Chickpeas and Orecchiette Recipe

Growing up I use to love this dish. Mom would alternate chickpeas or just use peas. I love both dishes but this one is my favorite. Comfort food all the way. If you are looking for an authentic style Italian dish you just hit the jackpot! I love the sausage combined in the sauce to make this hearty. Reminds me of an Italian style chili. I make my orecchiette by hand homemade if you would like to try them click here

Chickpeas and Orecchiette Recipe

1 small can tomato paste
3 cloves minced garlic or 1 teaspoons granulated garlic
extra virgin olive oil
Italian herbs
cayenne, salt , pepper  to taste
loose Italian hot or sweet sausage around 1/2 pound
1/2 pound Fresh homemade orecchiette pasta cooked and drained or make store bought to package instructions and drain
1 teaspoon fennel seed
3 cups or more fresh cooked or canned chickpeas
4 cups of chicken broth I make mine and freeze it till needed
1/2 cup grated cheese

In a large sauce pan, add around 1/4 cup olive oil, garlic and tomato paste saute for a minute stirring frequently. Add the chicken broth. Add the loose sausage raw into the pot, then the fennel, herbs, salt, pepper and cayenne pepper to taste.

After the sauce simmers for around 1 hour and gets thicker and not too soupy (most of the liquid will boil away) add the pasta and grated cheese.  Serve with more grated cheese on top.
