Easiest Italian Baked Potato Wedge Side Dish
- peel and cut potatoes into wedges/steak fries
- place them in a bowl with all the seasonings and oil
- spread on the baking sheet
- top with cheese and breadcrumbs
- bake until crispy

Tips for Cooking Methods
- for the air fryer: preheat the air fryer to 400 degrees. Spray the cooking basket with oil spray. Season and brush the potatoes with butter or cooking spray. Air Fry for 25 to 30 minutes or until crispy
- for boiling: and not use another method of cooking just use herbs, seasoning, and cheese after cooking. Tip: always salt the water when boiling
- for microwave: brush raw potatoes with butter, sprinkle with Parmesan cheese, Italian seasoning, garlic powder salt, and pepper
- for a little heat add red pepper flakes or cayenne pepper

Mom's Italian Style Potatoes
These are an herb and cheese topped with breadcrumb potato wedges. Perfectly crispy and baked and my mom's recipe from the 1940s.

Ingredients
- 6 large potatoes, sliced length-wise like steak fries (we only use Russet Potatoes)
- 1/4 cup olive oil
- 1 teaspoon granulated garlic powder
- 1 teaspoon each of oregano, basil parsley (all dried)
- optional: 1/2 teaspoon dried rosemary
- 1/4 cup Pecorino Romano grated cheese
- 1/2 cup Italian seasoned breadcrumbs
Instructions
- Preheat the oven to 425 degrees and oil spray a cookie sheet or line with parchment paper.
- In an extra large bowl place the potato wedges in the bowl
- Add the oil and spices.
- Stir to coat evenly.
- Pour this on the prepared baking sheet.
- Sprinkle with breadcrumbs and the grated cheese.
- Bake at 425 degrees until crispy and golden browned this takes around 45 minutes to an hour depending on how thick you cut the potatoes.
- Spread on the cookie sheet. Sprinkle Italian-flavored bread crumbs over the whole pan of seasoned potatoes. Bake at 425 until crispy and golden around 40 minutes or longer for crispier fries.
