Upstate N.Y. Italian Sauce and Gravy Debate

Sunday, February 21, 2016
There is always a debate on what this delicious stuff on top of pasta is called sauce or gravy?

Is there a right and wrong?

People will argue for hours to project their upbringing and hometown nicknames or love for this fabulous topping for macaroni.

Growing up in the East Utica area of the U.S., our family always made sauce from real tomatoes, not canned sauce in which it states on the can itself tomato sauce,

Tomato or Crushed Tomatoes, whole tomatoes, tomato paste, we all make ours different from Region to Region of Italy, it's no wonder many names hit the US to make the sauce, gravy to become such a debate.

But is there a difference between the two names, sauce or gravy?

There is no difference at all except on the family history in the area you grew up in from the hundreds of interviews I discovered.

The sauce is primarily just that, the topping on pasta, and gravy came from traditions passed on by different parts of the country as well.

Still today, it will be one of the most heated debates on food, no matter where you live, it's called one or the other.

Honestly, just ladle it on my pasta, it's all good to me and whatever you do, don't be late for the dinner table!

Evaporated Milk Recipe

Friday, February 19, 2016

Easier than you think. You can make your own. Check this out and see what you're missing out on. Much less expensive than buying it!

Evaporated Milk Recipe

What you will need:
4 1/2 cups milk total
Skewer stick made of wood

See below for Instructions:

In a large saucepan place 2 cups of milk in the pan. Add the skewer stick to the pan standing straight. Mark off where the 2 cups ends.
Add 2 and 1/2 cups more milk. Bring to a boil and then down to a simmer,  until it boils down to reach that 2 cup mark on your skewer. That will have reduced the milk to 60% which is taking out the water content. That's  how you know your milk has evaporated correctly.
Keep skimming off the top if a film forms.
After it reaches that 2 cup mark strain it and store in the refrigerator. This will stay fresh for 1 week. It makes 2 cups.

Slow Cooker Venison Sauerbraten

Wednesday, February 10, 2016
Sauerbraten is a national dish of Germany, usually using beef or lamb this one is a stew style sauerbraten that you can make from a venison tenderloin or by using stew meat.

Of course, you can use beef or lamb also, this recipe is just a guideline.

The gravy is delicious and I often serve this with a favorite mashed potato recipe and cabbage.

You can adapt this any way you prefer, the venison has to be marinated and will take a few days for this recipe so it's a longer process than normal with delicious results.
