Broccoli Cheese Casserole is a family favorite here in our home.



Melted shredded extra sharp cheddar cheese and stuffing a favorite vegetable all in one casserole?



You won't find a better side dish for any meal you make that this one.



To get kids to eat vegetables is like pulling teeth sometimes, but this is one they always gobbled up and now it's the most asked for during a holiday meal.



Every year no matter where we spend Thanksgiving, this is the casserole dish I am asked to make.



There are never any leftovers either!

This is one of those side dishes that can be turned into a whole meal and I will give you some suggestions below.


We really make this around Thanksgiving time and its perfect since it has broccoli and stuffing all in one delicious dish!


The kids love broccoli and cheese melted, it's the only way they would eat it when they were little.


Now as grown adults, every year, this is the most asked for as a side dish on the table.


If I don't make this one, I will hear about it for sure!









Suggestions and Substitutes



Not everyone loves broccoli, so think about what you love with cheese and vegetables to add.


Cauliflower partially steamed or green beans are a great substitute.


Also, instead of any vegetable at all,  you can add cooked cubed chicken or leftover turkey.


We also like the addition of breaded chicken tenders cut up with the broccoli, which is a whole meal by itself and a great weeknight dinner when you're in a hurry.


The kids even loved a layer of taco seasoned hamburger for a change, the stuffing tastes great with everything meat wise even leftover pork chops!











Ingredients You Will Need for this Broccoli Cheese Casserole



  • frozen packages of broccoli florets
  • mayonnaise
  • eggs
  • granulated garlic powder
  • shredded extra-sharp cheddar cheese and more for the top (1 cup)
  • salt pepper to taste
  • Optional: if you want to make a whole meal out of this casserole: Add 1 cup of cooked chicken cubes or rotisserie chicken in with the broccoli.
  • Topping
  • chicken or turkey stuffing mix
  • butter

Broccoli Cheese Casserole Recipe

This is a family favorite casserole made with broccoli, cheese, stuffing mix and cream soup.

ingredients:

  • 2 - 10-ounce frozen packages of broccoli florets microwaved for 10 minutes.
  • 1/2 cup mayonnaise
  • 2 eggs
  • 1/2 teaspoon granulated garlic powder
  • 1 -10 ounce can cream of chicken soup
  • 2 cups of shredded extra sharp cheddar cheese  and more for the top (1 cup)
  • salt pepper to taste
  • Optional: if you want to make a whole meal out of this casserole: Add 1 cup of cooked chicken cubes or rotisserie chicken in with the broccoli.
  • Topping
  • 1(16-ounce box chicken or turkey stuffing mix
  • 1/2 cup butter (1 stick)
  • (reserve an extra cup of shredded cheddar as noted on top for garnish)

How to cook Broccoli Cheese Casserole Recipe

  1. In a microwave-proof  4 to 5-quart casserole dish, add the broccoli and microwave until soft around 8 to 9 minutes. Drain. Add cooked chicken if using.
  2. In a clean mixing bowl, add the eggs, granulated garlic, salt, pepper to taste, mayonnaise and soup blend all together and set aside.
  3. Melt the stick of butter in another clean bowl in the microwave, then add stuffing mix. Mix it together evenly.
  4. Assemble:
  5. In the casserole baking dish with the broccoli, pour the soup mixture over the top.  Add the 2 cups of shredded cheese on the broccoli mixture. 
  6. Top with stuffing mix, add reserved shredded cheddar cheese and bake at 400 degrees for 15 to 20 minutes until cheese is bubbling and melted.
