and if you want an assortment they all can be made in around 35 minutes.

The sweet potatoes can be changed to different toppings just get creative and of course, if you love just regular white spuds you are welcome to make our original recipe.

Twice Baked Sweet Potato Recipes

Here are three favorite toppings for twice-baked sweet potatoes. These are done in the microwave then broiled or baked for the topping!

Ingredients

  • 6 medium sweet potatoes baked slow cooker method or microwaved
  • 1/4  cup maple syrup 
  • 4 tablespoons butter room temperature 
  • 2 oz whipped cream cheese 
  • 2 teaspoons vanilla 
  • 1 teaspoon cinnamon 
  • Optional Toppings: Pecan Streusel, Marshmallow or Coconut

Instructions

  1. Cook the potatoes:
  2. Microwave the sweet potatoes until soft around 7 minutes or bake them until soft. (These can also be done in a slow cooker on low for 8 hours) or boil them for around 20 minutes until tender.
  3. Cool the potatoes,
  4. Scoop out the inside and place in a bowl with 1/4 cup maple syrup,4 tablespoons butter room temperature, 2 oz whipped cream cheese, 2 teaspoons vanilla 1 teaspoon cinnamon.
  5. Mix evenly together and fill the sweet potato jackets.
  6. Top with your favorite toppings below:
  7. Pecan Streusel: Mix 6 tablespoons of butter with 1/2 cup finely chopped pecans, 3 tablespoons of flour, and 1/2 teaspoon cinnamon.
  8. Note: for those with nut allergies use sunflower or pumpkin seeds toasted
  9. Marshmallow Topping: top the potato with mini marshmallows or jumbo marshmallows cut in half ( optional for the holiday we also add some red and green maraschino chopped cherries).
  10. Coconut topping: 1/4 cup brown sugar, 1/4 cup pecans chopped, 1/4 cup coconut, 1 1/2 tablespoons flour, 1/1/2 tablespoons melted butter.
  11. Bake for 10 minutes at 375 degrees or broil for an additional 1 to 2 minutes or until lightly browned.
  12. For coconut or marshmallows, bake for 7 to 10 minutes, watching closely until browned and melted or 1 minute on the high broiler until toasted.
  13. Note this is not a topping but to be mixed in with cooked mashed sweet potatoes
  14. Savory: add 1/4 cup each sour cream, butter, milk, add 1 teaspoon granulated garlic, salt, pepper to taste, 1 teaspoon chopped parsley, and 3 tablespoons of Parmesan cheese. Optional: add 1/2 cup sauteed mushrooms, spinach, escarole, or swiss chard.
