Fresh Raspberry Frappe Recipe

  • Red raspberries in season are my favorite! I just love the taste of them in cookies, cakes, scones, pies and now this frappe is my favorite drink! Hope you like this one too!

  • 1 1/2 cups fresh raspberries
  • 3 tablespoon raspberry liqueur
  • 1 tablespoon seedless raspberry jam
  • 2 cups raspberry ice cream or sorbet
  • 1/4 cup milk
  • 1/2 cup ice
  • Garnish options:
  • chocolate shavings, whipped cream and raspberries for garnish

  • Place everything in the blender and pulse until thick and creamy. Garnish with whatever you like.

Cheesy Loaded Garlic Knot Recipe

Here is a quick version of garlic knots loaded with cheese made with refrigerator dough. A great appetizer or snack these buttery little pull aparts are so addicting you will be asked to make these time and time again! This is like monkey bread it pulls apart in little pieces loaded with mozzarella!

Quick Cheesy Loaded Garlic Knot Recipe

2 packages buttermilk refrigerator biscuits package of 10
1/2 stick butter melted
1 teaspoon granulated garlic
1/2 teaspoon dried oregano
1/2 teaspoon dried parsley
1/2 teaspoon dried basil
1/4 teaspoon cayenne pepper
2 tablespoon grating cheese
1 cup shredded fine mozzarella

In a pie plate, add the melted butter, garlic, herbs, spices into the bowl and mix together.
Remove the dough from the packages. Tear small 1 inch pieces and roll into balls.
Dip each piece into the butter and place into a deep dish pie plate that has been oil sprayed.
Keep dipping and piling them on top of each other until all the dough has been dipped and added to the pie plate'.
Sprinkle the tops with grating cheese then top with mozzarella cheese.
Bake at 375 degrees until the top is browned and cheese is starting to brown around 25 minutes. 
Serve hot pulling apart the pieces. Leftovers are good reheated if there are any.

Angel Food Strawberry Cheesecake Video Recipe

Being a career woman, wife, mom and grandmother, I love recipes that I can whip together quickly that taste great and everyone raves about. This is one of them. The ease of this one after working all day is the perfect solution for that busy housewife or career woman. This filling is rich and creamy, the strawberries accent the flavors and the whipped cream homemade or store bought just makes the perfect combination of flavors. When I get home after a long day this dessert is often made and everyone always wonder how I find the time. Guess what it takes 5 minutes to whip up. Sometimes store bought has to work, plus it's my birthday and my favorite!

 Angel Food Strawberry Cheesecake Video Recipe

1 store bought angel food cake or make your own if you have time
1 recipe no bake cheesecake filling below
1 quart cleaned and sliced fresh strawberries
1 container (around 3 cups)
 of whipped topping or fresh heavy cream whipped 

Clean and slice strawberries around 1 quart saving some for garnish
Make no bake cheese cake filling below:

Take a sharp knife and slit the inner ring of the cake inside the rim almost center of the cake all the way around the ring.  See video for more instructions. As you fold back the inside cut,  using two fingers spread the cake open and fill the slit of the cake with cheesecake filling and then add the strawberries into the filling evenly all around the ring that has been filled.

Spread with whipped cream. Decorate with more strawberries. Chill around 1 hour or serve immediately.

Recipe for no bake cheesecake filling:

1 package 8 ounce cream cheese
1/3 cup sugar
1 teaspoon vanilla
1 cup heavy cream chilled whipped with 1 tablespoon sugar and set aside until ready to use
more heavy cream or whole milk if too thick

Whip the cream cheese and vanilla together until smooth. Slowly add the sugar and then vanilla. Fold in the whipped cream and gently blend. Refrigerate around 10 minutes or so before using for filling. If too thick add 1 tablespoon cream until creamy. Mixture sticks to the spoon and is very thick will still be easy to use as a filling.

Fill the angel food cake with filling, add sliced strawberries all around the ring into the cheesecake filling then slather on the whipped cream. Garnish with strawberries in a flower from and serve.

Fresh Pineapple Pie Recipe

There are two favorite pies I made for my dad often years ago,  Red Raspberry and Pineapple. The memories I have of him always bring me to wonderful and cherished moments in my life when baking and this is one he would rave to his friends about.
 He would share this pie with a very close friend that also was his neighbor, his name was Cosmo. They loved playing cards together and enjoyed each others company. Both have long since passed.  He was very good to the family, my kids when the were younger and very generous friend to all of us. Cosmo would call me and offer to pay me for this pie he liked it so much and I told him I would be happy to make this for him anytime he wanted, of course out of the close friendship he had with dad and all he did for us, I would never have accepted payment. The praise from them both was enough for me! The look on both his and Dad's face eating it always brings a smile to my face and so worth the memories I cherish those memories and finally glad I made this again after all these years. I haven't made it since they both passed. Today I needed to remember them and smiling with those memories of both and sharing this pie with my family and the great memories of those days.

Use a deep dish to bake this pie and thickly rolled crust

Pineapple Pie


1 Large fresh pineapple cleaned and pulsed in a food processor leaving chunks and pulp. It should look crushed when down.
3 tablespoons cornstarch more if the mixture doesn't thicken like pudding
3/4 cup sugar or more to taste if the pineapple is tart
In a medium saucepan place the pineapple and sugar in the pan stirring until it comes to a boil. In a small cup add the cornstarch and add water to make a thick but flowing paste. Stir into the boiling pineapple and cook until thickens. You may need more if the pineapple is huge. The pineapple should coat the spoon when done. Let cool and make dough.

Crust (or use store bought)

4 cups flour
1 teaspoon salt
1 1/4 cup shortening
9 tablespoons ice cold water
Cut shortening into the flour add salt using two forks or pastry cutter. Add the water until it form a ball. Roll out thick top and bottom for pie.

Garnish for top

butter melted or margarine

Preheat oven to 400 degrees.
Make crust, roll out top and bottoms on a floured board and line a deep at least 2 inch oiled spray round or square pie plate.
Place the first crust down on the bottom and pour in the filling.
Top with second crust. Press all edges to seals. Brush with milk, dot with butter evenly and sprinkle with sugar. Sometimes I like to sprinkle the top with cinnamon and sugar as an alternative.
Bake at 400 degree preheated oven until golden brown around 40 minutes.
Cool completely if you can wait to eat this it smells amazing baking! Filling is hot inside. Serve as is or with pineapple ice cream.

Semi Homemade Blueberry Cinnamon Bar Recipe

This is the easiest recipe in a hurry and it's semi homemade. Adding fresh blueberries will make all the difference.

 Semi Homemade Blueberry Cinnamon Bar Recipe

Here is all you need:

1 box blueberry muffin mix made to package instructions
1 cup fresh blueberries
cinnamon and sugar mixture for topping
Mix the blueberry muffin mix to package instructions and fold in 
1 cup fresh blueberries.
Grease a brownie sized pan 12 x 9 and pour the mixture into the pan. Sprinkle with cinnamon sugar.

Bake at 350 preheated oven until middle is set around 25 to 30.
Cool and cut into squares.

Note: for cinnamon sugar add 2  tablespoons cinnamon to 1/2 cup sugar and place in a plastic zip lock bag and shake until blended.

Taco Salad Bowls Recipe

I love creative and pretty foods. This was so easy I just couldn't believe how perfect, fast and fun to make and eat!

Taco Salad Bowl Recipe:

2 pounds ground beef of turkey
1 can refried beans
1 tablespoon chili powder
1 teaspoon cumin
1 teaspoon granulated garlic 
olive oil
cooking spray
Tortilla Shells homemade recipe click here
Garnish: shredded lettuce, grape tomatoes, sour cream, shredded mexican blended cheeses, sliced olives, jalapeno pepper sliced, avocado chunks
Optional: homemade salsa or store bought

salt , pepper and cayenne pepper to taste

In a medium size fry pan saute the beef in 2 tablespoons olive oil with chili powder, garlic, cumin until all the pink is gone. Drain the oil off. Stir in the refried beans and heat through.
Set aside.
Preheat the oven at 400 degrees. Line the baking bowls with tortilla to package directions and bake until crispy. I spray my shells with a cooking oil spray which makes them even crispier.
Line the tortilla with bean mixture top with lettuce, tomatoes, sour cream, cheese and any of the above mentioned garnishes you like.

Chicken Mushroom Baked Pasta Casserole Recipe

A perfect and easy casserole to make for a crowd or just make this pan full and freeze for later. The leftovers are fabulous reheated  and freeze well!  These combination of flavors are sure to wow your family and guests! I have taken this one to many functions always a big hit! Check out how easy and oh so flavorful!

Chicken and Pasta Casserole Recipe

3 cups cubed cooked chicken
2 cups shredded jack cheese or cheddar cheese I like some of both
1 clove garlic minced
1 lb package small or medium shells cooked al dente
1 teaspoon garlic powder
1 stick butter
1/4 cup flour
2 cups milk
2 cups chicken broth
1/4 cup sherry
1 1/2 teaspoons Worcestershire sauce
1/4 cup Parmesan cheese grated
1 package butter crackers crushed
more butter for the top
Optional 8 ounces or mushrooms

In a large saucepan add 1 tablespoon butter and then garlic saute for 1 minutes. Add the flour and fry 1 minute add the chicken broth, milk 2 tablespoon butter garlic powder, Worcestershire sauce, Sherry and simmer to make the medium thick sauce.
In the meantime cook the pasta al dente. Add the rest of the butter in a 13 x 9 pan and put in the oven to melt the butter swirling around. Add the drained unrinsed pasta to the butter dish. Toss in the cooked chicken. Pour the sauce over the top. Sprinkle with cheddar, parmesan cheese. Top with butter crackers drizzle some butter on top and bake at 350 for 1/2 hour or until heated through.

After making the dough, take small pieces of dough, roll into ropes in 6 inches in length. Twist them and lay on a piece of parchment paper.

Brush with olive oil. Sprinkle with oregano, garlic powder, black pepper, salt, pinch of cayenne pepper.
Bake at 400 degree hot oven until light brown.

No Bake Strawberry Icebox Cheesecake Recipe

I am always looking for quick and easy ways to make a dessert my family will love. I just knew these combinations of flavors would be a big hit and blended perfectly together. Check out the easiest way to whip up an incredible tasting dessert in no time!  The freshness of the strawberries just puts this one over the top!

No Bake Strawberry Icebox Cheesecake Recipe

4 small snack pack instant pudding individual containers or make 1 package vanilla instant pudding to package instructions
1/2 cup softened whipped cream cheese
1 - 8 ounce container non dairy whipped topping thawed
1 pint or more of fresh strawberries hulled and sliced
2 or more packages of cinnamon graham crackers leave some crushed for the top for garnish (you can also use vanilla wafers if you don't have graham crackers)

In a medium size bowl add the vanilla pudding with whipped cream cheese and blend together until smooth. Fold in the thawed whipped topping.  Set aside.

Line a deep dish around 8x8 inch square pan with graham crackers for the first layer. Add a layer of sliced strawberries, then the whipped filling mixture, more strawberries, top with graham crackers and repeat ending with whipped topping. Save some strawberries to top for garnish. Best refrigerated for at least 3 hours before serving but who could wait? Not us!  Enjoy!

Fresh Rosemary Topped Baked Potato Recipe

Boiled first then baked... infused with delicious herbs. Here is the perfect side for any meat meal you have.

Fresh rosemary
granulated garlic 
fresh or dried parsley
butter melted
white wine
olive oil
salt pepper to taste

Boil as many potatoes for your family for around 25 minutes in salted water. Drain. Place potatoes in an oven proof baking dish. Drizzle butter,  olive oil, garlic, salt, pepper and a little white wine over each potato. Bake at 400 degrees until skins begin to crisp and basted each one with the mixture. Around 5 minutes before serving add all the herbs to the tops of each potato spooning the butter from the dish over the tops and herbs, continue baking 5 more more minutes. Serve hot.

Italian Stew Recipe

This is a  basic stew you can add what ever you like to. This is my version. This one has lamb in it but you can use any kind of meat you like or none at all.  Sop up the juices with some great crusty Italian bread and you will have the perfect meal! What really happened was I bought some awesome lamb steaks, they were cut from the leg. Well after marinating them they still weren't tender so the meat went into this stew. Don't ever throw out tough meat this is what should have next after a disappointing meal, stew!

Italian Stew Recipe

1 can diced tomatoes 28 ounce
1 can tomato sauce  28 ounce
1 cup Merlot wine or use water
1 pound cleaned fresh green beans
4 peeled and cubed potatoes
8 ounces sliced mushrooms
3 pounds cubed boneless meat ( I used lamb, you can use beef, chicken or pork)
3 cubed zucchini
2 bell peppers sliced and cleaned
2 cups carrots
1 cup peas
4 cloves minced garlic
granulated garlic I add around 1 teaspoon 
salt, pepper, cayenne pepper to taste
1 teaspoon each basil, parsley and oregano
olive oil

In a large saucepan at least 5 quart, add the meat of choice with two  to three tablespoons of olive oil and saute until browned on both sides. Add the peppers, garlic and mushrooms to the pan with 3 tablespoons olive oil. Saute 2 more minutes and then add everything else except for the beans, add the seasonings to taste.  Simmer stew on low for around 2 to 3 hours or until meat if fork tender. NOTE:  I add the string green beans that are steamed separately at the end, you can add them raw in the beginning but they will not stay bright in color so I make them in a steamer and add 1/2 hour before the stew is cooked. Either way is fine.

Italian Sauteed Rosemary Basil Chicken Recipe

Here is a delicious pan of sautéed chicken breast. Olive oil, fresh rosemary and basil of course fresh minced garlic. A wonderful aromatic chicken slow cooked to perfection.  A quick way to prepare a meal bursting with flavor! The flavors and look of this chicken will make your family think you've gone gourmet and will ask for it time and time again. There are many uses for this sautéed chicken. It's great for topping salads, tasty slider sandwiches or just make it along with some great side dishes to make a perfect meal.

This is like my go to recipe when ever I need a tender tasty piece of  chicken breast as the main entrée over greens. It's perfect. This chicken breast also enhances being placed on a bed of rice, on top of a salad or roasted vegetables.  Another suggestion is to use of buttered pasta, mashed potatoes or chopped up for a great flavored chicken salad.

Sautéed Rosemary Basil Chicken:

2 sprigs of chopped fresh rosemary
2  boneless chicken breasts sliced around 1/2 inch thick
3 cloves minced fresh garlic
2 tablespoons chopped fresh basil
olive oil for cooking
canola oil for cooking
salt, black pepper and cayenne pepper to taste

1/4 cup lemon juice
3 tablespoons olive oil
1/4 teaspoon dried oregano
1/2 teaspoon dried or fresh parsley

Place sliced chicken breasts in a zip lock bag, add the lemon juice, 3 tablespoons olive oil, oregano, basil and parsley. Marinate overnight or at least 3 hours. Pour out the lemon juice best as you can before frying.

In a large fry pan, add 1 tablespoon olive oil and 3 tablespoons canola oil. Add the garlic, chicken rosemary.  Saute chicken on both sides until nicely browned around 5 minutes on each side or until juices run clear.  Add the fresh basil and toss. Sprinkle with salt, pepper and cayenne to taste.

Grandma's Italian Easter Cookie Recipe

Just a basic Italian cookie dough then twisted into a birds nest shape to celebrate Buona Pasqua. Hope you have a wonderful Easter with love, laughter, good health and of course great food.

Italian Red Cabbage Recipe

Very colorful sauteed cabbage makes the perfect side dish for the Easter Holiday tables. Of course it's delicious anytime but especially festive this time of the year. The garlic and spices makes this one a delight to anyone who loves cabbage. Don't miss this one if its perfect for any meats you serve! It's so pretty!

 Italian Sauteed Red Cabbage 

2 cloves minced garlic
1 medium head red cabbage
2 tablespoons aged balsamic vinegar
2 teaspoons granulated garlic
salt, pepper and cayenne pepper to taste
dried oregano
olive oil

Boil the head of cabbage cut into quarters until tender. Drain. Rinse.

In a large fry pan add 3 tablespoons olive oil and add garlic. Saute 1 minute add the drained cut up cabbage. I sliced it while soft even smaller with a cooking scissors to make it into strips.

Continue to saute adding granulated garlic, salt, pepper to taste for around 10 minutes turning often using medium heat.
Add the balsamic vinegar at the end and toss.
Served as a side dish with any kinds of meat.

Almond Filled Coffee Cake Recipe

One of my favorites any time of the year for baking is Spring for fresh baked goods and  then of course holiday foods for festive creations. This is a sweet dough with a delicious almond filling. You can use this dough with any of your favorite fillings and great anytime of the year. This one is a classic coffee cake made with yeast and a delicate dough worth all the efforts it takes

Almond Filled Coffee Cake Recipe

4 eggs yolks room temperature
1/2 cup sugar
1 stick butter
1/1/2 cup milk
2 teaspoon vanilla
1 package yeast
2 teaspoons salt
4 3/4 cups flour and more for rolling
 1 or 2 cans almond filling depending how thick you like the filling
sliced almonds I use one can for both. We don't like excessive sugar or sweet fillings.
(recipe make 2 rings)

Heat the butter and milk to lukewarm. In a large mixer bowl using a flat beater, add the flour, yeast, salt to the bowl. Pour the lukewarm milk mixture slowly mixing in with the flour along with eggs and vanilla. Mix until is forms a sticky ball. Place on a floured board and knead for around 3 minutes with floured hands. Place into a bowl, cover with plastic wrap and a saucepan cover. Let rise 2 hours.

Roll out, spread with the filling and roll up like a jelly roll then form into a ring, you decide how much or sweet your like it (I used half a can on two of these).

Using a scissors or very sharp knife slice the ring every 2 inches making around 10 cuts. Take the cut part, twist so the filling is facing upward.

  Cover again with a towel for around 25 minutes. Bake on 375 preheated oven brushing with egg whites and slices of almonds. Bake until golden brown on top.

Note: you can use any kind of filling you want I also make this with raspberry filling.

Ricotta Mozzarella Twice Baked Potato Recipe

Here is a simple twice baked potato made in the microwave. You won't believe how easy these are and very packed with flavor. Everyone loves these. The best side dish for any meal!
The cheese blends make them smooth and fluffy.

Ricotta Mozzarella Twice Baked Potato Recipe

4 potatoes microwaved, cut in half and scooped into a bowl (saving the jackets later to fill). I use yellow potatoes.
3 tablespoons cream cheese
1/2 cup Ricotta cheese
1/2 cup shredded mozzarella
salt and pepper to taste
grating cheese Parmesan and Romano blends
1/2 teaspoon granulated or more for to taste
paprika and dried parsley for garnish on top

Using an electric mixer beat the potatoes and all ingredients adding a little milk if it's looking dry.
Spoon into the jackets,  Top with some grating cheese. Sprinkle with paprika and dried parsley.
Heat in the microwave when ready to serve or in the oven. These are great made ahead of time.
