Banana Cake with Coffee Frosting

Friday, June 11, 2021
This Banana Cake is not only super moist it's soft, light, and not dense like banana bread and the best part is the coffee-flavored icing on top.

Of course, for all my cream cheese frosting lovers, that will also be the alternative recipe in the card at the bottom I would never just it completely from the classic.

I remember mom making a banana cake and always adding leftover coffee to the frosting it was the craze back in the 1960s so this vintage recipe can be adapted to a current more modern frosting.

Mom always used simple pantry ingredients most of the time to get rid of brown bananas (which by the way make the sweetest most delicious cakes) and even milk about to sour.

We even loved using this batter for cupcakes and frosted them with coffee frosting and sprinkled walnuts on top, boy I miss all the sweet treats she made growing up.

Mom made everything from scratch and nothing especially brown bananas ever went to waste we're always created into something yummy like this marvelous soft banana cake with creamy frosting.

You may also try some of her other classic cake recipes we love from the 1960s she made like Vintage Chocolate-Mayonnaise Cake, Spanish Bar, Sour Cream Coffee Cake, and one other favorite Hot Milk Cake.

Old Fashioned Vintage Cakes

Baking from scratch is super easy, especially using simple pantry ingredients like in this recipe.

We love using bananas that are very overripe, they are perfect for this cake or even used in Grandma's Grandma's Baked Banana Bread Pudding recipe.

I've tried several banana cake recipes and always come back to this one with sour cream, it's really perfect in texture and not dry at all.

If you've been searching for a perfect banana cake batter, this is it and can be made into squares, cakes, or cupcakes it's so easy and versatile.

Wonderful Classic Cake Recipes

Of course, if you're not a banana fan check out the other fruit substitutions and additions in the recipe to add, they are all terrific options.

The cake or cupcakes freeze well, just place them on a cookie sheet, freeze them solid and place them in freezer bags.

If you're making muffins instead use a muffin pan without liners and always put the fruits on top not folded in.
