Chicken Mozzarella Sliders are one of the easiest, delicious, and tastiest sandwiches to make during a hectic, busy weeknight schedule.

Mozzarella cheese, diced tomato with an Italian dressing or dipping sauceswill dress this easy slider from plain to gourmet in flavors and can be even made ahead of time and reheated.

The chicken sandwiches are a great after-school snack or to bring on a picnic lunch in a cooler and eat cold.

These can be baked, fried, or air-fried, and perfect every time with just a light coating of seasoned flour.

Chicken sandwiches are easy, plus perfect for buffalo chicken sandwich lovers, or in a chicken with pasta dish you like.

Baked or Air Fry Cooking Methods

  1. Baked: Preheat the oven to 400 degrees and line a baking sheet with parchment paper or oil spray the pan. Cut the chicken into 2-inch cubes. Coat them. Spray them with cooking spray on top. Place them in a single layer on the baking sheet. Bake for 25 minutes, flipping once halfway. Use an instant-read thermometer to make sure the internal temperature reads 165 degrees.
  2. Air Fry: Preheat the air fryer for 3 minutes at 400 degrees. Slice and coat the chicken. Spray the air fryer basket. Place them in a single form in the basket. Air fry at 400 degrees for 8-10 minutes, or until the internal temperature reaches 165 degrees using an instant-read thermometer. Flip the chicken halfway through the cooking time.



Tips for making Chicken Mozzarella Tomato Sliders

  • For diabetes, substitute crushed pork rinds for flour
  • For flour allergies, substitute almond flour or gluten-free flour
  • Thinly slice the chicken 1 inch thick, and only use boneless
  • Frozen chicken can be substituted, already breaded or grilled cooked to package instructions
  • For a thickened batter coating, dip in egg first, beaten
  • Boneless steak, pork, and venison can be substituted for chicken
  • Set up a breading station with seasoned flour, breadcrumbs, and eggs for a crispy chicken coating

Chicken Mozzarella Sliders are one of the easiest, delicious, and tastiest sandwiches to make during a hectic, busy weeknight schedule

Ingredients

  • 2 Boneless Chicken Breasts, thinly sliced around 1 inch
  • Pie Plate #1: Add 1 1/2 cups AP flour mixed with 1 teaspoon garlic powder, 1 teaspoon salt, 1 teaspoon pepper, and 1 tablespoon Italian herb seasoning
  • Pie Plate #2: Add 1 cup of Italian seasoned breadcrumbs mixed with 3 tablespoons Parmesan cheese
  • Pie Plate #3: Add 2 eggs beaten with 3 tablespoons of water
  • 1 package of sliders buns toasted
  • 2 plum tomatoes diced
  • 12 slices of whole milk mozzarella
  • Homemade Italian dressing:
  • 2/3 cup extra virgin olive oil
  • 4 1/2 tablespoons red wine vinegar or balsamic vinegar
  • 2 teaspoons minced garlic
  • 1 teaspoon granulated garlic powder
  • 1 teaspoon each of dried basil, oregano, and parsley; use fresh when possible
  • salt and pepper to taste
  • 1/4 teaspoon cayenne pepper for heat is optional
  • Mix in a mason jar and set aside

Instructions

  1. Set up the bread station.
  2. Dredge the sliced chicken in the flour, then egg, then breadcrumbs.
  3. Once all the slices are coated, fry in hot oil on both sides, around 3 to 4 minutes on each side, until crispy and depending on the thickness.
  4. Note: chicken is cooked internally at 165 degrees using an instant-read thermometer in the thickest part.
  5. Drain on paper towels.
  6. Assembly:
  7. Toast the sliders buns, then on both sides of the bun, drizzle with Italian dressing.
  8. Add the chicken, mozzarella, then diced tomatoes, and drizzle with a little bit more dressing.
  9. Add the top of the slider bun and serve.
  10. Note: Chicken sliders can be served warm or cold.
