5 Pancake Mix Recipes

Using complete "just add water pancake mix" can be the start of many delicious recipes and we have 5 for you to try starting with batter-fried seafood and vegetables, a breakfast pancake casserole, peanut butter cookies, a sour cream coffee cake, and a fun festival-style funnel cake bites.

One of my favorite breakfast recipes is this easy all-in-one pan skillet casserole that makes a quick brunch and is perfect for a weekend meal when you set up a serving bar for those pickiest of eaters.

Although pancake mixes can be used to replace many baking recipes, a regular baking mix is a different being than just adding water pancake mixes however you can still use them.

You may also like to try our homemade pancake batter when you have time, it's fantastic!.

Peanut butter cookies come together quickly and taste great similar to the old-fashioned cookie jar style.

Then there is a wonderful batter for vegetables and seafood to try plus for dessert a coffee cake with a streusel topping.

The sour cream coffee cake with streusel topping is another family delicious treat made with pancake mix you'll love the ease of this recipe.

Our last recipe uses just add water pancake mix a fun festival-style funnel cake made into little bites with powdered sugar on top.

Prepare our breakfast casserole the night before and bake it in the morning or you can also freeze it for the easiest breakfast to feed a crowd another day!

It's the most beautiful time of the year. I love making things festive looking and especially the foods we eat. This Christmas spinach and egg breakfast - brunch just shouts with holiday colors and cheer! We love the flavors and you can totally adapt by adding anything else you love with this basic holiday breakfast.

Every year we make something special and usually coordinates the colors to match the Holiday. This year being everyone loves poached eggs, I added the spinach and tomato for color. The cheese just adds an additional awesome flavor to this dish that everyone just goes crazy for.

I really love the buttery taste of the poached eggs on Italian toast with the spinach and tomato. All the flavors go perfect together and easy to makeChristmastas morning is usually so busy with the kids, no one remembers to eat. This usually ends up a brunch. We really celebrate all day long, this is the perfect beginning to start the day.

Mom's Frittata

This is a baked frittata with eggs, cheese, and just about anything else you want to throw into the casserole-style breakfast.


Mom's Egg Frittata is one of the best Italian comfort foods. This is a traditional authentic old-world Italian breakfast.



The pepperoni and eggs with potatoes are so delicious anytime and even in a sandwich with toasted Italian bread.



There are so many variations to the recipe, we decided instead of standing in front of the stovetop to make an easier no-fuss version in the oven.



Breakfast, brunch, or just a quick mid-afternoon Sunday dinner, this frittata is an economical way to throw together a fast meal and feed many.



It is so delicious and simple using all in one pan with potatoes, eggs, and meat or baked as a casserole.



The one memory that really stands out for me is holiday time, this was mom's go-to recipe especially on any holiday or weekend we had sleepover company visiting.

I am not one to take all day baking, this is a great alternative for a quick cinnamon roll fix if you're a fan of them.

Mother's Day was always a special day for me when my Mom was still alive to shower her with attention, especially with her favorite foods.

Breakfast, brunch, or dinner, Mother's Day would be an all-day event for sure.

Her spirit and teachings live on in my kitchen, and she is missed dearly.

I decided to do this recipe roundup in her memory. These are the Best Italian Mother's Day Recipes I made in years past and still do today.

I don't like standing over a hot stove especially in summer. These can be the perfect solution for your camping needs as well. The mix is easy to put together, lasts around a year I keep mine in the refrigerator but you can store in the pantry. I make four good size pie tins baked out of this mix or for each batch mixed around 8 pancakes. Then by adding fruit to the top with some cinnamon, sugar and butter you have the perfect baked pancake in the oven or grill! Of course cooked meats can be added to for the complete breakfast.
Note: for those of you wanting to really cut time just buy the complete mixes at the supermarket. Follow package instructions making the batter a little thinner with adding 3 tablespoons more water than recipe calls for. Proceed to bake and use topping suggestions with instructions below.



Just Add Water Baked Pancake Mix Recipe

2 cups all purpose flour
2 cups cake flour
1 cup powdered milk
3/4 cup instant malted milk powder
1/2 cup sugar
2 tablespoons baking powder
1 teaspoon baking soda
3 teaspoons salt
1/2 cup butter powder
1/4 cup plus 3 tablespoons egg powder
3/4 cup buttermilk powder

Garnish suggestions:

Sliced fresh apples, blueberries, sliced peaches or pitted sliced cherries
cinnamon
sugar
butter
Mix all dry ingredients into a large container or use a freezer ziplock bag and shake all together.

Topping:
maple syrup
Cooked pork sausages, bacon or ham slices

Disposable pie tins
Cooking spray

When ready to make your pancake add 2 1/4 cups dry mix with around 3/4 cup water or more I like it thinner batter. Depending on the altitudes you may need a little more water. 

Pour into greased pie tins. Top with fruit if using then sprinkle with cinnamon sugar, dot with butter.

Bake in preheated oven at 375 degrees until browned on top around 20 minutes.

If using the outdoor grill,  place tin and batter on low heat with the grill cover down for 10 to 15 minutes.

Every child loves fun foods in the kitchen and here is a way to make some memories with your favorite little ones with Character Pancakes.


With just a few simple tools you can make a popular copycat of Mickey Mouse in just 3 to 4 minutes and let the kids decorate them for a fun activity plus it's teaching them early about how to cook!


Our little ones just love these pancakes and they immediately said that look like Mickey Mouse because I wasn't sure the end results would have a striking resemblance!


With a few cut-up fruits and chocolate chips they can decorate the pancakes anyway they like and the bonus is they taste great.

Red Velvet Pancake Recipe For Valentines Day

I have never had anything red velvet ever! After seeing so much hype on the lovely cakes, cupcakes and pretty batters, I decided this is what hubby was getting for a special breakfast this Valentine's Day! To our surprise they were quite different than any other flavor we have tried in the past. Not exactly sure even how to describe the taste but really good. I added some black red cherries, a little cream cheese and they were the perfect sweetness.

You can use any cookie cutter shapes but I thought hearts were the perfect touch! Enjoy.






Red Velvet Pancake Recipe

2 cups flour
1 cup powdered sugar
1/2 cup unsweetened cocoa powder
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
Mix in a bowl all the above ingredients and set aside



In another bowl add:

1/2 teaspoon vanilla
1- 1/2 cups buttermilk or evaporated milk
2 eggs
1/4 cup granulated sugar
2 tablespoons red food coloring

Whisk these above ingredients together blending evenly.

Now pour the wet mixture into the dry and folding until moistened and still lumps remaining.

Heat your griddle on medium low heat. Spray with cooking oil. Also if using a heart shaped cookie cutter for the heart red velvet shaped pancakes, spray the interior of the cookie cutter.  Fill the cookie cutter with batter until 2/3 thirds full, cook 1 minute and bubbles appear flip (note you can use cooking tongs to remove the cookie cutter. Cook until lightly golden another minute or so.



Triple Berry Iced Muffins Recipe

Having so many berries in house this time of year, I had to experiment on using more than one kind in a muffin. I was extremely excited when my son who loves my blueberry crumb muffins said, wow these are awesome!~ He loves the combination of flavors.


I did several kinds of berries and made two batches. These were blueberry, blackberry and red raspberry.


These were strawberry, blueberry and blackberry.


This batter isn't very sweet. So then he suggested we ice these babies! I thought why not! Either way they were wonderful!




In a large bowl mix:
1/4 cup of sugar
1/4 cup of shortening till resembles course looking sugar

beat in :
1 egg

Add:
1 3/4 cup cake flour
3 teaspoons of baking powder
a pinch of salt
Alternate:
1 cup of milk to wet the dry ingredients.
Fold in one cup mixed of fresh blueberries, red raspberries or strawberries and blackberries
Line muffin cup pan with paper liners, fill to 3/4 full. Bake at 350 for 20 minutes.


In a separate bowl add 1 cup of confectionery sugar and water to make a thin icing. Drizzle over the tops of muffins while warm.

Very Berry Breakfast Smoothie

Such a pretty smoothie to start off your breakfast in elegant style~ you deserve it!

A refreshing drink, but a healthier way to start off the day . A quick burst of energy to get you started in the morning. I thought this was so delicious it must be good as a cocktail too! So the other night, by adding a shot of raspberry rum, I made this healthy smoothie into a wonderful cocktail (not so healthy, smile). So, you don't have to convince me that this is a versatile drink for anytime of the day, oh and then I also thought a healthy cocktail is there such a thing?

Seriously refreshing, but I am trying to stick to the healthy version these days! So here is the recipe~

Berry Smoothie:
1/4 cup blueberries
1/4 cup blackberries
1 banana
1/2 cup apple juice
1/3 cup ice, or raspberry flavored sorbet

Put all ingredients into blender.
Blend until thick and all ice is smooth. (if you prefer to have no seeds it will take a little time but you can put through a small strainer to just use the pulp, I prefer this without the seeds from the blackberries.

Italian Plum Tomato Prosciutto Cheesy Pie

This is been a great year for our garden here in Florida, I can't get enough recipes for all these plum tomatoes, I couldn't wait to share this light but perfect brunch, or dinner with everyone, it's a family favorite for years! Can you tell how proud I am of these babies, I think it's my third picture, I can tell you one thing, I have never had luck growing my own produce, animals always eat them!  So this is the only reason for my bragging rights this year, please forgive me, I do feel guilty not sharing!

deep dish pie crust homemade or store bought  ( prick holes in the bottom and bake for 9 minutes @375 degree oven)
6 slices prosciutto chopped in pieces (you can use ham or bacon if you choose)
2 cloves of minced garlic
3 medium plum (Roma) tomatoes, seeded, chopped
1/4 teaspoon salt
1/4 teaspoon pepper
1 cup half-and-half
2 tablespoons all-purpose flour
2 eggs
1/4 teaspoon garlic powder, cayenne pepper and parlsey
1/2 cup shredded Fontina cheese
1/2 cup shredded  white Cheddar cheese
1 tablespoon Romano cheese
optional :1/2 cup mushrooms, green peppers or zucchini
Place cookie sheet on oven rack. Heat oven to 375°F. Add prosciutto, garlic, tomatoes, salt and pepper to the bottom crust, sprinkle with Romano cheese. In medium bowl, whisk together half-and-half, flour and eggs, add spices. Stir in shredded cheeses. Pour over tomato mixture.
Bake on cookie sheet 25 to 30 minutes longer or until knife inserted in center comes out clean. Let stand 10 minutes before serving.

For us, this is a fabulous waffle recipe. Not only do the memories of these and our trip last long in our minds, but the smell also lingers in our home while they're cooking!

A few years ago, my husband and I were lucky enough to take our second trip to Hawaii. Every morning at breakfast, we had these waffles with fresh coconut syrup.

I have tried to recreate the recipe for years now and have never been able to master this one until now.

It's a little effort, but well worth it! If you love coconut and macadamia nuts, this one's for you...The longer you cook these, the crispier they will be. If you prefer a soft texture, then don't overcook them.

Hawaiian-style waffles, coconut syrup, macadamia, and coconut take you right to any Island in Hawaii in taste.
