This Banana Cake is not only super moist it's soft, light and not dense like a banana bread and the best part is the coffee-flavored icing on top.


Of course, for all my cream cheese frosting lovers, that will also be the alternative recipe in the card at the bottom I would never just it completely from the classic.


I remember mom making a banana cake and always added leftover coffee to the frosting it was the craze back in the 1960s so this vintage recipe can be adapted to a current more modern frosting.


Mom always used simple pantry ingredients most of the time to get rid of brown bananas (which by the way makes the sweetest most delicious cakes) and even milk about to sour.


We even loved using this batter for cupcakes and frosted them with the coffee frosting and sprinkled walnuts on top, boy do I miss all the sweet treats she made growing up.


Mom made everything from scratch and nothing especially brown bananas ever went to waste and we're always created into something yummy like this marvelous soft banana cake with creamy frosting.

Old Fashioned Vintage Cakes



Baking from scratch is super easy, especially using simple pantry ingredients like in this recipe.


We love using bananas that are very overripe, they are perfect for this cake or even using in Grandma's Grandma's Baked Banana Bread Pudding recipe.

I've tried several banana cake recipes and always come back to this one with sour cream, it's really perfect in texture and not dry at all.


If you've been searching for a perfect banana cake batter, this is it and can be made into squares, cakes, or cupcakes it's so easy and versatile.

  • flour
  • baking soda
  • vanilla
  • egg
  • sugar
  • butter
  • sour cream
  • banana
  • salt

Tips

  • use parchment paper to line pans for easier cleanup and removal
  • the cake can be baked in two pans for layering, loave style, cupcakes or in a spring pan
  • use the toothpick method in the center to make sure it's finished baking
  • cream cheese frosting can be made in place of coffee frosting
  • recipe can be doubled
  • always use very overripe bananas for best results
  • use butter, not margarine
  • the cake is great served just dusted with powdered sugar or with whipped cream
  • add some coconut and pecans to the bottom before baking
  • add around 1 cup of chocolate chips(shown below), peanut butter chips, or berries to the batter before baking
  • frost with chocolate ganache instead of coffee or cream cheese frosting

The cake or cupcakes freeze well, just place them on a cookie sheet, freeze solid and place in freezer bags.

This is a vintage made from scratch moist banana cake made with sour cream with coffee fluffy frosting on top.

Ingredients

  • Banana Cake Ingredients:
  • 2 cups of all-purpose flour 
  • 2 teaspoons baking soda 
  • 1 teaspoon pure vanilla extract, lemon or almond extract
  • 2 large eggs
  • 1 cup of white granulated sugar 
  • 1/2 cup of butter 
  • 1 cup of sour cream 
  • 1 1/2 cups of overly ripe bananas (the darker the better usually 3 medium will be enough)
  • 1/2 teaspoon salt
  • Optional Garnish: coffee frosting, cream cheese frosting, powdered sugar or whipped cream with slices of fresh banana on top or another fruit
  • Coffee Frosting Ingredients:
  • 2 1/2 cups of powdered sugar
  • 1/3 cup softened butter
  • 2 teaspoons of instant coffee (I used espresso)
  • 3 tablespoons or more of milk, cream or water 

Instructions

  1. Preheat the oven to 350 degrees.
  2. Prepare the pan your using grease or line the pan with parchment paper
  3. In a large mixing bowl cream butter and sugar until light and fluffy.
  4. Add eggs, one at a time, beating well after each addition then the vanilla.
  5. Stir in the flour, baking soda and salt to to creamed mixture adding the bananas and sour cream, mixing evenly to combine.
  6. Pour into the prepared pan your using and see below for baking times.
  7. Baking Times:
  8. For squares use a brownie pan (30 to 35 minutes baking time
  9. For cupcakes (25 to 30 minutes)
  10. For 13 x 9 cake, springform or loaf cake pans 35 to 45 minutes
  11. Note: always using the toothpick method for the middle.
  12. Cool cake before frosting completely.
  13. Coffee Frosting:
  14. Add the instant coffee to the milk to dissolve.
  15. In a medium sized bowl beat the softened butter with the powdered sugar adding the coffee milk mixture until smooth and fluffy.
  16. Cream Cheese Frosting:
  17. 3 cups whipping cream
  18. 4 ounces softened cream cheese
  19. 1 cup powdered sugar
  20. 4 teaspoons milk
  21. Add the cream cheese to a mixing bowl and beat using a high powered electric mixer, whip just till blended. 
  22. Add the cream and keeping beating on high until adding the powdered sugar until soft peaks are formed. 
  23. Frost cooled cakes, keep cake refrigerated.
