Best Cheesy Taco Pie

Ingredients

  • 1 frozen or refrigerated pie crust (deep dish 9-inch, unbaked)
  • 1 beaten egg with 1 tablespoon water (egg wash for pie crust)
  • 1 pound of ground chuck beef
  • 1 teaspoon cumin
  • 2 teaspoons chili powder
  • 1/2 teaspoon black pepper
  • salt to taste
  • 1 teaspoon granulated garlic powder
  • 1 can diced tomatoes with chilies (mild), or use plain diced tomatoes
  • 1 can refried beans seasoned with a sprinkle of each: chili powder, cumin, and granulated garlic powder (add salt and pepper or cayenne if desired)
  • 2 cups or more of shredded, grated extra sharp cheddar or Mexican blend cheese
  • 1 cup tortilla chips or more (crushed)

Instructions

  1. Preheat the oven to 400 degrees.
  2. Line an oil-sprayed deep dish baking pie plate with refrigerated pie dough (or if premade frozen dough, omit this step)
  3. Brush the premade frozen or refrigerated pie crust with egg wash.
  4. Poke holes using fork tines (and add pie weights or raw beans to the pie to hold down the dough while baking).
  5. Blind bake the pie dough at 400 degrees for 10 minutes, then set aside.
  6. Sauté the ground beef with all the seasonings listed until all the pink is gone, then drain excess oil.
  7. Add around 1 cup of shredded cheese to the cooked beef and stir in the tomatoes with chilies.
  8. Simmer for around 5 minutes on low heat.
  9. In the meantime, mix the refried beans and season with the listed ingredients.
  10. Spread the bottom of the crust with refried beans, and top with the sauteed ground beef and tomato mixture.
  11. Sprinkle the top with shredded cheddar cheese or your preferred cheese.
  12. Add crushed tortilla chips and more shredded cheese on top.
  13. Bake 15 to 20 minutes at 400 degrees or until cheese is melted and pie is heated through.
