Ingredients
- 2 pounds russet or Yukon gold potatoes, peeled and cut into chunks (or boil with skins on and remove after cooking)
- 4 tablespoons unsalted butter, softened
- 1/2 cup heavy cream (warm)
- 3 large egg yolks
- 1/2 teaspoon granulated garlic powder
- 1 teaspoon chopped fresh flat-leaf Italian parsley
- 1/4 teaspoon nutmeg (optional, classic French touch)
- salt and freshly ground black pepper, to taste
- 1 egg yolk + 1 teaspoon water (for egg wash, topping before baking)
Instructions
- Preheat oven to 425 degrees. Line a baking sheet with parchment paper and set aside.
- In a large pot of salted cold water, boil the potatoes (peeled or unpeeled) covered with a lid.
- Simmer in a low boil for around 25 minutes or until the fork tines go through them easily.
- Remove skins if cooked with them on after they cool slightly.
- Drain and, while still warm, use an emulsifier or electric mixer to whip them until smooth, and no lumps appear.
- Place back into the pot on medium heat to remove any moisture and simmer for 2 to 3 minutes.
- Add and beat in the butter with heavy cream until fluffy.
- Beat in the egg yolks one at a time.
- Season with salt, pepper, garlic, and nutmeg if using.
- Place the potato mixture in a piping bag fitted with a large star tip.
- Pipe swirls or rosettes (about 3 to 4 inches) onto parchment paper-lined baking sheet.
- Lightly brush the swirls with egg wash for extra golden color.
- Bake in a preheated oven at 425 degrees for 20 minutes, or until golden brown on the edges.
