Broccoli Stuffed Chicken and Prosciutto Recipe

This is a favorite chicken dish of mine, Easy to make and very impressive to guests since it shows well on a plate. Looks very gourmet. If you want to impress anyone make this dish! 

Broccoli Stuffed Chicken and Prosciutto Recipe

4 boneless chicken breasts sliced to make a pocket in each
 sliced prosciutto or black forest ham slices
provolone cheese slices
Cooked broccoli florets
Italian flavored bread crumbs
Parmesan cheese
granulated garlic
olive oil
oregano, parsley, basil, salt, pepper
hot peppers in a jar pepperoncini 
Pinot Grigio white wine

Open the pocket of the  chicken up and sprinkle with a little salt, pepper and herbs. Add a teaspoon of butter in the pocket a floret, prosciutto and provolone. Finish all chicken with this way and add to a baking pan.
Drizzle with olive oil, melted butter over the top, more salt pepper and spices evenly then bread crumbs and cheese. Top each one with a pepper. Pour white wine along bottom not to touch chicken.
Cover with foil the first 30 minutes. Then remove so chicken browns and bread crumbs crisp up around 45 minutes.
Serve with garlic potato wedges and any leftover broccoli with garlic and oil.

Leftover Pork Fried Rice

There is nothing better than a side dish that everyone raves about. This is that one!
I have been told time and time again that this is better than any rice in a restaurant. Give it a try and let me know what your family thinks.

Leftover Pork Fried Rice

3 cups instant rice cooked and drained or steamed regular rice cooked
2 cups leftover cubed or shredded pork 
1/4 cup soy sauce
1/4 cup water
1 teaspoon granulated garlic
4 tablespoons butter
1/2 cup frozen peas and carrots mix
1 egg beaten

In a large fry pan melt butter. Add garlic and egg stir until completely cooked. Add rice saute until rice is browned around 10 minutes or more flipping rice to brown on both side. Add the meat,  vegetable mixture. Continue to cook until browned rice and everything is heated. Remove from heat.  Mix the soy sauce and water together add to the pan and stir. Serve

Evaporated Milk Recipe

What you will need:
4 1/2 cups milk total
Skewer stick made of wood

See below for Instructions:

In a large saucepan place 2 cups of milk in the pan. Add the skewer stick to the pan standing straight. Mark off where the 2 cups ends.
Add 2 and 1/2 cups more milk. Bring to a boil and then down to a simmer,  until it boils down to reach that 2 cup mark on your skewer. That will have reduced the milk to 60% which is taking out the water content. That's  how you know your milk has evaporated correctly.
Keep skimming off the top if a film forms.
After it reaches that 2 cup mark strain it and store in the refrigerator. This will stay fresh for 1 week. It makes 2 cups.

Pepperoni Pizza Cupcake Recipe

Easiest pizza I ever made! All you need is a cupcake tin,  sauce, cheese,  pepperoni and bread dough, no stretching. I will be making these often!

Here's what you'll need:

Cupcake tin
oil spray
1 can or jar of pizza sauce or homemade click here for recipe!
sliced pepperoni
1 lb dough store bought or homemade click here for recipe
shredded 5 cheese mozzarella

Spray the cupcake tin with oil spray. 
Cut 12 equal pieces of bread dough and place in the cupcake tins, pressing dough flat. 
In the center of each one add 1  teaspoon pizza sauce, then pepperoni slices and top with shredded cheese. Let sit around 10 minutes while you heat the oven to 400 degrees.

Bake until browned and crispy cheese on top around 20 minutes.

Corn Bacon Chowder Recipe

A very delicious soup that is made with a few ingredients and quickly. Serve with some corn bread it goes great with this soup! Enjoy!  I make this often when I have too much milk in the refrigerator. It's a great way to use it up.

Corn Bacon Chowder Recipe

3 or 4 small finger carrots 
1 stalk celery
4 small cubed potatoes
1 1/2 cups of fresh or canned corn
2 1/2 cups heavy cream or whole milk
3 tablespoons whipped cream cheese
4 tablespoons butter
1 teaspoon granulated garlic
salt, pepper to taste and cayenne pepper
1 12 ounce can chicken brown
1/4 cup chopped cooked bacon

Put the celery and carrots in a food processor and pulse until fine.
In a 4 to 5 quart saucepan add the cream cheese, butter, corn, chicken broth, milk or heavy cream,  garlic, salt, pepper, vegetables and bacon.
Simmer until the potatoes are soft around 35 to 40 minutes on low.

Italian Pepperoni Pizza Recipe

Pepperoni seems to be the most asked pizza in our home. I love having pepperoni sliced fresh from the deli and using pizza pepperoni on mine. This one has sliced plum tomatoes, fresh basil and pepperoni using my homemade dough. What do you think?

Sliced Plum tomatoes
Pepperoni slices
Whole Milk shredded mozzarella
Extra Virgin olive oil
Granulated garlic
Cayenne pepper is Optional
Grated romano cheese

Stretch dough onto a round pizza pan greased with lard, around 1 pound of dough.  Let rise for around 1 hour in a warm place. Bake dough until slightly golden in a 430 degree hot oven.
Spread with pizza sauce evenly. Top with sliced tomatoes and pepperoni adding the cheeses last on top evenly.
Bake again at 425 degrees until the cheese starts to brown on top.

Slow Cooker Venison Merlot Stew Recipe

If you're a venison lover then hopefully you have tried my other two recipes by now. All three I developed myself this year in my kitchen. Actually the first three attempts on cooking it. All of them came out fantastic and I was thrilled to share the recipes with you. My favorite by far still is Cacciatore Style Venison Click HERE but all the stews have been great. Old fashioned Venison Stew and now this one with Merlot just fabulous!

 Slow Cooker Venison Merlot Stew Recipe

2 cups sliced carrots
2 lbs venison stew meat
1 tablespoon flour
1-12 ounce can beef broth 
mushrooms sliced around 8 ounces
2 cups cut green beans canned or fresh
1 cup cut carrots
4 potatoes peeled and cut into cubes
2 bell peppers cut and cleaned into 3 pieces
1 teaspoon each granulated garlic, oregano, basil, parsley, salt , pepper
cayenne pepper to taste ( I used around 1/4 teaspoon)
1 cup Merlot wine
olive oil

Toss venison in flour. Place all vegetables in the bottom of slow cooker.  Add floured venison.  Add all rest of ingredient to the slow cooker. Drizzle the top with olive oil around 1/4 cup.  Cook on high heat for 8 hours. Low for 12 hours or until meat is fork tender.
Serve with crusty Italian bread.

Open Face Shredded Buffalo Chicken Tortilla Recipe

Baked on a crispy tortilla topped with shredded buffalo style chicken that was slow cooked in hot sauce! You can add anything you want on it. I wanted to show everything in it. Of course some sour cream to top it off would be great if you like it or even some blue cheese or ranch.

Optional Toppings:  Sour Cream Ranch Dressing or Blue Cheese 
I slow cooked the chicken in the slowcooker with hot sauce. After it was done shredded it.
In the mean time on a cookie sheet lay out as many tortillas you will need and spray with oil
Bake on 400 till crispy. Take out. Top with any toppings of choice and serve on a flat plate.

Chicken Parmesano Pasta Fagioli Recipe


I love Pasta Fagioli and Chicken Parmesano with pasta so I decided to combine them and see what it would be like! 
What a hit. We loved and and can't wait to eat this again. Will be a keeper in your home for sure if you love this combination. The cheese and chicken compliment each other perfectly in this fagioli (pronounced fazool!)

Chicken Parmesano Pasta Fagioli Recipe

2 cups chicken cubed
1 pound cooked great northern beans or any white beans you like
(I do mine overnight in the slow cooker)
1 28 ounce can diced tomatoes
1 teaspoon granulated garlic
1 small can tomato paste 6 ounce
2 stalks celery
3 plum tomatoes
4 cloves garlic
1/2 cup sliced carrots
salt, pepper and cayenne to taste
1/2 cup red wine
olive oil
1/2 cup parmesan cheese more for garnish
shredded whole milk mozzarella cheese

Ditalini, orzo or whatever small pasta you like (baby shells work great also) cooked to package instructions ( I uses around 1 1/2 cups dry)

Place the plum tomatoes, celery, garlic and carrots in a food processor and blend until pureed fine. Add water if leaving big chunks run till smooth.

In a large dutch oven add Chicken cubes sauteed in olive oil and  granulated garlic, salt,  pepper, cayenne pepper to taste. Add pureed vegetables, beans, tomato paste, wine and can of diced tomatoes. Simmer for around 30 minutes, stir in 1/4 cup parmesan cheese. In a small saucepan cook the ditalini separate to package instructions then add to the fagioli last stirring to coat evenly with sauce and serve topped with more grated cheese and shredded mozzarella.
