Spring rolls are a large variety of filled, rolled appetizers or dim sum found in many Asian cuisines.



I started out very unsure what I was doing to roll these, but after a few times, they got super easy to do.



There are so many creative unique fillings you can make with these rolls since they are made with raw vegetables and just about any cooked meats.



After these are made and rolled they are ready to eat and you can also make our easy peanut or other dipping sauce varieties that make every bite delicious to dip these in.



We just love making these healthy rolls and they are perfect to take along to the beach in a cooler or picnic during the warmer months.

Spring Roll Styles



There are several versions of spring rolls on the net, some even fried, different Asian style and many versions with assorted fillings and seasonings.



I like them fresh not fried and we use fresh vegetables and cooked meats keeping them simple and low calorie plus I like my vegetables chopped fine not left whole.



Fresh spring rolls are very healthy, especially if you pack them full of raw veggies and cooked meats just check out my list below and pick out your favorites to use.



Also, spring roll wrappers are low in fat and calories, each one is around 30 calories so that's another bonus.



Keep in mind that anything can go into a spring roll, it's going to be your own creation and this is just a basic guideline of what we like in ours.

Tips for Making Spring Rolls

  • Lay a wrapper on a clean cutting board. 
  • Scoop 1/4 cup filling on wrapper and form it into a log shape folding aways from you then halfway through, fold two sides in. Continue rolling until you reached the end. Secure edge by dampening with water
  • Only moisten one wrapper at a time and work fast, it takes seconds to moisten in water or they will be too sticky to work with
  • These are best eaten the same day you make them
  • All meats or seafood must be cooked first
  • All vegetables are raw and shredded, chopped fine, or can be done in a food processor
  • Rice paper tip: these can be purchased online or in any Asian market. For Using Rice Paper Tip: For best results, soften the rice paper in water prior to use. Be careful not to soak them through. 
    Lay them out on a flat surface and add fresh ingredients to the center. Make sure to leave enough room around the edges so that you can roll them up. Fold over one side to cover the filling. Fold over the other side and finish rolling. Enjoy!

Chopping Fresh Vegetables




Anything vegetables I use for the filling are put into a food processor, just not the meats.



Personally, I find the flavors meld together better and just easier to stuff and eat.



If you're in a hurry you can substitute a bag of coleslaw already chopped in the supermarket instead of using fresh cabbage.

Suggestions for Filling Spring Rolls

(all meats must be cooked first)
  • cabbage
  • carrots
  • onion of any kind
  • chopped artichoke hearts
  • garlic
  • mushrooms
  • tomatoes
  • shredded zucchini
  • grated cauliflower
  • radishes
  • chopped avocado
  • scallions
  • peppers of any kind hot or sweet
  • fresh herbs, dill, mint, cilantro, parsley, basil
  • stir fry bagged mixes
  • water chestnuts
  • any cooked meats: roasted pork, beef, venison, chicken, ground beef, ground turkey, ground pork, leftover chopped steak, chopped ham
  • cooked shrimp, shredded salmon, Mahi, tuna, scallops, crab, lobster

Ingredients You May Need

  1. 8 or 12-inch rice paper
  2. refer above for suggestions for vegetables and meats to use
  3. assorted vegetables
  4. lettuce of any kind
  5. meat or seafood
  6. optional:  14 kinds of dipping sauce recipes

These are healthy rolled rice paper with vegetables, meat, and whatever your heart desires in them. Low calorie, healthy, and made in minutes with my step-by-step instructions and tips.

Ingredients

  • Seafood Suggestions: Seafood must be cooked first it can be blackened, smoked, grilled, canned as long as it is cooked
  • six 8 or 12 inch Rice Paper Wrappers
  • 8 ounces of fish cooked fresh or canned listed below:
  • salmon, tuna, shrimp, lobster, crab, mahi-mahi, chopped fine in small pieces
  • 1 medium carrot shredded or finely chopped
  • 1 cucumber chopped fine
  • 1 cup chopped fine or shredded cabbage, or chopped romaine, butter lettuce, arugula, or spinach
  • Optional: 1 cup vermicelli rice noodles cooked and drained
  • Other Vegetable Suggestions:
  • (use the same amount of vegetables in the recipe above or a combination of them in the same amounts)
  • chopped artichoke hearts
  • garlic
  • mushrooms
  • tomatoes
  • shredded zucchini
  • grated cauliflower
  • radishes
  • chopped avocado
  • scallions
  • stir fry julienned bagged produce
  • snow peas
  • English peas
  • fresh chopped dill, basil, parsley, or mint
  • Meat Ingredients Suggestions:
  • 8 ounces of any cooked meats (which can be leftovers):
  • roasted pork, beef,
  • chicken breast
  • bacon
  • ground beef,
  • ground turkey
  • ground pork
  • leftover chopped steak
  • chopped ham
  • lamb
  • venison
  • Peanut Sauce:
  • 4 heaping tablespoons unsalted natural peanut butter
  • 4 tablespoons seasoned rice vinegar
  • 2 tablespoons soy sauce 
  • 1/2  teaspoon sesame oil or olive oil
  • pinch of ground ginger
  • 1 teaspoon minced garlic
  • 1 teaspoon honey
  • Optional: finely chopped peanuts, black sesame seeds or sunflower seeds,
  • Whip all the ingredients for the peanut sauce in a blender or food processor until creamy and smooth and set this aside. Sprinkle the nuts on top of the spring rolls is using.

Instructions

  1. Cook any meats or seafood you decided to use the way you like them or use canned meats, leftover meat, etc.
  2. Place all the vegetables you are using either in a food processor or chop into small pieces by hand.
  3. I mix the meat in with the vegetables and season it with some fresh herbs, garlic a little soy sauce not much all to taste.
  4. Using one rice paper wrapper at a time, dip in warm water for 5 to 7 seconds. ( do not make it get too soft or it will fall apart) It should just be soft enough to bend.
  5. Place it on a cutting board.
  6. Spread around 1/4 cup onto the center with vegetables, meat, (and rice noodles if using, I omitted them for fewer calories.)
  7. Fold the bottom side of the wrapped up and cover all the ingredients.
  8. Tuck both sides of the wrapper, using a little water on the edges if needed to seal.
  9. Roll it up.
  10. Place the roll on a plate.
  11. Serve this with peanut dipping sauce if desired or just soy sauce and optional nuts or seeds.
  12. Note: for added flavor to the vegetable mixture, you can add a few teaspoons of soy sauce or hoisin sauce to the chopped mixture.
  13. For Using Rice Paper Tip: For best results, soften the rice paper in water prior to use. Be careful not to soak them through. 
  14. Lay them out on a flat surface and add fresh ingredients to the center. Make sure to leave enough room around the edges so that you can roll them up. Fold over one side to cover the filling. 
  15. Fold over the other side and finish rolling. Enjoy!
