This is one of those side dishes that can be turned into a whole meal, and I will give you some suggestions below.

We really make this around Thanksgiving time and it's perfect since it has broccoli and stuffing all in one delicious dish!

The kids love broccoli and cheese melted; it's the only way they would eat it when they were little.

Now, as grown adults, every year, this is the most asked for as a side dish on the table.

If I don't make this one, I will disappoint many, plus it's the most asked-for potluck also!


Broccoli Cheese Casserole Recipe

Broccoli Cheese Casserole Recipe

This is a family favorite casserole made with broccoli, cheese, stuffing mix and cream soup.

Ingredients

  • 2 - 10-ounce frozen packages of broccoli florets microwaved for 10 minutes.
  • 1/2 cup mayonnaise
  • 2 eggs
  • 1/2 teaspoon granulated garlic powder
  • 1 -10-ounce can of cream of mushroom or cream of chicken soup
  • 2 cups of shredded extra sharp cheddar cheese and more for the top (1 cup)
  • salt, pepper to taste
  • Optional: if you want to make a whole meal out of this casserole, add 1 cup of cooked chicken cubes or rotisserie chicken with the broccoli.
  • Topping
  • 1(16-ounce box chicken or turkey stuffing mix
  • 1/2 cup butter (1 stick)
  • (Reserve an extra cup of shredded cheddar as noted on top for garnish)

Instructions

  1. In a microwave-proof 4 to 5-quart casserole dish, add the broccoli and microwave until tender, around 8 to 9 minutes. Drain and blot dry with paper towels.
  2. Add cooked chicken if using.
  3. In a clean mixing bowl, add the eggs, granulated garlic, salt, pepper to taste, mayonnaise, and soup blend all together and set aside.
  4. Melt the stick of butter in another clean bowl in the microwave, then add the stuffing mix. Mix them together evenly.
  5. Assemble:
  6. In the casserole baking dish with the broccoli, pour the soup mixture over the top. Add the 2 cups of shredded cheese to the broccoli mixture.
  7. Top with stuffing mix, add reserved shredded cheddar cheese, and bake at 400 degrees for 15 to 20 minutes until cheese is bubbling and melted.
