Iced Nutter Butter Stuffed Brownies

Super easy to use a favorite brownie mix to package instructions and bake the cookies into the brownie mix then slather with a chocolate frosting.

We also added some peanut butter chips to make it over-the-top peanut butter in flavor.

Slow Cooker Italian Sausage Chili

This Slow Cooker Italian Sausage Chili is so flavorful and super easy to make especially with leftover Traditional Sunday Sauce with meatballs and sausage.

The chili is filling, and a great way to repurpose leftovers and a comforting dish to make for your family.

This Italian Sausage Chili is loaded with Italian sausage crushed meatballs or both!

The sauce is slow-cooked in the crockpot mixed in with either sliced sausage or crushed meatballs however you certainly can use one of our other meat suggestions.

An option is to serve this dish over pasta or rice that is cooked separately or you can mix it in after the sauce is done cooking.

A complete meal with a slow-simmered tomato sauce and the addition of beans, pasta or rice will make a very hearty meal.

Dad's Pepperoni Western Eggs

Growing up Dad's Pepperoni Western Eggs was made often just about any time of the day but especially on a Sunday night after we had our early macaroni dinner.

He adapted these western eggs so many times with different ingredients, I wouldn't know what to call this dish.

Sometimes we would have just peppers and eggs other times he would add leftover meats and sliced potatoes and sliced hot ham capicola was always my favorite just a little burnt on the edges added.




Additional Mix-Ins

(all meats must be diced): 
  1. Ham steaks
  2. Bacon
  3. Pancetta
  4. Deli Hot capicola
  5. Turkey bacon or sausages
  6. Pork Sausages
  7. Cooked shredded Chicken
  8. Vegetables shredded: zucchini, eggplant, or whatever you like thin sliced or tiny diced potatoes Long hot peppers
  9. Serve with: Biscuits Italian toast Toasted bagel English muffins

Dad's Pepperoni Western Eggs

Dad's Pepperoni Western Eggs

This is an omelet Italian style with eggs, pepperoni, or deli ham roasted peppers, and onion

Ingredients

  • 12 large eggs
  • Kosher salt and freshly ground black pepper
  • 4 tablespoons olive oil
  • 1/2 cup roasted peppers in olive oil (jarred or homemade)
  • 1/2 red bell pepper, cut into 1/2-inch dice
  • 1/2 cup slices of pepperoni or cut-up deli ham (use more if you like)
  • half of a small onion diced
  • 1/2 cup grated provolone cheese or mozzarella (or dad used grated Pecorino Romano when we didn't have those cheeses)

Instructions

  1. Whisk together in a bowl all the eggs and set aside.
  2. In a large fry pan add the olive oil and saute the pepper for around 3 minutes with onion and pepperoni.
  3. Pour the eggs over the top and cook on one side.
  4. Dad would use a pie plate, slide it into that and add it back to the pan to cook the other side.
  5. Add the cheese and fold it over.
