Made with a simple box of chocolate cake mix, fresh shredded zucchini, and just a handful of pantry ingredients, these cookies are incredibly soft, moist, and packed with chocolate flavor.
The best part? No one will ever guess there's zucchini hidden inside!
The zucchini melts right into the batter, creating a tender, bakery-style cookie without adding any vegetable taste. It's a wonderful way to use up an abundance of summer zucchini while satisfying your chocolate cravings.
Whether you're baking for an afternoon snack, school lunches, potlucks, or holiday cookie trays, this recipe comes together in minutes and is always a family favorite.
