Sausage and Broccoli Rabe Pizza

One of our favorite pizza's is made with fresh sauteed broccoli rabe and sausage with thinly sliced tomato.
Pizza dough is freshly made with a light marinara sauce. Topped with whole milk mozzarella cheese and only the finest ingredients. Check out all the highlighted links below to get the recipes for dough, sauce and broccoli rabe. The pizza has been a traditional favorite in our family for years.

Sausage and Broccoli Rabe Pizza

1 lb of fresh pizza dough or buy some store bought
1 bunch of fresh broccoli rabe sauteed with garlic and olive oil
1 cup sliced mushrooms 
2 cups marinara sauce or your favorite pizza sauce
1 thinly slice plum tomato
1 clove minced garlic
1/2 pound sliced homemade hot Italian sausage cooked or store bought
olive oil
mozzarella shredded cheese
grated Romano cheese
fresh basil leaves

Make dough or use store bought.
Cook broccoli rabe to instructions from link above.

Stretch dough on a greased pizza pan. Let rise around 1/2 hour.

In a large fry pan, saute, 2 tablespoons olive oil with garlic for two minutes, do not brown. Add sausage, mushrooms, till all pink is gone in the sausage.

Spread sauce over dough, top with sauteed broccoli rabe, sausage, mushrooms, thinly sliced tomato. Add mozzarella and grated cheese on top. Bake till brown and crispy. sprinkle with oregano, fresh basil and more grated cheese if you like.

Grandma's Bread Pudding Recipe

Delicious old fashioned bread pudding. Easy to make and the most comforting way to serve a dessert when you feel nostalgic!
 Grandma always made this to get rid of old bread.

    Bread Pudding Recipe

One of the fondest memories growing up as a child is the smell of cinnamon and pure vanilla. Whenever I smell them I think of grandma making this special treat. We usually had this on a cold day in Utica,  Upstate New York area. I could eat that whole bowl of pudding topping which is the best part to me!  

Here's her recipe:

4 cups bread cut into small cubed pieces day old preferred
1/2 cup raisins soaked in bourbon or rum overnight and drained (you can use vanilla instead if you wish)
2 cups milk
1/4 cup butter
1/2 cup sugar
2 beaten eggs
1 tablespoon vanilla
1/2 teaspoon cinnamon and 1/4 teaspoon nutmeg

Pudding Sauce for the top 

1 /2 cup butter
1/2 cup heavy cream
1/2 cup brown sugar
1/2 cup white sugar
1 tablespoon pure vanilla extract or bourbon

Grease a deep casserole dish and preheat oven to 350 degrees. Add cubed bread.

Melt the butter with milk in a small saucepan.
Place all remaining ingredients into the milk then pour over bread cubes that have been placed into the greased casserole dish.

Bake 50 to 60 minutes on 350 degree hot oven.

In the meantime,  place the pudding sauce ingredients into a small saucepan and cook until mixture is boiling and thickens.

 Serve this  dessert warm. Spoon the pudding sauce over the top of baked warm bread that has been added into individual serving bowls. Store any leftovers in the refrigerator.

Garlic Parmesan Bow Tie Recipe

This really is the perfect side dish for any meat you cook. Actually my grandson Antonio loves his pasta anyway we make it. Everyone likes an occasional  tomato sauce less pasta and this one plain is easy to make, fun shape to eat and even great heated up the next day. I like to keep this on hand for leftover chili to pour over too! Think about the possibilities with any kinds of gravy and meat leftovers on top of this pasta, it's the perfect second meal!

Of course Antonio like any other child's favorite pasta, is macaroni and cheese but he will never turn down any kind of pasta we make!

Garlic Parmesan Bow Tie Recipe

1/4 cup fresh parsley
1/2 cup Parmesan cheese
salt, pepper
parsley, basil, oregano 2 tablespoons each fresh or dried
1/4 cup extra virgin olive oil
Pasta of choice cooked to package instructions, reserving 1 cup pasta water here is my homemade bow tie recipe click here
2 tablespoons fresh chopped garlic
red pepper flakes optional

In a large deep fry pan, saute garlic in oil for two minutes or until fragrant not browned. Add all the fresh herbs. Add the pasta water. Simmer for the flavors to blend around 3 minutes.
Add the drained pasta of choice  (cooked to package instructions)
Toss with cheese, salt, pepper to taste and red pepper flakes.

Suggestions for leftover pasta:
Top with leftover chili, tomato sauce, ground hamburger seasoned, sauteed chicken breast cubed, shrimp kabobs, steak kabobs, seasoned grilled lamb, bread chicken, lemon chicken or gravy with turkey.

Easy Leftover Pork Covered Sandwich Recipe

Sometimes leftovers are much better than the original meal! Here is one of them! The easiest and tastiest dish you will ever make!

Leftover pork tenderloin
homemade or store bought beef, Guinness gravy or chicken gravy 
salt pepper to taste
Italian sliced bread toasted

Toast the the Italian sliced bread. Top each piece with leftover pork, gravy and have mashed potatoes as a side dish.

Chicken Leg Italian Stew Recipe

Chicken soaked in a delicious
Italian herb sauce with vegetables. This is a hearty stew that feeds many and very inexpensive to make. Freezes well so make plenty for that time you just don't feel like cooking. Don't forget the crusty Italian bread to dip in this delicious sauce!

Chicken Leg Italian Stew Recipe

8 chicken legs
3 cleaned and cubed zucchini
4 large cubed potatoes
1- 28 ounce can large can tomato sauce
2 bell peppers cleaned and sliced
2 cups finger carrots
2 or 3 fresh basil leaves, sprig rosemary, fresh parsley
2 or 3 crushed cloves garlic or 2 teaspoons granulated garlic
1 cup Cabernet Wine

Optional:  canned green cut beans, mushrooms,  sliced onions, corn or peas.

Saute the chicken in an 5 to 8 quart sauce pan in olive old and fresh garlic until browned on both sides.Place all the rest of the  ingredients in saucepan and simmer on low around 2 hours or until chicken is tender along with vegetables.

Chicken legs around 10 or more
Italian bread crumbs
Olive oil
Grated cheese
Granulated garlic
Italian herbs
Salt, pepper to taste
Barbecue sauce

Optional flavors: Ranch dressing, Catalina dressing, Teriyaki sauce, Lemon juice and Italian herbs, Hot sauce. One last tip: dip the legs in mayonnaise, then into sesame seeds and bake.

First boil the chicken in a big stock pot around 1 hour making the chicken broth. Skim any fat that is on top and discard. Remove chicken to a big plate.  Reserve the broth and freeze in containers.

Arrange chicken on parchment lined cookie sheets. Preheat oven to 400 degrees.

Dip in olive oil first, dredge in Italian flavored breadcrumbs, Italian seasoning herbs and granulated garlic. Sprinkle with grated cheese. Bake at 400 degrees on cookie sheet.

For all or other flavors follow the same instructions except for sauces, pour barbecue, dressing of choice or hot sauce on them  and proceed with same instructions.

Freeze chicken broth for future recipes to use in stews, soups, etc.

If you have any leftover chicken, remove off the bone to make chicken salad. Add mayonnaise and chopped celery. Perfect for sandwiches.

She would make all different kinds of filling combinations. You really can stuff the pizza roll dough with whatever you like. Here is one of our favorite ways to eat sausage roll. It's pretty simple to make and you really can buy everything already packaged at most supermarkets. I am spoiled by making the sausage from scratch and adapting the hotness of  the sausage to our taste.
You can use whatever your family likes.
Mild, hot or sweet sausage. If you would like to try and make your own pizza dough and sausage,  the links to the original recipes are below .

1 recipe homemade sausage or  2 lbs store bought loose mild, sweet or hot Italian sausage
2 pounds homemade pizza dough or store bought
1 medium size green pepper sliced thin
6 slices cut thick of provolone cheese
4 slices cut thick mozzarella cheese
grated cheese
minced garlic
white wine
granulated garlic

Optional: you can also add to the frying pan mushrooms, onions, tomatoes or use pepperoni instead of sausage or both.

In a medium size fry pan fry the 2 pounds of sausage adding some minced garlic, Italian seasoning and saute with peppers until sausage begins to get very browned (I like is a little crispy). Add 1/4 white wine pinot grigio and simmer until the wine is reduced by half.

Spread dough out on a floured board rolling out around 1/2 inch thick. Place cheese on the dough first, then spread cooled sausage on the dough. Sprinkle with grated cheese. Roll up the dough folding all side in first then like a jelly roll would look. Put on a greased deep cookie sheet seam side down.
I like to brush with oil, sprinkle with garlic powder and then more grated cheese on top of the dough. Let dough rest for 15 minutes while you preheat the oven to 400 degrees.
Bake at 400 degrees until browned on top.

Bacon Double Cheeseburger Soup Recipe

I don't know about you but just the title of this recipe made me want to make it! I have seen lots of cheeseburger soups but the bacon double got me going! I have to admit that the garlic bread dipped in this soup was what really make it awesome!

Rich creamy and everything you love in a burger except lettuce, tomato and the bun of course you can even add chopped tomatoes in this delicious with some buttery garlic bread. We love this cheesy comforting soup just the way it is! The bacon really compliments the soup's flavor and the thickness is great for dipping the bread into it's very hearty.

I think all that melted cheese makes this more like a dip than a soup either way its awesome!

Bacon Double Cheeseburger Soup Recipe

6 Strips of bacon cooked crispy crumbled
4 small potatoes cooked and smashed ( I do mine in the microwave, them remove skins)
1 pound ground sirloin
1 teaspoon Worcestershire sauce
1/2 cup carrots
1 celery stalk 
3 cups milk
2 tablespoons flour
3 tablespoons butter
1/2 cup white wine or chicken broth
1 teaspoon granulated garlic
salt, pepper to taste
3 cups shredded sharp cheddar or mixed Cheddar's and more for the top to garnish
dash of cayenne pepper optional

In a food processor place carrots and celery pulse until fine, set aside

In a medium sized saucepan, place the butter in the pan and melt it. Add the ground beef, Worcestershire sauce,  saute until all the pink is gone, drain some of the fat. Stir the flour into the rest of the fat  and saute until well combined. Pour the milk in slowly stirring and simmer until it begins to thicken around 10 minutes,  then add the wine or chicken broth   Add all the vegetables, garlic, salt, pepper to taste. Simmer around 12 minutes on low or longer letting the soup thicken. 
Stir in the cheese. Simmer until melted and blended and thickens to your likeness. I simmer this until the consistency is thick and creamy. You can always add more broth or water if it gets too thick.

Fold in the crumbled bacon and serve with more shredded cheddar on top.

Kahlua Hot Fudge Sauce Recipe

 I am not sure there is any dessert more decadent than this chocolate cake with Kahlua Hot Fudge sauce. One of the easiest sauces to make that will wow any cake you make whether you decide to make it from scratch or from a cake mix. Adding this sauce will make it over the top and special for any dinner party and adult dessert.

Kahlua  Hot Fudge Sauce

1 (14 ounce) can sweetened condensed milk
2 (1 ounce) squares unsweetened chocolate, chopped
1/8 teaspoon salt
1/3 cup water
1/2 teaspoon pure vanilla
1 tablespoon of Kahlua ( I like to add a little more your by choice, omit vanilla add another 1 1/2 tablespoons)
Combine condensed milk, chocolate and salt in top of double boiler over rapidly boiling water. Stir and cook until chocolate melts and mixture thickens, about 10 minutes.
Remove from heat and stir in water, a little at a time, until sauce reaches desired consistency. Cool slightly and stir in vanilla add Kahlua. Serve over your favorite cake,  ice cream, bread pudding or as a cheesecake topping.

Sauteed Chicken with Yellow Squash Recipe

This is a very delicious chicken, squash and rice dish. Everything in this is so flavorful and fresh. The chicken is very juicy and tender. I am sure you will see that this one is a big hit with your family.

Chicken with Yellow Squash Recipe

4 boneless chicken breasts into long tenderloin pieces
2 cups boiled rice
1/2 cup mixed peas and carrots fresh or frozen 
1/4 cup teriyaki sauce
1 cup white wine
1 teaspoon granulated garlic powder
salt, pepper to taste
3 yellow squash sliced lengthwise and seeds scooped out
4 tablespoons butter
1 cup Flour seasoned with 1 teaspoon granulated garlic and Italian seasoning , salt, pepper
Oil for frying

In a casserole dish, place the yellow squash hollowed out in the greased pan.
In a small bowl mix rice with vegetables, teriyaki sauce, salt, pepper and garlic.
Fill each squash with rice mixture. Set aside.
Place the flour mixture in a zip lock bag. Shake chicken in it.
Heat oil and fry chicken on both sides until browned.
Place on top of the yellow squash filled with rice.
Add 1 cup white wine on the bottom of the casserole dish. Cover with foil.
Bake at 350 degrees for around 35 minutes or until squash is fork tender.

Applesauce Cake Bars Recipe

A quick throw together cake that's great in everyones lunches,with tea, coffee and brunch. Love the fall flavors, you will make this again and again. Everyone raves about this applesauce cake! I decided to make this when I had such an over abundance of applesauce leftover this is the perfect solution!

Applesauce Cake Bars Recipe

2 1/2 cups flour
2 cups sugar
1/2 cup oil
2 cups applesauce unsweetened
1 teaspoon cinnamon
1/2 teaspoon allspice
1/4 teaspoon cloves
1/2 cup water
2 eggs
1 1/2 teaspoons baking soda
1/4 teaspoon baking powder
3/4 teaspoon salt

Combine all ingredients until well blended. Pour into greased 13x9 pan. 
Bake at 350 degrees until middle is set around 1 hour. Cool cut into bars. Dust with powdered sugar if you like.

Mom's Homemade Blueberry Muffin Recipe

Today would have been moms 96th birthday. I miss her everyday. In her memory I made her blueberry muffins. Happy Birthday Mom in heaven, miss and love you everyday!

I actually always double this recipe as it will never make enough for my crew eating these. They will fly off the table. Pass the butter and eat them warm around 5 minutes out of the oven. Always a comfort for breakfast when there's a chill in the air. When the kids were little I made them often and made sure I had an abundance of blueberries in the freezer during the winter months. These sure do bring back memories and good ones of my own childhood when my mom made them for me.
I love making memories with great food stories don't you?

Mom's Homemade Blueberry Muffin Recipe
In a large bowl mix:
1/4 cup of sugar
1/4 cup of shortening till resembles coarse looking sugar

Beat in :
1 egg

1- 3/4 cup cake flour (regular flour will make them heavier) 
3 teaspoons of baking powder
a pinch of salt

1 cup of milk to wet the dry ingredients.
Fold in one cup of fresh blueberries, red raspberries, strawberries or blackberries ( I have even used chopped apples with sugar cinnamon in this recipe

Line muffin cup pan with paper liners, fill to 3/4 full. Bake at 350 for 20 minutes. 

Baked Chicken Italiano Recipe

One of my favorite entrees is this chicken with eggplant and spinach. Its is packed with flavors and easy to make. If you want to impress your family and friends you just found the perfect recipe!
Baked Chicken Italiano Recipe

3- Boneless Chicken Breasts sliced 1/4 inch thick pieces pounded rolled in seasoned flour ( in a ziplock bag had 1/2 cup flour,  1/2 teaspoon each granulated garlic, salt, pepper shake chicken in flour) then saute in a large fry pan with 4 tablespoons of olive oil, add 1/2 teaspoon of minced garlic around 1 minute on each side.

2- bags of fresh spinach saute in 4 tablespoons of olive oil, 2 teaspoons minced garlic and a pinch of red pepper flakes, 1/2 teaspoon garlic powder. when soft and cooked place in a dish set aside ( this will be on the plate first when serving the stack of chicken and eggplant).

1 large eggplant washed, skin removed every other inch to leave on stripes and sliced in 1/2 inch thick pieces soaked in milk an hour then drained

2 large beefsteak tomatoes sliced 1/4 inch thick
1/2 cup white wine
2 cup crushed tomatoes
grating cheese
extra virgin olive oil
Italian flavored breadcrumbs
shredded mozzarella

On a large deep cookie sheet, lined with parchment paper, spray generously with cooking oil. Starting with sliced eggplant, sprinkle with bread crumbs and olive oil.Add chicken slice on top. Add tomato slice, add more bread crumbs and olive oil. Sprinkle with grating cheese. Top with crushed tomatoes, drizzle with olive oil, minced garlic more bread crumbs and grating cheese. Pour the wine all around the bottom of cookie sheet add 3 tablespoon extra virgin olive oil. Bake until eggplant and tomato is soft around 35 minutes. 
Add mozzarella at the end around 2 to 3 more minutes until melted. Serve on a bed of  cooked spinach.

Quick Graham Cracker Tarts Recipe

What better way to satisfy your guests than have an assortment of pies that takes around 5 minutes to assemble and prepare?
Well this is the way to do it. All these pies have pre made ingredients and takes no time at all and you will have the best desserts at the dinner party. Perfect for taking to a picnic or when having a large party. Whether you like chocolate, coconut, banana or lemon you are sure to please everyone. I remember as a little girl we actually played a game called pies. It was my favorite game and I always picked coconut! What was your favorite? Do you remember that game?

Quick Graham Cracker Tarts Recipe 

12 Store bought mini graham cracker crusts
individual 4  pre made packs of snack pack puddings (suggestions  2 chocolate,  2 lemon,  2 vanilla or butterscotch )

Suggestion pies and combinations:

You can use the lemon by itself and top with meringue and lemon sliced dipped in sugar. Chocolate with whipped cream and top with candy bars crushed. Banana cream with vanilla pudding and sliced bananas. Coconut cream adding shredded coconut to the vanilla pudding.
Butterscotch by itself top with whipped cream add sprinkles on top.

Toppings for filling suggestions:

flaked coconut and extra for garnishing
(There are many more to choose from use your favorites and imagination to create some delicious pies!)
2 sliced bananas for filling and more for garnish
whipped cream or whipped topping
chocolate syrup
chocolate curls
candy bars crushed
lemon wedges

Mix 2 containers in a small bowl of  the vanilla individual snack pack puddings with 1/4 cup coconut set aside. Mix 2 more vanilla containers with 1 sliced banana, set aside.  Fill individual crusts with coconut cream, then another one with banana cream, top them with whipped cream and garnish with what the theme is, more coconut on top of the cream or bananas for the banana cream.

Take some of the other crusts and add chocolate pudding to them and top with whipped cream, garnish with chocolate curls or chocolate syrup.

Beat 1/2 cup of the eggs whites with  3 tablespoons sugar electric mixer until stiff to make meringue.

Add the lemon pudding to crust and top with meringue. Broil meringue until light brown on 400 degree hot oven watching carefully for around 2 minutes. Top with lemon slice after its cooled.
Refrigerate all pies until ready to serve.
