I make a dish with and without Amaretto and praline topping, the one for the kids has the almond extracts and marshmallows on top.
Tips
- Boil fresh potatoes first in a little saltwater, cool slightly, and add to the food processor to puree
- Canned sweet potatoes are perfectly fine to use you just need to drain them first they are already soft enough to puree
- Toasted pumpkin seeds can be substituted for pecans for those with nut allergies
- Use a good brand of Amaretto for best results, add more or less to your taste
- There are two alternative toppings, one with marshmallow and the other with a praline topping choose whichever one you like in the recipe below

Ingredients You Will Need for Amaretto Sweet Potato Casserole
- sweet potatoes pureed or mashed in food processor
- brown sugar
- evaporated milk or regular whole milk
- cinnamon
- Amaretto or Frangelico
- vanilla
- butter softened
- eggs
- finely shredded coconut (optional)
- Garnish topping
- butter flour, nuts, brown sugar, mini marshmallows, maraschino cherries

The perfect sweet potatoes baked and still chunky with either a marshmallow topping of the pecan praline alternative. The potatoes have a secret ingredient!
ingredients:
- 3 cups sweet potatoes pureed or mashed in a food processor (use either fresh boiled sweet potatoes or canned and drained)
- 1/2 cup brown sugar
- 1/8 cup evaporated milk or regular whole milk
- 1/2 teaspoon cinnamon
- 1/4 cup Amaretto or Frangelico (or 1 1/2 teaspoons of almond extract)
- 1 teaspoons vanilla
- 1/3 cup butter softened
- 2 eggs
- 1 cup finely shredded coconut (optional)
instructions:
How to cook Amaretto Sweet Potatoes
- Mix all ingredients together bake for 20 minutes at 350 degrees in a greased casserole dish.
- Praline Topping:
- Remove from oven add topping recipe below and broil on the lowest rack just till set....about 3 to 4 minutes on high heat.
- 1/2 cup butter
- 1/2 cup flour
- 1 cup pecans
- 3/4 cup brown sugar mix all together, add on top of potatoes.
- Alternative instead of pecan topping:
- Top with mini marshmallows or just leave the top plain, it's up to you. then broil for 3 minutes or till marshmallows are brown and topping is set
- you need to watch this one so that it doesn't burn.

ReplyDeleteFor the topping, for the butter, is it suppose to be cold or softened.
@Jackie, I usually do soften it in the microwave no more than 10 seconds, you dont want it to be a paste.
