This recipe is designed to use leftover turkey from Thanksgiving or other holidays, and even rotisserie leftover chicken, but the best part of making a pot pie is that you can use any kind of meat.
Change the gravy to beef or pork and make it with whatever you have easy easy-peasy meals.

Leftover Turkey Pot Pie
After the big holiday feast, the fridge is usually filled with leftover turkey, or any meat is just waiting to be turned into something comforting, hearty, and easy.

Ingredients
- 2 cups or more chopped leftover Turkey, chicken, pork, beef, lamb, or another meat you prefer, cooked and boneless
- leftover, corn, peas, carrots or all three combined around a cup or use frozen mixed vegetables
- 2 potatoes, cubed and boiled or microwaved
- 2 cups leftover turkey, chicken, pork gravy, or use 1 can cream of chicken soup
- pie crust store-bought top and bottom crust
- 1/4 cup white wine or chicken broth ( I use pinot grigio, and this is optional)
- salt, pepper to taste
- granulated garlic to sprinkle on the crust
- dot with butter
- cooking oil spray
- Use at least a 3-inch casserole deep baking dish
Instructions
- Preheat oven to 400 degrees.
- Oil spray your baking dish.
- Line the bottom with the dough in a large square or deep-dish glass pan to fit store-bought pie crust, or homemade.
- Add the turkey-cooked potatoes, carrots, peas, and or corn or frozen mixed vegetables if you don't have any leftovers.
- Pour the soup or gravy and mix with wine over the turkey and vegetables.
- Sprinkle with granulated garlic, salt, and pepper.
- Top with the second crust or make a lattice crust.
- Dot with butter.
- Crimp edges of dough using fork tines.
- Bake at a 400-degree hot oven until the crust is golden brown, around 35 to 40 minutes.
