I bake the salmon in the winter months. We usually grill less because of the colder weather. Baking this comes out great also. You can make any side dish you like. I personally love jasmine rice. I love placing the salmon and sweet pineapple on the top of the rice. It's great to basically have your whole meal all in one throw away packet. I like to add green peppers every once in awhile for my self when I have them on hand. My picky eaters are not crazy about peppers but I love them. Sweet of hot peppers go great with this dish.
1 pound salmon filets
1/2 cup brown sugar
1 cup pineapple chunks
1/4 cup pineapple juice
splash of soy sauce
1/4 teaspoon garlic powder
Optional: 1 bell pepper sliced
Cooking spray
Aluminum foil
Heat grill on medium. Place fish on an oil sprayed piece of aluminum foil. In a small bowl mix the brown sugar, juice and soy sauce. Add the garlic powder, stir. Pour mixture over the salmon. Place pineapple pieces evenly across. Add peppers if using. Seal tightly. Place on hot grill until fish will easily flake when testing with a fork, around 14 to 18 minutes, flipping once. Serve hot with white rice. If using the oven, preheat the oven at 400 degrees, bake for around 25 minutes and open the foil check to see if the fish flakes easily, then its done.

Another yummy recipe. At the moment I am eating lots of pineapples (mainly to stay in shape and filling myself up!). I could try this recipe instead! Looks great!
